I've been to the Bellevue location of this restaurant a few times, but this was my first time in Seattle. It looks essentially the exact same, with the same sushi options and same pricing
This chain has a very cool concept - picking your choice of individual sushi rolls, inari, and nigiri, and paying by the pound at the end. It's essentially like a sushi buffet.
The one thing I regret is going about 15 minutes before closing time. The rolls were clearly not fresh and had been sitting out for a while - some of them were essentially over. From my previous experience at the other location, going around lunchtime resulted in consistently fresh food that was cycling in and out quickly.
This meant that the rice especially felt hard with these rolls, and there wasn't much of a crunch at all to the items that were intended to have it - like the tempura
Still, despite that, I enjoyed the overall experience - mostly due to the variety. The fact that you can pick and choose between 20+ different varieties of fish bites is just something you don't find everywhere. If you go to a sushi restaurant, you're limited to one or two types of rolls, and that's it. Here, I can get four rolls, each with a different fish, a lobster inari, seared tuna, and eel nigiri all in the same box. That's just so cool.
I absolutely love the inaris here - especially the lobster one - which gives you a ton of lobster meat. Considering how expensive lobster is, this is a great deal. I also really liked the unagi nigiri. The seared ahi tuna wasn't bad but it just tasted raw I didn't get much of a sear at all.
My eight pieces came out to 0.83 pounds, which cost about $13. This was a pretty decent deal - it's not super filling, but again when you consider the variety it's really cool.
Overall, if I came at lunchtime I'm guessing my rating would be even higher, but the concept here is something I absolutely love. 8.25/10
