Third of our starred meals in Seoul, and without a doubt, the best of the lot. In fact, our best meal of 2025. The cuisine was truly exquisite; perhaps aptly described as “reimagined Korean” with a showcase of Korean cooking harmoniously intertwined with global influences. This multiculturalism is also reflected in the diverse composition of EVETT’s team, each shining in their own distinctive way.
As we had young children, we were seated in the private dining room decorated in bright modern luxe tones that was opulent yet warm, cozy and inviting. Space was in abundance and even included an adjacent classy outdoor patio.
Our room was waited by Fanya and Yannis (hope I got your names right!!). Fanya was so professional yet friendly, always with a smile and ready to engage. Yannis… wow, simply one of the best. His description of each pairing accompanying the course not only exhibited his knowledge on the food and drinks but more importantly, his belief, love and passion for them. He even went the extra mile by interacting/playing with our children on multiple occasions, which made us feel much more at ease as it was always daunting task to bring young children along. Again, simply one of the best.
On to the food, easily 7 out of 9 courses were BIG hits:
-Tree (4.5/5): The starting snack playfully presented hanging on a tree was a fantastic well-textured opening bite of smokiness, umami and creaminess.
-Naengmyeon (3.5/5): One of the less impressive courses (relatively speaking) but fulfilled its role in opening appetites with its chilly, sour and spicy profiles.
-Seasonal (4.5/5): Initially looked messy but soon didn’t matter the moment we tasted the dish. Deliciously textured fish enveloped in a complex rich buttery sauce balanced with a side of greens providing contrasting freshness. Refined balance at work.
-Gat (5/5): One of the stars of the meal. Amusing eye-catching presentation that belied its symbolism/meaning. The taste was a delectable fusion of abalone in heavenly makgeolli sauce that even my child couldn’t stop eating. Probably a dish that will forever be etched in my memory for its uniqueness, form and taste.
-Refresh (3.5/5): An above-average palette cleanser which kinda tasted hawthorn-ish.
-Feather (5/5): Another shining star that was artfully plated to its name. Duck was perfectly cook, irresistibly juicy and flavor-packed. Complementing sauces were on point too.
-Fire (5/5): Best piece of Hanwoo we indulged on our trip. Was initially skeptical as I thought the black garlic sauce would overpower the beef but both ended up being flawlessly in sync. Again, the protein was cooked at an exceedingly high level. The accompanying “kimchi” in the form of icy crystals was another special touch.
-Spring: (4.5/5): The dessert was (deceptively) simple but in reality, an elegant brilliant fusion of fruit and pastry. The main dessert was preceded by self-roasted marshmallows in the kitchen with the team, which added a strong personal touch.
-Last Bite (3.5/5): Nice final bite though I wished there were more sweets to end one of the top meals thus far. A complimentary black sesame cake was thoughtfully provided for our celebratory occasion.
A special shoutout to the Korean alcoholic pairing as well, which includes exclusive drinks such as a collab champagne with chef Joseph, that paired perfectly. Definitely one of the most enjoyable pairings till date.
It is difficult to comprehensively express concluding thoughts on the exceptional gastronomic journey we were privileged to have experienced at EVETT. From the food to ambience to service, all aspects were excellent. Perhaps just a final word on service: I left something behind by accident and the restaurant went the extra mile to return it via international ship and refused to accept any compensation. A return to EVETT truly beckons and my only regret was not being able to enjoy the full 14-course meal as we were seated in the private dining room. I wholeheartedly recommend EVETT to all and look forward to my next visit when I’m in Seoul.
