We consider 5Fusion as having a 5-star Executive Chef, Sascha Lyon, and he delivers a 5-star menu and dining experience! With both "hot" and "cold" menus, as well as traditional sushi options, there is something for everyone -- it's not just a sushi restaurant and it honestly lives up to its 5Fusion name!
We began ordering take away during the pandemic and consistently enjoyed the variety of sushi and non-sushi options and it was a good option in town at the time, as well as a refreshing deviation from the standard "heavy," fried and high-carb fare commonly offered at many Bend restaurants (not at all a dig on the other great restaurants in Bend, just a different/more rare kind of option in the area). That said, since Sascha Lyon took over as the Executive Chef (and co-owner), we have been extremely pleased with the improvements in the creativity, incredible variety and overall quality. We enjoy selecting a variety of options from the "cold," "hot" and sushi menus. While we like to stray from our usual picks from time to time, we consistently order, and especially enjoy, the California Salad, which is one of the most creative, delicate and delicious crab "salads" I think I have ever had anywhere - it's an unexpected and beautifully subtle fusion and balance flavors. We also typically opt for the Hamachi Crudo, Miso Butter Lettuce Cups, the Rock Shrimp Tempura, and a couple of sushi rolls. In addition, we've enjoyed the oysters (I love them, and they can be hard to find in Bend), the Miso Cod (elegantly prepared!), and the Grilled Marinated Short Ribs (a subtle sweet note balanced with an overall umami flavor). The cocktails are creative and delicious, and the selection of sakes are impressive.
On our most recent visit on New Years Eve, 5Fusion didn't disappoint despite the high volume of customers. That evening, in addition to our "usual" choices, we tried the Pork Belly Fried Rice (which was very flavorful and not greasy), and the Prime NY Strip Toban Yaki (which was cooked to the proper temperature, with the only miss being that it was incredibly tough/hard to chew - we suspect that perhaps it wasn't sliced properly, but it didn't detract from the consistently delicious meal and overall lovely NYE!).
The interior is casually contemporary and reflects the simplicity of Japanese decor, while still feeling warm and comfortable. It has a long bar in the main restaurant area, and there is an upstairs loft dining area to accommodate overflow (though the decor and ambiance is more sparse than the main restaurant dining area). Heavy curtains are placed at the entry, which helps to buffer dining guests from the bitter cold - which can otherwise ruin a pleasant dining experience (I wish more places in Bend had these in place).
I can't finish my review without complimenting the staff/servers, all of whom are welcoming, friendly, knowledgeable, helpful and an overall pleasure (and contribute to the 5-star rating)!
5Fusion is a very special restaurant and we feel so fortunate to have something like it in Bend. While I am a native Oregonian, I've most recently lived the better part of the last two decades in San Francisco (and as a self-described "foodie"), and I would rate 5Fusion as rivaling the caliber of some of the best restaurants there, even some with one or more Michelin Stars. We wish 5Fusion and Chef Sascha Lyon continued success with the beautifully curated menu and overall lovely experience!
