"Walking into Five Fusion, look up to see a river flowing through a glass bank overhead that has been at the restaurant since before it was 5 Fusion. The ownership and food continue to change. 5 Fusion has recently evolved with the addition of expert sushi chef Luke Baker, known for his sushi and sashimi so perfectly combined that it eliminates the need for soy sauce or wasabi. His creations include seared king salmon sashimi with house-smoked macadamia nuts and aminos, and king trumpet and blue oyster mushroom nigiri. The restaurant, led by executive chef Sascha Lyon, offers tender and sweet miso cod in butter lettuce cups.
