Fond - Review - Napili - Maui - The Infatuation

"In contrast to the fancier dining rooms of northwest Maui, Fond feels a little industrial, with exposed ceilings and concrete floors. Still, dishes, like a local catch with Maui onion soubise and pickled ginger remoulade, are special enough for date night. This is comfort food with cheffy touches. For lunch, our favorite is the Flip-N-Out burger, a smash burger lightened with tangy atchara, the shredded pickled papaya a nod to the chef’s Filipino roots. At dinner, start with the fried chicken bites, like fancy-ish chicken nuggets that are crisp and juicy. Then, for the best surf and turf combination, order the local sirloin steak sliced over garlicky fried rice (forget meat and potatoes, it’s meat and rice in Hawai‘i), plus the Seafood Tsunami, a poke, perfectly cooked catch of the day, and succulent shrimp medley. Prices for this caliber of food are the best you’ll find on this side of the island." - Martha Cheng

Very friendly staff, introduction of the specials, variety of menu options, the wonderful drinks and desserts to choose from. Owners Chef Jojo Vasquez and wife, Eliza happily greeted us upon arrival, wonderful description of the food and drinks made for a wonderful dinner experience. We loved the fresh and local ingredients that we came back the next day for lunch. Definitely essential to experience!

Freaking great! Hidden gem in Napili. We ordered takeout and got the Panko Chicken w/ Kale, Kale salad, sirloin and broccoli, and seafood tsunami. All were cooked perfectly, presentation was great, and the taste was spot on. You can tell they really care about the quality and their craft. We’ll be going back tomorrow for round 2! lol

A great experience all around! Our server was warm, friendly and clearly passionate about the food they were serving. Her knowledge of the menu items was also appreciated. Felt like a casual-nice neighborhood restaurant. Laid back with very fresh ingredients. I liked the local twist on some of the fish options. Nice bar options too.

Great spot on the west side! Enjoyed a pork and rice bowl for lunch and everything tasted great. The server was terrific and the vibe was clean and fresh. Plenty of free parking in a large shared lot.

We ended up at Fond by fortunate accident, and we’re glad we did - we loved it. The food was delicious, our server was friendly and very efficient and the atmosphere was awesome. We’ll definitely be back again soon!

We went to Jo Jo's chefs dinner Sunday night. It was fantastic, 6 courses, high quality ingredients, in an intimate setting with like minded foodies! An amazing dining experience. Jo Jo's wife, Eliza, might almost outshine the food, she is personable and creates an amazing atmosphere. We then went back to Fond for 3 more meals throughout the week, because there were so many items on the menu we wanted to try. Fond was consistently the best food we found on the island, with bonkers low prices. Fresh ingredients, and something for everyone. Cancel all those reservations at the tourist traps on the beach, this is the place to eat!!

Chef Vasquez closes the restaurant Sunday evening for a 10-12 person chef's counter meal during which he takes guests on a journey through the why (and how) of seasonal, skillfully prepared dishes. At $140/person as of March 2023 (with $40 optional wine pairing), it was reasonable for the experience and a 3-hour meal we really enjoyed. Describing the dishes almost doesn't seem fair since each menu is only around for two months. That said, the coconut tamarind scallops were AMAZING in case you happen to read this in March or April. I've already bookmarked a return for next year.

My wife and I did the Sunday evening chef’s counter and it was a fantastic experience. Everything was very thoughtfully prepared. The food was great and ranks up there as one of the best chef’s tables we’ve done (we’ve done several as we live in DC). What stood out the most to me was chef JoJo. His passion for food is out of this world and his vision on the experience is well executed. You are at his table and you feel like you are his family and in his home. He explains why he does things and where the food comes from and even some of his decision making. It was a chefs table and cooking class all in one and it exceeded my every expectation. Highly recommend and we will be back!
