The interiors are warm yet majestic, subtle yet deeply textured. The hand-drawn plates alone are miniature canvases, setting the tone for the dishes that follow. Each dish felt like a curated memory simultaneously nostalgic and unfamiliar in the best possible way.
Highlights? Too many to count, but let me try. The zaatar-spiced khubz with labneh and pickled chillies arrived like a painting tangy, creamy, crunchy, and full of life. The slow-cooked lamb with crisp onions was a showstopper: rich, tender, and artfully balanced. The curry Salona dish bathed in a fragrant, tomato-rich broth was soulful and unexpectedly elegant and such a strong reminder of the finest Sindhi flavors. And don’t even get me started on the desserts saffron date dumplings draped in sesame, and sorbet so vivid and bold, it practically painted the bowl. Each dish didn’t just taste excellent it told a story.
Service was as thoughtful as the cuisine. The staff moved with the confidence of a team that knows they’re part of something special. Every recommendation felt like a personal signature.
Gerbou is not just a new restaurant it’s a new standard. It deserves five stars. With its balance of elegance, warmth, and culinary daring, I have no doubt it will soon be recognized as Dubai’s most important restaurant.
