Much, MUCH respect. I take off my hat, my scarf, my Pashmina, and my bolero, for this craft butcher store in this unassuming strip mall on the Westside of Las Vegas, at the neck of the posh, but bland, bedroom community that is Summerlin. Featherblade has the goods. It is EVERYTHING you want in a butcher shop. The selection is glorious. Marbled, grass-fed, carrot-finished, artisanal, dry-aged beef, pork, chicken, lamb, venison, duck, veal (without the cruelty), rabbit, goat, and sheep. From near as local as can be, as independently-owned farms and pastures as possible, and with no antibiotics, additives, or harmful hormones. Perfectly curated, perfectly butchered, perfectly explained to you.
These guys and one plucky gal present you with the best customer service in the state. I'm confident of that. Smiles, courtesy, pleasantries, thoughtfulness, and professionalism. Ask them something. Do it. I dare you. They will know the answer or promptly try to find it, politely and patiently, and proudly (in a good way). I asked about a particular meat-based diet I saw being promoted by an MD on social media, and lo and behold, the owner loaned me one of his books on the shelf about it, by the self-same doctor. The owner didn't know me from Adam at the time. I could have taken off with his $50 book! But he is not the paranoid type. He treated me, even as a first-time visitor, like a patron, not a potential thief. I like this. This is what luxury is.
The owner is from England, and has a long and storied history of butchery there. He wants to bring that elevation of taste and attention, and ethical treatment of meat, here to his newly adopted homeland. It tickles me pink (like a properly grilled ribeye) that the butchers sport the vintage leather aprons with bibs. It does not feel when you are here that you are still in Las Vegas (always a plus for me). The owner is also introducing us to old favorites like Meat pies, Shepherd pies, sausage rolls, and other old world favorites. This is the place to get your calf's liver, beef bone broth, tallow, grass-fed cheese and butter, and organic, pasture-free eggs. Not to mention your Haggis.
In this new First world where veganism is firmly on trend, Featherblade is strictly old school, like your dad profiling in family photos with his corduroy blazer and white patent leather loafers. And you know what? I'm digging it. Make meat hip again! #MMHA
