Gaia Masala & Burger has been on my radar for a bit, but hadn't been in till this evening when after a concert we stopped in for a late dinner. This Desi woman wanted to check out the fusion chicken tikka masala cheesecake, and it did deliver, with flavorful chicken, crisp lettuce and a lovely raita in a crispy on the outside, softer on the inside hoagie roll. My husband and I also tried saag paneer and alu paratha. Both perfect and now know where to get a paratha fix any time of day or night. Lastly, totally relished the mango lassi, tasted just like the ones we would make at home growing up.
This is definitely a college hangout, counter service with ordering at the counter and food brought to the tables. Decor is fairly minimal but upbeat music and a few televisions on the walls. But this was exactly the experience one craves for when thinking of late night eats - only more elevated. The best we could do with late night food when I was in college was a pizza stand, this spot with all it's Desi, Middle Eastern and American selections, takes the prize for Boulder. We are lucky to have it here!
San and other team members were so pleasant and helpful, as well as patient as I tried to decide what delicious options to choose. I didn't check on this but if they ever do halvah poori I will be there every weekend morning! If not, I will make this part of our rotation when we eat out.
A little note that the medium spice is definitely on the upper side of medium but the flavors were so well balanced it wasn't overwhelming.
Overall, a wonderful late dinner experience.
