"Located on one of the town’s busiest streets, just a stone’s throw from the popular Playa de Muro, Fusion19 provides a wonderful opportunity to enjoy a true fine-dining experience. In the modern dining room (with its glass-fronted wine cellar featuring over 400 labels), open-view kitchen and a space in the style of a winter garden, discover fusion cuisine which is based around “ingredients, memories and influences”. In the kitchen, the young duo comprising chefs Aleix Serra and Marc Marsol conjures up two tasting menus (Plenitud and Esencia) on which they are keen to place the spotlight on the essence of Mallorca’s cuisine, which they base around ingredients from the island (they also have their own vegetable garden on the outskirts of nearby Alcudia) while leaving the door open to the occasional international influence. *A modern culinary experience in Mallorca with a few rough edges* Fusion19 on Mallorca presents itself as an ambitious restaurant, blending Mallorcan cuisine with Latin American and Asian influences. Upon entering, one is immediately struck by the appealing ambiance: a small courtyard with greenery, stylish wine cabinets and modern wooden elements create an atmosphere that balances contemporary elegance with natural warmth. The space invites guests to relax and embark on the culinary journey ahead. Unfortunately, the service did not fully live up to the impressive setting. While the staff is attentive and friendly, the presentation of the dishes often felt rushed and mechanical. The explanations of the dishes were sometimes hard to understand, and the lack of enthusiasm in the presentation left the experience lacking in depth. In a fine-dining establishment of this price range, one expects a certain attention to detail, which was not always present here – particularly when the attire of the service staff appeared disheveled or even dirty at times. As for the food, the presentation of the dishes was visually impressive. This is a place where the eye certainly eats along, and the individual courses are often artfully arranged. Particularly intriguing is the menu's division into different sequences such as "Product," "Memories," and "Influences," which creates a conceptual thread that elegantly connects the variety of flavors offered. However, the flavors did not always live up to the visual appeal. There were moments when the dishes fell short due to a lack of balance in their flavors. Accents of acidity, sweetness, or spiciness would have greatly benefited some of the courses, breaking through the one-dimensional nature of certain flavors. The proportions also needed more finesse in some cases—for example, the brioche was much too large, completely overshadowing the subtle skate cream, leaving only the taste of bread. Such details, especially regarding texture and balance, significantly impact the overall experience. Yet there were also bright spots that showcased the potential of the kitchen. The Ensaimada with black pork was an absolute highlight, as were the duck pieces and the lamb, all of which were perfectly prepared and full of flavor. These moments of culinary brilliance show that the team is certainly capable of creating outstanding dishes. The dessert, however, felt more like a pre-dessert: the herbal and cucumber flavors were, in my opinion, too bitter to provide a satisfying finale. A slightly rounder, sweeter, and more harmonious ending would have been preferable, one that wraps up the entire menu journey in a balanced way. All in all, Fusion19 still offers a good culinary experience, providing guests with an interesting journey through the cuisine of Mallorca, with inspiring Latin American and Asian accents. This is criticism at a high level, and despite the weaknesses mentioned, the restaurant is worth a visit—especially for those who value a special ambiance and creative cuisine. It would be desirable, however, for both the service and the finishing touches of the menu to receive a bit more attention to detail, in order to fully realize the potential of this lovely restaurant.

We spent a wonderful evening at the Fusion 19 restaurant. The combination of dishes and flavors was sensational and the ensaimada in particular was uniquely delicious. The recommended wines were also perfect and the service was courteous and attentive at all times. We would love to come back!

Very long tasting menu. Strong start with amazing tapas, a nice selection of vermuts. My favorite was the duck & fig. I was feeling full before getting to the main courses and couldn’t enjoy those. Overall good experience, but maybe would be good to have a smaller version of the tasting menu

One of the authentic culinary gems in Mallorca. No doubt why it is in the Michelin guide. It is not only about food, it is about the overall experience. The service was superb 10/10. Inside, the ambient and decoration very well designed. The tasting menu is an authentic journey of flavours. Price in accordance with the experience. No question that Javier Hoebeek, the chef, is a raising star. 100% recommend.

Visited the restaurant yesterday and we tried the tasting menu with wine parring. I must say it was an absolute unique experiance. The food was outstanding and the presentation was worth 5 stars aswell. The room is modern and the atmosphere is very cozy. Its really worth a visit

Tasting menu was really something. The menu had so many great and interesting tastes that we had more than enough to talk about. Every dish was special in both layout and variations. Service was excellent, interior was beautiful and we had a really good overall experience! We will come back if we are near by.

Different to the usual Mallorca restaurant, this place has really great food, lighter, fresher and healthier but still very filling. Surprisingly child friendly with a child fresh menu (not on the menu card). Little more expensive than your average in the area but food and service definitely matched the cost. You'll enjoy it.

Fusion19 brings the sophisticated dining experience of the Americas to Mallorca. This place is beyond words because the tastes were the same. Canadian couple travelling trying to find amazing food, we found it! Resort food only gets you so far! The chef is best in the world and changes the menu weekly. I can't even recommend anything because I'm not sure what you will get! Splurge and come here!!!!!!!!!!
