We've eaten at Fogo de Chao twice now and both times it's been an incredible experience.
Fogo is an experience more than a restaurant. You are seated at a table and, while you can order an entree to yourself, but that's not the best way to do it. What you should do is go for the Churrasco Experience.
You go and grab a plate and select things from the "Market Table." This is a large buffet type table with various vegetables, cheeses, small meats, brown sugar pepper bacon (!!! Best thing on the table), garlic, roasted peppers, etc., and take that back to your table. Then you go from there.
You're given a small disc, like a drink coaster, with a green side and a red side. Turn the green side up, and servers approach your table constantly with racks, skewers, and plates of meat. Meat on meat. Meat for days. Steaks of all different cuts, pork, lamb, chicken, bacon stuffed chicken, bacon wrapped steak, you name it. Red meat has different doneness levels on the selection, so you can choose how much and how well done you want your meat. The server cuts off your portion and you put it on your plate and eat it.
Want more of a certain kind of meat? Stop anyone and ask for it; they send a person over with it.
Want a meat and don't see it coming out? Ask your server and they'll prepare and bring it out for you.
Want plain chicken instead of beer marinated bacon stuffed chicken? Ask a server and a whole plain chicken will come to your table.
Want more brown sugar peppered bacon but worried that the plate on the Market Table was contaminated with Gluten and you're Celiac and need to eat gluten free but absolutely love the bacon? Ask your server. They will deliver LITERALLY 30 RASHERS OF BACON TO YOUR TABLE.
Also going around are whiskey carts, cocktail trays and, of course, any server will be glad to get you a drink from the bar.
As soon as you sit down, you get a small plate of mashed potatoes, caramelized bananas, polenta, and gluten free cheesy bread rolls. If you want more, you can have more.
The first time we came here, I took my partner to celebrate a life event. We made reservations for late in the evening and were seated past the posted closing time but we never felt rushed.
We ate and ate and ate until we nearly burst. We got more bacon because the Market Table ran out. We were one of the last tables in the restaurant, but the floor manager and our server both came out and asked us if there was anything else we wanted. If we wanted another whole steak that wasn't already prepared, they'd make it for us. We asked for some more bacon, and they brought us a huge plate of it. I mused that the creme brule on the dessert menu looked good, but I didn't think I should, they brought me out one on the house, just so I could try it.
The next time we went with two friends, who have been more often than we have. We had the same great experience, including the extra bacon presented to us. It also happened to be the birthday week for both me and one of our friends, so we got desserts as a present, again on the house. They even boxed up our friend's so she could take it home with her.
We ate so much, we got the proverbial "meat sweats." Totally worth it. We groaned for the rest of the day, but it was happy groans.
One thing to consider; if you sign up for the email list, often times emails will come out with offers of the Churrasco experience at a deeply discounted price, like $35 a person. This is an amazing deal! Also, brunch on the weekends is the same thorough experience, at about half the price.
One thing of note: we made reservations each time and were kept waiting both times past our reservation period. The staff never rush a table to get done, so it makes sense that they can't count on turned over tables. It's just something to consider and accept, because when you're the table that's seated, you won't want to be rushed to leave either. Sitting and savoring the experience, enjoying the procession, trying all new things, experimenting with combining flavors; all of this takes time and shouldn't be done in a "rush rush rush" way.
So make your reservations, but plan on a few hours to enjoy your time here. We love it and will gladly take friends and family here for any celebration we have.
