I've been coming to Flame for 13 years. This place has always been one of my favorite restaurants. I have had consistent EXCELLENT service and food for a decade and more. I'm a poor ass young adult, and can't afford to eat here often. But thats what made it special. Their food always nostalgically reminded me of the food I ate growing up with my dad. Something has changed though, and it breaks my heart. I had to move to the valley for 2 years and I couldnt have Flame much during that time. I just moved back recently and had to hit up my favorite shop. The last 5 times I have ordered from them over about 4 months, almost every one of my favorite comfort dishes has tasted wrong or been overcooked. My favorite go-to dishes are either beef or chicken koobideh/soltani, tahdig, ghormeh sabzi, mast-o khiar, baghali polo or any of the variations on polo.
The rice is done mostly right, though some of those times it was dry. The koobideh has been dry most of those times. The ghormeh sabzi the last 3 times has been watery and not thick like I would want in a stew. Also there has been no chunks of hearty beef like I am accustomed to. It's small shredded pieces. I could of gotten just very unlucky these past several times and not gotten served chunks. But I love those tender cuts of beef that melt in your mouth as your eating ghormeh sabzi, it's a small slice of heaven. The taste of the actual ingredients in the ghormeh sabzi seemed good to me. I like mine on the sour side and Flame still does that right. Just way more watery than I've ever had ghormeh sabzi and that really killed the dish for me.
The beef soltani has been just alright, but often it's on the drier side than the super tender side like I have always had. I think the ingredients are good and the taste is there. I have had one time where I thought the koobideh was less seasoned and tasty than I remember. I've been eating these dishes for so long at this exact place so I have much to compare it to, thats why I am being so specific in this review.
The mast-o khiar has also taken a hit. I am not sure if you changed yogurts or maybe just ingredient ratios but it has been less thick and sour than I remember. Also I somehow didn't get diced cucumber in my last delivery order of mast-o khiar which is weird. Thinking that they just served me the wrong yogurt. But the taste just hasn't been as nuanced as it used to be.
Not sure if it's an ingredient change or maybe a change of chefs, but most food has been consistently wrong tasting the past 5 times I've gone. Not every dish was off, but at least 1-3 dishes every time was. I say all of this with so much love in my heart and with no spite or anger. I love this place and I just want it to be as good as I remember. I can't justify spending like $60 getting all my favorite comfort foods when they don't taste near perfect like Flame has showed me it can be. Seriously, it used to be consistently perfect and tasty I'd think it was witchcraft or something. If there are any of those working at Flame reading this, please know I love ya'll and I thank you for the great food and memories. I'll be periodically checking in to see how the food is. Sorry for the whole ESSAY. That should show how much I love this place.
