How Expert Butchers Make an Elk Burger | Eater

"A New Jersey–based supplier of big-game and exotic meats whose elk chuck served as the primary cut for the burger; the meat was broken down, trimmed, and ground together with reserved fat to build the steak-y patties used in the preparation." - Terri Ciccone

I went in March 8, 2025 and purchased these and other items. Should have checked the dates on them.

Drove up an hour to this shop and it was absolutely worth it! The gentleman working the counter was super nice and personable. They have a wide selection of meat choices and they have some of the best venison products I’ve ever tasted. Can’t wait to try everything else I bought! They will be my go to going forward for wild game and exotic meats!

Google
these people in this establishment are the rudest people i’ve ever met. Make sure to spend your money somewhere else.

We were fortunate to have 3 NY strip steaks gifted to us by a cousin for a special occasion as a surprise. We live in CT, and only eat organic free from hormones meats. The order arrived very well packed in ice that didn’t melt for another week after we received the shipment. Because I am a very picky steak eater, (and my cousin knows this), I was not expecting too much. Plus my husband can not chew tough meat. Much to our surprise it was absolutely delicious, tasty and tender. The best we’ve ever had. The steaks are worth every penny and we will be ordering more in the future. We highly recommend their products for your good healthy meals. Thank you Fossil Farms - keep up the great work!

Google
Awesome gourmet store! Love seeing what's in their fresh butcher case. Their grab and go dinners are delicious. Loved the smoked beef empanadas and rabbit lasagna! Great selection of homemade nitrate free jerky as well as BBQ sauces. Tons of frozen game meats to choose from as well! Also picked up their BBQ Catering menu which looks incredible. Very friendly and knowledgeable staff! Can't wait to go back!

Google
We have ordered goose from Fossil Farms for our New Year dinner. We have ordered the goose from Fossil Farms for Thanksgiving previously and the goose was fresh and of good quality. This time the goose was frozen, with feathers sticking out, and no discount was offered for such a sub-standard product. It was too late for us to be able to order from a different place, so we had to accept the one that was offered to us, but it was the last time that we have ordered anything from Fossil Farms.

Google
I purchased Ostrich burgers from here and was pleased with the service and, though I didn’t enjoy the Ostrich, was impressed by its quality and freshness.

Yelp
I haven't been there in a while. happened to be in Boonton on business. got a few items for myself and also picked up a ribeye steak. made it tonight , on the grill, the 8 y/o, 15 y/o and the GF, LOVED it. Fossil Farms had once again made me a rockstar chef. Great products. Great staff. Always helpful and innovative with their selection of meats.

Hank L.

Yelp
A very interesting place. They had a good selection of unique burgers and assorted steaks.. in addition they have some fresh meat products. I would have liked more fresh hamburger options since most of what they sell is frozen.

Yelp
Fossil Farms catered our wedding this month and did a phenomenal job! Our wedding was held outside at a private residence on Lake Hopatcong and ensuring the offsite catering (both the food and service) ran smoothly was critical for this plated, sit down event of 130 people. Ben and Liz worked with us through all the details leading up to the event and did an awesome job the day of. Our guests loved the creative passed hors d'oeuvres (Gazpacho Shooter, Bison Steak Tartare etc.) during cocktail hour. Big thanks to Ben, Liz and the entire Fossil Farms team for helping to make our day special and memorable.

Yelp
Their meat definitely tastes cleaner and fresher than all of grocery store meats that we purchased from. Since their animals come from farms that take care of them (better than most humans) they are on the pricier side. $15 for a pound of ground beef for example but trust me, its worth it!! Especially unfrozen if the option is available. We never bought delivery and always drove to the store. Duck, venison, chicken breast, bison, beef, steak and drum sticks were all great quality in our experience. Also purchased venison dog treats and dog food that we served to my sisters dog raw. It contained vegetables like carrot and peas that he finished in minutes... chow down. Again, it's pricey but reasonably so bc the meat is fed great, and are cared for than most places you buy meat from. I highly recommend if you want to really want to impress your guests for Thanksgiving dinner. Please take the drive though, I haven't seen good reviews for delivery since packages have been damaged. The butchers really know their meats and cuts, ask them any questions and I'm sure they'll know :) they've been really helpful in my experience. Military discount is accepted.

Yelp
placed my first order with fossil farms and it did not disappoint! great elk chops, duck pastrami, and more. great store for exotic meat delivery!

Yelp
Ordered catering from here and while certainly very expensive, the food was very good. My personal favorites were the jalapeno cornbread, alligator bites, and tenderloin. They do offer private chef and events as well but it seemed to be at a bad time since I was told a few staff members quit and so they discouraged us from that option. Just make sure you decide what you want ahead of time since they aren't exactly great at customizing menus or options for you.

Yelp
Retail section has expanded over the years to include prepared foods, condiments, processed meats, and snack foods among the freezer section that houses the delicious wild game. Fossil Farms even expanded so far as to include a pop up dinner space next door to the retail section. Had the opportunity to enjoy various meats like yak, ostrich, emu, elk, camel, bison, pheasant, rabbit, kangaroo, and rare treat items like iberico ham. Customer service has always been helpful, accommodating, and friendly. Prices are fair considering the type and quality of product. Don't be afraid to go outside your comfort zone, the staff will help with your selections to make sure your experience is a positive one.

Yelp
To whom this may concern, I've recently purchased a substantial amount of meat from this company. It arrived on my door step two days before I scheduled it to be at my home. which generally isn't a bad thing, but in this circumstance it was. I was out of town on business. I had to ask a friend for a favor and have him go to my house after he got off work and stow the meat In my freezer. Although that was inconvenient to both him and I, this is not why I'm writing. I'm writing to inform everyone my extreme disappointment in this company and their packaging method. As I stated before, I ordered a substantial amount of various meats. Multiple meats were not vacuumed sealed correctly. I had 5 separate meats that had air in the packaging which lead to accumulation of ice and freezer burn. ultimately this leads to ruining the integrity of the meat. I even had one elk medallion completely out of the package, literally. I will not shop with fossil farms again due to my awful experience.
google avatar

John R.

Yelp
Found this company through an online search. I liked the variety they offered, so I placed an order on a Saturday. I paid for a 2 day air delivery, however by Wednesday, it still hadn't shipped. I reached out to their customer service, and they told me they do not ship on the weekends which is understandable. My order finally got delivered on Friday, which was 6 days after i places my order, and 4 business days later. I understand the covid has affected deliveries, but if fossil farms can not honor on their end to get the order to a delivery company in a timely manor, they shouldn't make expedited delivery an option. In addition, when my order arrived, two steaks were not vacuum sealed correctly, so blood leaked all over the inside the package.

Yelp
As a former restaurateur I can appreciate an establishment like this. They have numerous game items that cannot be found with ease elsewhere and have an even larger selection on their website. Boar, Bison, Elk, Venison, Ostrich, etc., can all be found here. While they are typically frozen it is frozen in such a manner that it preserves the meat and is not like buying frozen products at your local supermarket. They also have a large selection of cured meats and other accompaniments which pair well with you game selection. I particularly like the duck eggs which are always rich and delicious. They frequently have items to sample and offer tastings on the weekends so you can try something a bit more exotic than you are used to as well as providing some cooking suggestions if you have never prepared game. I highly recommend visiting the store if you have even a passing interest in trying to replicate some of the dishes you may have had at finer restaurants. It all starts with top notch ingredients and Fossil Farms has that covered.

Yelp
Don't fear the exotic meats!! Camel burgers? Check. Pheasant sausages? Check. I seriously love Fossil Farms and am so glad that they have a retail storefront. They have frozen cases and a fresh butcher case, full of quality meats. The staff is always super helpful and knowledgeable. We decided to try out their new catering service for our summer BBQ and ended up wowing our friends! We went with the whole smoked hog, which came with their delicious bacon mac and cheese, corn bread, coke slaw, and rolls. We also grabbed a tray of their grilled veggies. Everything was delicious, and I wouldn't hesitate to order catering from them again. I can't decide if it's dangerous or lucky to have them so close to me...

Yelp
I really wanted a fresh turkey for thanksgiving this year and this place had fantastic customer service and answered all my questions and seriously surprisingly affordable since they dabble in high quality exotic meats I was expecting to spend twice what I did. The store is small in size but really unique in terms of products (name an animal....they have it!). Management is very friendly and welcoming as well. They had a local cheese sampling going on the Saturday I ordered my turkey and apparently have different events every weekend. Definitely worth a visit.

Yelp
I can't believe I'm so lucky to have such an awesome place so close to my house. Came in here for the first time with a friend who's big into game meats - both he and I went a little crazy on buying all sorts of meats for our Labor Day get away. That's when I discovered Camel burgers are the best burgers! I then showed the place to my wife, and she loved it just as much! Since then we've tried all sorts of fun different meats, all more delicious than the next. When they expanded their retail store to include more options as well as offer catering, we had to give the catering a shot. We had a party coming up, and had originally intended to buy a whole bunch of grillable meats from Fossil Farms, but decided to get the "whole hog" catering package, and we couldn't have been more pleased. So delicious, so much food, and such a good price! If it's meat you want - you better be coming here!

Yelp
Wow what a paradise for exotic meat lovers. This place is special. Owners are true purveyors of natural high quality exotic meats. Plus they have staff chef and events. Wish they were closer. I do drive or order online. Bison meat is a top seller.

Jon D.

Yelp
I placed on online order and wanted to make sure it got here on time. The customer service through Nicole was excellent both via email and live. There was a bit of mixup on not shipping on time, but she is making sure it arrives here in time for my event on Saturday. Great customer service! I'll update/post with a review of the product after we eat it!

Bill B.

Yelp
Great source of exotic, upscale, and some locally sourced meat. Bought a few times and would recommend. It's a bit pricey but what other shop in the county or state can command such a selection and variety? They also have fresh truffles in season. Customer service is good.
google avatar

Yelp
Stopped by for some quick grill items on a Friday afternoon and was not disappointed! Tremendous selection of wild game and farm raised meats- tried the emu burgers, and well not as fatty as their wagu counterparts, provided a wholesome, meaty tasting pleasure. Cannot wait to try my Berkshire bacon in the morning. I'll defiantly be going back for more!
google avatar

Nick B.

Yelp
I ordered an item as a Thanksgiving treat for myself (I will be "Home Alone" and fancied a treat and received something different. Customer Service tried to convince me that I had ordered the item supplied but I KNOW what I ordered - I had spent half an hour with Google finding what I wanted. Why would I spend an eye-watering delivery fee (more than the cost of the item!) for something readily available in my neighborhood stores? The best they could suggest that I drive 40 minutes into New Jersey (I don't own a vehicle!) to swap. My Thanksgiving is spoiled. I will never order from these people again.

Yelp
I only discovered this little gem a few months ago. Incredible quality meat available locally. I've used delivery services such as Butcher Box and have actually slowed down those orders in favor of Fossil Farms. Great selection and helpful staff.

Yelp
This place has helped us cope with the loss of dining experiences due to COVID. The staff is always so helpful and patient, and I appreciate the variety and cooking tips I find when I visit! Thanks to Fossil Farms, we have been able to elevate our recipes with bison, alligator, elk, and high quality local chicken/pork/beef. We love trying out their rotating cold specialties (like the 5-spice charcuterie or local cheese) and the plat du jour (incredible BBQ chicken). Their thick-cut bacon is the best I've ever had, and their beef Wellington was the highlight of the 2020 holiday season. Thanks for being a bright spot in this era of social distancing!

Brett W.

Yelp
1 star since I haven't eaten meat yet. That being said, All meat showed up completely thawe, juices all throughout the vacuum sealed packages. Sent pictures to the company and they told me "A-OK" since there was still "thaw" on some of the meat packs and no leaking of juices. A vacuum sealed package should not leak any liquid, hence "vacuum sealed". I order frequently from online meat sources and I have never had meat arrive completely thawed and juicy. Sure, probably ok, depending on how long it has been that way, but there are companies who ship in a far better manner which I would trust much more.

Emily M.

Yelp
This company is awesome. Last week I placed an order to be shipped to California before Christmas, not only did they accommodate but they called today to tell me that they over sold and one of the items I paid for was no longer available. At first I was a little sad. I was really looking forward to that product. They made it eight without me even asking them to. They offered to switch that product out for a bigger pricier one at no additional charge. It won't be here until 12/23 (which is perfect) so I'll update with pictures once it arrives. I'm so excited to give this order to my husband for Christmas.

John S.

Yelp
This store front is awesome. Stopped in today and bought 2 berkshire pork chops after seeing them in another yelpers pics. They were vacuum sealed not open air displayed, but the quality was amazing. Lots of delicious fat and marbling. I would suggest only using salt and pepper and enjoying this meat as is! I will be back for sure. Young lady running the store was very nice.
google avatar

Samantha W.

Yelp
These folks are awesome! The animals they farm are treated humanely and it shows in the quality of their meat. The rep that helped me, Phil G., was polite, professional and eager to accommodate. The selection is fantastic, the product is quality and it arrived in CA exactly when they said it would. Great find, I will certainly be placing another order soon!

Yelp
How does a person plan their New Year's Eve dinner ? If you're like me, you get together with family and friends, settle on a menu, decide who is in charge of it (guess who it was in my case) and you proceed to buy everything you need, or, because it's 2020, order online. Well, not if you happen to order with Fossil Fucking Farms. One of the items I ordered from FFF was a whole wild boar shoulder which was suppose to be my NY's Eve dinner (mine and 5 other people's). I had it all planned out, bought the trimmings and everything that was going to go along with it. Placed the order on DECEMBER 18th (plenty of time ahead, don't you think ?), with a ship date of December 24th, for which the delivery was suppose to be next business day (Dec 28th). No mention of the shoulder being out of stock on the website, and was charged instantly for my order. Was emailed that I had to choose a different shipping option if I wanted to stick with the 24th ship, if not it will default to a Dec 28th ship date with delivery on the 29th. This was discussed over the phone. No mention of anything else. On the 28th I called again to check on the status, and was told that it's being shipped on the 29th now, with delivery on the 30th. No mention of anything else. On the 29th, I receive an email confirming shipping of my order, along with a separate email which let me know that I received a refund for a certain amount, WITH NO OTHER EXPLANATIONS WHATSOEVER. Looking over the invoice, I noticed that the amount I was refunded corresponds to what I paid for the boar shoulder. But the email confirming the shipping didn't say anything about it, looked as if my entire order shipped. So naturally, on the 30th, I receive the package, with everything I ordered, minus the boar shoulder. Not one fucking text message, email, phone call, since the 18th, out of professional etiquette, forget common sense, to let me know they did not have what I ordered in stock. So now, on the morning of the 31st, I'm left scrambling and having to change my entire menu for 6 people and having to go shop for it as well. Happy new year !

Scott R.

Yelp
I've placed two orders from them now and am *very* pleased. In my first order I had an issue with the packaging with one product, but they were very attentive and I couldn't have asked for a better response. Other than that there were no issues. A lot of the meats are lower in fat, which can be tricky to cook if you're also looking for safe cooking temperatures. After not quite being satisfied with how I'd done one burger I finally thought to break out my sous vide device. Did the lamb harissa burgers with it, then seared in a very hot pan for 30 secs per side. Possibly one of the best burgers I've ever had (the harissa meant I needed no condiments). I've done several different sausages this way, too, and they were excellent. I'll definitely be keeping my freezer stocked from this company.

Stephanie S.

Yelp
What a cool place! They sell tons of exotic meats including camel, gator, emu, etc. I bought a few meat sticks and pack of bison burgers. The store is cute and the lady working was friendly. Pro tip: they have a lot more items in the back so just ask them what you're looking for!
google avatar

Doug H.

Yelp
I just love this place. I live in philly and drove up to this store in north Jersey. So much offerings and great meat. Wish I could I could afford it more often but I can't speak to their shipping service but I know they have it. Staff was very helpful.

Yelp
Being a foodie is all about experimentation and having no hesitations about trying innovative and exciting dishes. One cannot just eat the same food all the time and experience all that the world of fine cuisine has to offer. I also feel that although dining at top-notch restaurants can broaden your horizons in the realm of gastronomy, cooking your own foodie-inspired fare gives you a satisfaction that is unparalleled. Furthermore, being a male that loves food the way I do, and also enjoys cooking, the approaching summer means that I get to light the grill and start cooking with fire again. I thought that I would let the foodie community in a little secret that is tucked away in a seldom traveled area in Boonton, NJ. Although right off the highway, Route 287, this remarkable shop is somewhat off the beaten path in an industrial park off Myrtle Ave. The clandestine market that I am referring to is named Fossil Farms, located at 81 Fulton Street, Boonton, NJ 07005, and they specialize in Exotic Meats. Some of the rare treats Fossil Farms offers are Kobe Beef sliders, a veritable smorgasbord of insanely tasty sausages consisting of Venison Sausage with blueberries and merlot wine, Wild Boar Sausage with cranberries and apples, Pheasant Sausage with hazelnuts and cognac wine and Rabbit Sausage with Dijon mustard, and some hyper exotic meats like Alligator, Antelope, Elk, Emu Eggs, Kangaroo, Quail, Rattle Snake and Yak. This list is not by far a complete representation that this niche company offers. The complete list of their delectable foodie fare can be found on their website, where you can order from, complete with dry ice shipping. I, for one, would rather save the shipping cost and take the ride over to Boonton and spend my savings on more meat, but as they say, "to each his own," I suppose. Due to the rarity of the food that is offered by Fossil Farms, you must be prepared for the prices when you shop there. One of the main things that I remember when purchasing food from Fossil Farms is that they are the only purveyors of this product in the area. It is not like I can go to ShopRite or Pathmark and pick up a pound of Wild Boar and be on my merry way. It is for this reason, that I can justify paying $10, $20, sometimes even $30 a pound for a delicacy that I have yet to attempt in my foodie career. Just because an item appears on the Fossil Farms website does not necessarily mean that the store has it in stock. The brick and mortar store for Fossil Farms is not a huge place and only has a few freezers that hold their product. They simple cannot carry every product they sell at this location, but I have been told they can and will do special orders if you do not see what you are looking for.

Yelp
Went there to grab some Elk burgers and got my self an elk tenderloin as well . Great customer service. They had bison burger samples cooked and man was that good .. it's a bit of a drive for me but it's well worth it!

Lorance T.

Yelp
I have ordered from here twice in the past few months. The meats are pretty good, but the packaging is horrible. Examples are: pin hole leaks, not vacuum sealed properly, items stick together once removed from the cooler and put in the freezer for a short period. I have ordered from other places and Fossil Farms does not compare as far as packaging is concerned.

Michael G.

Yelp
I tried Fossil Farms thinking that I would order some various meats that I've never had before. They arrived in perfect condition - frozen in Styrofoam box over ice. So far, I've tried the Elk medallions and the Bison steak and both were absolutely incredible! The meat is of the highest quality, and the taste was just delicious!! I anticipate trying the venison and kangaroo for the first time (that should be interesting lol) Would recommend this place to anyone, and I'll definitely be ordering from them again.

Mathieu B.

Yelp
This place is amazing. Drove here from manhattan on a Sunday, and was going to arrive close to/after 3:00pm when it closes, so we called ahead and Katie (?) said she'd stay open a few extra minutes for us. So sweet. The place itself is really clean, well organized and full of unbelievable products. Katie was great and gave awesome suggestions and knew about all the products so well. It's difficult to go here and not want to buy everything. We got: Camel Burgers, Elk and Wild Boar chops, Yak flank steak, and ostrich steak all frozen. We also got half a dozen delicious duck eggs, amazing duck bacon and some great stinton cheddars. This made for some phenomenal duck bacon duck egg and cheese breakfast sandwiches. We got one fresh giant berkshire pork chop which was the best I've ever had. Unfortunately we can't visit the actual farm where the Emu, Ostrich, Bison, Berkshire Pigs roam... These are some of the animals actually raised at Fossil Farms. The other meats are brought in from other awesome farms. A lot of it is frozen which is a good thing. I have not prepared the frozen meats yet but I'm sure they will blow my mind. Price wise, it isn't your weekly grocery store, but it's amazing quality at an extremely fair price. So worth it. I will definitely be coming back every few months.

Yelp
Fossil farms is about a 52 mile drive from my home in Brooklyn so I cannot shop here daily. When I do travel here I make sure I load up on all the goodies they have! The staff is friendly and helpful and the products are top notch. They also do tastings of their products which is awesome. I highly recommend this place if you like game meats.

Yelp
We Had A Cub Scout Camp Out and Got Our Burgers an Dogs From Fossil Farms 2 Thing I want to comment on: 1st) We all know kids are fussy eaters, All the kids ate like they have not eaten in a week 2nd) I am a want to be chef, I enjoyed both the burgers and dogs. High quality and full of flavor. They definitely where not your mass produced meat products. I highly recommend Fossil Farm and plan on visiting the store soon Thank you, Ed Hill Paramus NJ

Lora M.

Yelp
I've been coming here for the past 4 years for for my Christmas dinner. Small location yet so many different varieties of meat. Very clean and the staff are wonderful!! Can't wait to try my black truffle beef wellington

Melissa S.

Yelp
This was our first time visiting the store and we were impressed with the wide variety of not only the meat selection but with other items as well (e.g. pre-made meals, sauces, rubs/seasonings, etc). My fiancé picked out some yak and bison meat while I was drawn to the pre-made wild boar meatballs and prosciutto arancini balls (stuffed with prosciutto and risotto). We had the prosciutto arancini as an appetizer last night and they were incredible! We both said the next time we have people over we are picking up a couple of trays of these. The prices vary while some things seem "cheap" while others are more like, "damn, that's expensive." However, you also have to think about supply and demand and also the cut of meat you're getting. Overall, it seems like they are reasonably priced especially given the uniqueness of most of the items they sell plus the quality of the meats. Both employees were incredibly helpful and nice. They also have a reward system where you get a point with every dollar you spend (but I forgot at what point you get a reward so it'll be a pleasant surprise once we get one haha). We definitely recommend making a trip here and it's also super easy to get to off 287 (just a mile away once you get off exit 45).

Kathleen P.

Yelp
Much as nick experienced over thanksgiving (see below review), website said out of ostrich so sent them an email asking when they would get more, he said they had some and sent me a link to order, I followed provided link and ordered. Got emu and they said it's basically my fault. The link he provided did not even have emu on it. Buyer beware, when mistakes happen you will pay the price cause they don't own anything. Keep in mind, I spent hundreds of dollars with them over the years. Plenty of other places to go, folks, so beware. But, I am certainly done with them.
google avatar

Helpful Piglet A.

Yelp
The reason I am leaving two stars is because their prices are cheaper on their website and they do not price match to their own website at their store. Seems a little ridiculous to me.

Casey P.

Yelp
This review is for an online order. I looked everywhere for an ostrich egg near me, and all I could get were the shells! So I started widening my search. I was worried about shipping an egg cross-country, but I had to try. I was so thrilled that it arrived perfectly intact and unspoiled! I would have zero worries about ordering from Fossil Farms again!
google avatar

Brian R.

Yelp
Been going there for awhile and so far nothing has disappointed me. The Kobe burger is off the hook. Fed it to my family and they all said best burger EVER! The different sausages are delicious and the jerky has my vote. You must try the wild boar jerky I'm going back today just thinking about it is getting me hungry

Manny S.

Yelp
I love this place. The people who work here are extremely courteous and knowledgable. The price may be a bit on the high side but you're paying for excellent quality. It's worth it
google avatar

Kerry O.

Yelp
I love the different selections of meats you can get. I don't eat beef so I get sick of chicken pretty quickly, but at Fossil Farms there are so many other options. The people are always really helpful.

Adam H.

Yelp
A huge variety of natural, farmed raised game and exotic meats. One of a kind in the area.

Emily T.

Yelp
I placed an order with them and was very, very pleased! Got the Long Island duck for my husband, and some other things, and he said it was the best duck he had ever had. That is QUITE a statement for a veteran avid duck hunter! Great place, great experience!

Layla P.

Yelp
Although great food, they greatly undervalue their employees. They don't provide health insurance unless you consider the employee making a 75% contribution really providing insurance. They pay very low, way below fair pay for the work environment. Zero appreciation for the people who are really enabling the company to continue to grow. I would take my business elsewhere.
