Excellent food. We had a couple of rolls, the miso cod lettuce wraps, and eggplant. All were perfect. We had a featured unpasteurized sake that was delicious. The service was great as well. Highly recommend.

Nice place for a sushi date. The presentation of the food is intentional, the fish is fresh, the ambiance is nice, and the drinks are great. Everything feels a bit expensive, but the presentation justifies it. Had some miscues on little things; miso soup was below average definitely an afterthought, the mayo on the special roll was put on too thick and unbalanced the flavors, the sauce on the Sakura roll could have benefited from an oilier and less emulsified consistency, and the tuna chip surprised me with a sweetness that it didn’t need. Most of that stuff is just my preference and nitpicking, although if you can’t do something as simple as miso soup well, it does make me not look forward to the sushi as much. The delicious drinks and friendly service turned the tide. Not the fault of the service, but our food did take a while to come out. Overall the meal was enjoyable and I would come back if I wanted a fancier sushi date, but not for the sushi alone.

Clean and inviting throughout with upscale lighting and decor. Sushi was diverse and expertly prepared. Service was great with friendly and knowledgeable staff. We have been here a number of times here now, and they always have great food and good service. Price was on par for what you are getting. We had Riley as our server the last time we went, and he was excellent. The shrimp app was great as well as the pork belly fried rice. We also shared 6 specialty rolls and some blue fin sashimi, everything was excellent.

Great find tonight for dinner! Place is super cute and clean. Bright and airy. Cool water feature suspended from the ceiling. Service was stellar. Very knowledgeable and friendly. Food was amazing. Sushi is fresh and flavorful. Steak was delicious. Appetizers were delightful. All around great experience!

This restaurant is visually pleasing, the ceiling is absolutely beautiful. The service could have been better, but it doesn't take much away from my experience here. The food was incredible. I recommend the spider roll, the eel sauce is divine. The edemame was spicier than expected, but very delicious nonetheless.

The atmosphere at the restaurant is excellent. The photos on the wall are quite unique as well as the water feature above the main dining area. The service was excellent as was the food, especially the beef spare ribs. The location right downtown is perfect. We were quickly greeted as we entered, they knew we had a reservation right away and the server was friendly and quite attentive.

Sushi here was really good, if not a bit pricey, and service was excellent. Nice downtown Asian vibe. We did not make reservations but got seated immediately. They have a really cool overhead light that is filled with water and gives a shimmery effect to the ground. Definitely recommend.

From the minute we walked in the door to the end of the meal and our full tummies, this sushi place is top-notch. The vibe is hip and chic, and if you don't have a reservation, you'll be escorted upstairs as we were. There is room up there unless it's privately booked so we got lucky! Our meals were fab and everything tasted delicious. The miso soup was not as hot as it could've been, but not worth redux of a star. Cocktails are creative and ambience is hip. Parking is a bit tricky as they are in a popular location, but it's well worth the walk. Reservations recommended.

We consider 5Fusion as having a 5-star Executive Chef, Sascha Lyon, and he delivers a 5-star menu and dining experience! With both "hot" and "cold" menus, as well as traditional sushi options, there is something for everyone -- it's not just a sushi restaurant and it honestly lives up to its 5Fusion name! We began ordering take away during the pandemic and consistently enjoyed the variety of sushi and non-sushi options and it was a good option in town at the time, as well as a refreshing deviation from the standard "heavy," fried and high-carb fare commonly offered at many Bend restaurants (not at all a dig on the other great restaurants in Bend, just a different/more rare kind of option in the area). That said, since Sascha Lyon took over as the Executive Chef (and co-owner), we have been extremely pleased with the improvements in the creativity, incredible variety and overall quality. We enjoy selecting a variety of options from the "cold," "hot" and sushi menus. While we like to stray from our usual picks from time to time, we consistently order, and especially enjoy, the California Salad, which is one of the most creative, delicate and delicious crab "salads" I think I have ever had anywhere - it's an unexpected and beautifully subtle fusion and balance flavors. We also typically opt for the Hamachi Crudo, Miso Butter Lettuce Cups, the Rock Shrimp Tempura, and a couple of sushi rolls. In addition, we've enjoyed the oysters (I love them, and they can be hard to find in Bend), the Miso Cod (elegantly prepared!), and the Grilled Marinated Short Ribs (a subtle sweet note balanced with an overall umami flavor). The cocktails are creative and delicious, and the selection of sakes are impressive. On our most recent visit on New Years Eve, 5Fusion didn't disappoint despite the high volume of customers. That evening, in addition to our "usual" choices, we tried the Pork Belly Fried Rice (which was very flavorful and not greasy), and the Prime NY Strip Toban Yaki (which was cooked to the proper temperature, with the only miss being that it was incredibly tough/hard to chew - we suspect that perhaps it wasn't sliced properly, but it didn't detract from the consistently delicious meal and overall lovely NYE!). The interior is casually contemporary and reflects the simplicity of Japanese decor, while still feeling warm and comfortable. It has a long bar in the main restaurant area, and there is an upstairs loft dining area to accommodate overflow (though the decor and ambiance is more sparse than the main restaurant dining area). Heavy curtains are placed at the entry, which helps to buffer dining guests from the bitter cold - which can otherwise ruin a pleasant dining experience (I wish more places in Bend had these in place). I can't finish my review without complimenting the staff/servers, all of whom are welcoming, friendly, knowledgeable, helpful and an overall pleasure (and contribute to the 5-star rating)! 5Fusion is a very special restaurant and we feel so fortunate to have something like it in Bend. While I am a native Oregonian, I've most recently lived the better part of the last two decades in San Francisco (and as a self-described "foodie"), and I would rate 5Fusion as rivaling the caliber of some of the best restaurants there, even some with one or more Michelin Stars. We wish 5Fusion and Chef Sascha Lyon continued success with the beautifully curated menu and overall lovely experience!

We tried 5 Fusion based on all the good reviews. The ambiance and service were very good, however we did not like any of the 4 menu items that we tried. - Crispy rice with spicy tuna: we've had this at several other Asian restaurants and have always liked it. The rice seemed very oily and deep fried, and one piece was brownish on the inside (from a sauce that was mixed in?). This was probably the best of the 4 dishes. - Miso eggplant: it was an oily mass of dark brown small pieces of eggplant in a sauce that tasted nothing like miso and overwhelmed the flavor of the eggplant. - Miso cod lettuce wraps: the cod was again overwhelmed by the flavor of whatever sauce was used and didn't taste like miso. The lettuce and crispy onions on top were tasty though. - Diablo roll: again, there was a strong sauce that overwhelmed the dish, and the spicy tuna had a strange texture. We both had a bad stomach later that evening, despite not finishing any of three 4 dishes. Probably not a repeat place for us.

Made an appointment but waited with walk-ins--it's fine, busy. Everyone before us were seated at the first floor. A couple came in later than us and were seated at the last table on the first floor before us. The waiter apologized, saying he made a mistake with our group size--it's fine, people make mistakes. Two of us were brought to the second floor, and conspicuously, most tables had people from different ethnic backgrounds--hmmm, interesting. My husband (European) and I (Asian) were both shocked and extremely uncomfortable. If this arrangement was intentionally made by someone, they should know that they are so embarrassing and pitiful.

My daughter (4yo) and I stopped here on a Saturday night and we did not have a reservation. We ended up being able to sit at the sushi bar and had a great time. The service was quick and attentive. The environment was warm and friendly and welcoming to my four-year-old. The drinks were fantastic and the food was very fresh. we will definitely be back.

Came in on a weeknight and sat at the bar. The bartenders were very friendly and chatty, which was welcomed by me given that I was dining alone. I tried the award winning Botanist - gin, cilantro, serrano, ginger, and it was very tasty, quite the zinger. It does come out bright, almost neon, green, so brace yourself. For dinner I ordered the California Roll Salad and the Diablo roll. I was pleasantly surprised by the salad. It came with a good portion of crab and an entire half of an avocado. The bed of romaine that it was all on was dressed in a creamy black sesame dressing, that at first seemed like too much, but when I took a bite with romaine, avocado, and crab it was a well balanced taste. The Diablo roll was also good, some bites were much spicier than others, but overall there was a good portion of fish in each bite, and not too much rice. My only suggestion would be to modify the ponzu sauce, it somehow was totally absorbed by the rice, making the rice a little mushy. So making the sauce a little thicker maybe to stay on the fish, or mixing it in somehow could prevent the issue. As for the prices, seems on par for Bend dining, but generally seemed a little pricy. The salad was reasonable, but the roll felt a bit overpriced.

Miso soup was loaded with onion etc but still tasted like ready-made miso soup. The pork belly stir-fry was 'meh'- too creamy and the pork belly flavor was overtaken by the other flavors. Ok service. Very attractive interior.

I was a fan of this place until my last trip on Friday. Thinking they may have a new chef? The food wasn't stellar like it's been in the past. Miso soup served luke warm, sake also luke warm, albacore truffle sashimi lacked seasoning (I believe ponzu and truffle oil -always loved this dish in the past but this time was dipping in soy sauce), rock shrimp was not crisp and shrimp slightly underdone...also luke warm. Sushi special roll that night had bluefin tuna and was not memorable. Toro nigiri was probably the best thing we had. Other than actual temperatures and taste, the service was weird. No pacing whatsoever, first thing brought was the "tempura shrimp", which I found odd, then everything else was just dumped on us at the same time at the sushi bar where we had no room (despite making a birthday reservation). I'm so bummed that we had a bad experience here and will likely give them another shot, but it's hard to swallow a place being as spendy as it is and leaving unhappy. I honestly was just trying to message the owner instead of posting here, but didn't see an option. Hope they see this and make some positive changes to the food and overall dining experience.

Dinner for one totaled $90. One suggestion: actual chopsticks instead of disposable ones would enhance the experience. Also, given there's a bit of lag time - complimentary starter (equivalent to breadsticks or peanuts) would be a nice touch.

We made sure to make a reservation, as we were told there was an hour and half wait time the day before. 5 Fusion is one of the better Bend restaurants, offering creative, appetizing food in a setting both casual and occasion-worthy. It's a fusion restaurant, so the menu might not correlate with what many might describe as authentic, if that matters to you (it doesn't to me). - Service: Top tier, from the moment you enter all through your meal. - Ambiance: 5 Fusion offers a varied setting - you can get a nice table, a two-top, sit at the sushi bar or the drink bar. - Food: It's mainly a sushi restaurant with all that implies (nigiri, rolls, etc) with some additional, exceptional entrees. I particularly like their take of tonkotsu ramen. - Booze: They can provide pretty much what you want, especially sake. They have a large variety of sake. - Price: Not cheap but in my opinion reasonable. Your bill for two may well exceed two figures before tip.

As someone who reacts to gluten, I really appreciate the option to have almost anything on the menu made gluten-free. (They even have a gluten-free "unagi sauce" which is delicious!) 5 Fusion & Sushi Bar was a top notch experience for our family. This was easily the best meal during our week vacation in Bend. The service was perfect. The food was flavorful from start to finish. The short ribs, miso cod butter lettuce cups and the hamachi crudo were our favorites. We enjoyed our food so much we ordered seconds on four items. It's not surprising as we observed the owner taking great care of the restaurant, his staff and even presenting some of our food items during our visit. I can highly recommend this place!

The ambience and service are great. Love the water running ceiling and the overall vibe! Some of the appetizers is a bit expansive! We got garlic edamame, seaweed salad, rising sun roll, tuna roll and the hibiscus colada. The garlic edamame is very garlicky and the seaweed salad has two seaweeds mix in there which I loved, and the rising sun roll is to die for!!! So delicious!!! Love it. And would definitely recommend!

We have been going here for years and have usually had a good experience. I'd recommend a reservation but we walked in this time and sat at the bar. The bartenders were very nice and helpful even though they were obviously busy. The ambiance is a bit too pretentious for my personal taste but still manageable and might be fine for you. The food is always excellent and creative.

I would say the ambience and server were very good. We ordered the NZ king salmon, Hokkaido scallop, toro, crispy pork belly buns and rock shrimp tempura. Hot food was good but the sushi quality was okay only.

Wow, what an amazing experience we had at five fusion and sushi bar. We ordered sushi, Nigiri with tuna and shrimp. Both had the freshest taste, it's difficult to describe, it just tasted fresh and delicious. We also shared a Steve McQueen roll based on other reviews and it was very unique and delicious! It had all the textures with macadamia nuts and coconut. It was slightly sweet, which doesn't sound good, but it was. We ordered "small" plates for our meal. They were not small. We had the Korean Fried Chicken, which was cooked perfectly. I am craving it right now. The Korean ribs were the best we have had. It had the flavor of charcoal grilled ribs. Unbelievably good. The spicy edamame was very good, and the shrimp tempura was perfectly done, crispy tempura with perfectly cooked shrimp and vegetables.

This place is phenomenal. In addition to gluten sensitivity and celiac, we also had people with egg, shellfish, and nut allergies in our group. They were able to accommodate all of our needs. I had high hopes for 5 fusion considering the good reviews and the background of the chef but unfortunately it missed the mark for me. While the fish seemed fresh, it was hard to tell hidden by all the other flavors and noise piled on top of the rolls. Sometimes less it more when it comes to flavor. While the rolls were huge (12 pieces per roll is rare for me), the flavors were way too overwhelming for me to distinguish one roll from another. Also, the sampler, while seemed interesting, also missed the mark because the flavor combinations were odd. My favorite was probably the Korean spare ribs... which isn't what the place is known for.

The hot food including Kalbi ribs and pork belly hum bao - would order both again in a heartbeat. Had assorted sushi that was fantastic. The star of the sushi was the unagi which was perfectly cooked, seasoned and just the right amount of eel sauce. The fact it was tender and just a tiny bit crispy on the edges propelled it to some of the best unagi I've ever eaten in my 37-year sushi eating career. Bravo. This place is a must-eat / go while in Central Oregon.

On a Monday night my family tried to eat here early in the evening, around 5:15. My son had just won a medal in the junior Olympics earlier that day and the main thing he wanted to do was have some sushi! There was literally no one waiting for a table and all but one table in the restaurant was empty. The host would not seat us, saying that we did not have reservations and they couldn't possibly serve us until 7:45. Because there was no one beating down the doors to this place, I assume he just didn't want to serve us, probably because of the kids? Anyway, I thought folks would want to know. We certainly won't try again.
