"A new barbecue trailer in East Austin’s Eden food truck park, run by Eric Hastings—who jumped from a three‑Michelin‑star post at Jean‑Georges to obsessively smoking meats—opened in July 2025 and turns out turkey, brisket, ribs, and pulled pork sold by the pound, on plates, or in sandwiches on Martin’s Potato Rolls. Sides skew light: a red potato salad bound with yogurt and fresh herbs; a fennel slaw of shaved cabbage and parsley dressed to order with an orange‑marmalade and apple‑cider‑vinegar vinaigrette; and a horiatiki salad with cucumber, bell peppers, tomato, onions, feta, kalamata olives, and oregano. A smoked burger made from an 80/20 chuck‑and‑brisket blend and chicken wings tossed in Hastings’s barbecue sauce, a yellow mustard sauce, or white Alabama sauce round out the tight menu. Absolutely fantastic. Turkey is the most underrated piece of Texas BBQ in my opinion, and this no doubt some of the best BBQ turkey I've had. The pork ribs were great as well. But the burger is a sleeper hit. Already one of the best burgers in town. Forget smash burgers! Everyone should be eating thick burgers like this one. They were sold out of quite a bit (thanks to Austin Eater article no doubt), but I can't wait to go back and try more. Hopefully the beef ribs will be available next time!

Got the Horiatiki salad and 5 piece Alabama white sauce wings. Salad was delightfully fresh and crisp. Wings were smoky, I’ve never had a BBQ sauce like this one. Would recommend. Great atmosphere, feels more like a neighborhood food truck and less like a corporate BBQ joint. Excellent taste in music too. We’ll be back.

Hidden gem! Nestled into a residential street in East Austin, the Fiasco BBQ food truck is on a peaceful empty lot with shady tables under the trees. Eric prepares all the food from scratch - the brisket was mouth watering, and the bark was perfection. Excellent side salad too!

Awesome food truck nestled away in a backyard oasis on the east side of Austin. Eric is a master of his craft. I ordered the pork rips accompanied by his mustard sauce and house fiasco bbq sauce with a side of his potato salad. Everything was incredible I'll be here every week

Had Fiasco BBQ for the first time today. It was amazing! Eric is friendly and his food is delicious. Particularly loved the ribs and sauce, the potato salad was inhaled. Will be going back next weekend!

Fantastic BBQ! Turkey and Brisket both top notch. Sides are fantastic and untraditional. Eric has Michelin starred restaurant experience so you can see its influence in everything. Definitely a must visit.

The wings here are amazing! All the BBQ is made with love and tastes fantastic! Perfectly cooked! So flavorful and perfectly moist. Eric is passionate about his craft and it shows in his product. The horiatiki salad is made fresh and is an amazing side to the BBQ! This is a must try food truck in east Austin! Definitely worth your time!

Ordered the brisket and jalapeno cheddar sausage. Both smoked to perfection. Brisket was super tender and delicious with it without the house made sauce. Really likes the potato salad (made with yogurt!) and the cucumber, feta, and olive salad!

Hard to find. Hard to forget. This little gem is going to get hot quickly, so get here before the lines get obnoxious. We ate pork ribs, turkey, smoked brisket burger, and two sides (greek salad, potato salad). Pork ribs were very good and smokey. Not super sweet, so if that's your thing, look elsewhere. The turkey was moist and flavorful. I'm saving the best for last, people. That burger was as good as, dare I say, might even be better than Leroy and Lewis' burger. And THEIR burger is life changing. Come check out Fiasco! Food is terrific, there's no line (for now) and the service is great. Oh yes, our bill for three, with drinks and a tip was $75.

Saw that he has some Waygu brisket on my flight back to Austin so made the stop on the way home to snag some! Was not disappointed! This is a hidden gem on the east side and I got quite a few items and all of them were amazing!

We went to Fiasco BBQ for lunch opening weekend. The food was excellent . I had smoked turkey and my husband had ribs and brisket. They don't skimp on the portions .Sides were delicious as well. We appreciated appreciated the serving trays and heavy duty carry out boxes. We will definitely be going back.
