"On a typically sticky Singapore night I held the Strawberry Moon at Fura, a futuristic Chinatown bar owned by Christina Rasmussen and Sasha Wijidessa that opened in 2023; the pinprick bubbles smelled of strawberry Nerds but it drank dry and minerally—fauxsé—like a lean limestone rosé. The nonalcoholic cocktail’s ingredients are overripe berries, green apples, vanilla, a coconut-oil wash, a CO2 injection, an ice column, and no alcohol, and it exemplifies Fura’s mission to craft snacks and cocktails from invasive or abundant ingredients with a sober-curious ethos.
