Probably the best vegan address at the moment in Paris. Friendly staff, nice setting (very clean wich is always something i check as first). Kitchen side, the Chef has a very good hand, respectful of the ingredients and able to combine them with a vibrant contemporary touch. The Pavlova and pear dessert we tried was a showcase of tecnique, balanced and not to sweet (wich is not that easy to achieve on a merengue base recipie).
2 suggestion to improve even further: the sauce with the appetizer croquette is good, but a bit overwhelming...it almost kills entirely the flavour of the croquette (wich was great).
For the cacio&pepe, add more "fake pecorino". I would have gladly payed a couple more euros for a richier dish (since that not-cheese i believe is costly in terms of ingredients to make it). The dish was ok but with more creaminess it would have been Wow.
Overall, a great experience and an address i've noted on my to do restaurant for my next trip in Paris. Well done!
