I wanted to write this review the minute I got home from Evolution. But I also did not want to rush it. It was too amazing to be rushed. I usually do not rave about restaurants but this one is an exception . . because this was an experience. The menu was so thought out and researched and took us "through" the neighborhoods of Brooklyn. Each course was better than the next. The first course literally took me out . .in a good way and had me yearning for more of this mushroom tart . .its something I am still thinking about today . .and would like it in an xlarge size next time . .it was so delish . and can't forget the goat balls that were perfectly paired with it.The smoked salmon melted in your mouth. Presentation was nothing I ever seen before. How they were able to come up with such unique visions for each dish . .well, I guess it comes with the incredible talent and skill that Chef Eric bring to every one of his dishes. So after some elevated "hot dog", pastrami on rye, pizza, dim sum, roast beef (which was so amazing just melted in my mouth), steak . . and remember these dishes were taking 10 levels up . . . I will post some pics so you can understand what I mean. My experience was topped off with delicious sorbet, then a cheesecake (which I tried to steal from my dining partner and she caught me) and an egg cream. Which I have never had and now search out on menus for . .the atmosphere was comfortable yet elegant . .the servers were very knowledgeable of each of the courses and were very attentive. While I do not usually find myself in Brooklyn often, but I will definitely be making the trip again to see what Chef Eric has up his sleeve . . My "experience" is a 10 out of 10. So if you have gotten this far on my review . . I suggest you go and try it for yourself. You will not be disappointed.
