FURA is one of the most exciting (gastro)bars in Singapore today. They are all about sustainable, experimental dining, which involves a mix of locavorism, vegan options, the use of invasive animals or insects, and lab-cultured meats and animal fat.
Think jellyfish martini, black garlic bread dipped in lab-cultured quail fat shaped in candle form, lab-cultured quail parfait bites, salads with grasshopper croutons, and so forth.
The flavours are vibrant and well balanced. Some cocktails skew sweet, but the other elements add interest. Loved the refreshing highball options. Must try!
