"In contrast to the fancier dining rooms of northwest Maui, Fond feels a little industrial, with exposed ceilings and concrete floors. Still, dishes, like a local catch with Maui onion soubise and pickled ginger remoulade, are special enough for date night. This is comfort food with cheffy touches. For lunch, our favorite is the Flip-N-Out burger, a smash burger lightened with tangy atchara, the shredded pickled papaya a nod to the chef’s Filipino roots. At dinner, start with the fried chicken bites, like fancy-ish chicken nuggets that are crisp and juicy. Then, for the best surf and turf combination, order the local sirloin steak sliced over garlicky fried rice (forget meat and potatoes, it’s meat and rice in Hawai‘i), plus the Seafood Tsunami, a poke, perfectly cooked catch of the day, and succulent shrimp medley.
