If you’re the kind of person who enjoys a little mystery with your mezcal, let me introduce you to "Ghost Donkey"—Deep Ellum’s hidden shrine to Mexican spirits and unreasonably good vibes. Tucked inside Palma (yes, inside—enter from Main Street and look for the unmarked door just to the right of the host stand, adorned with a painted donkey and glowing neon), this bar feels like a speakeasy dreamt up during a tequila-fueled fever dream.
The vibe? Electric. Eclectic. Loud—in that “your night is about to get interesting” kind of way. Ghost Donkey opens at 4 PM, and if you want a seat or some quality time with the excellent bar staff, go early. By 5:30, it’s already buzzing. I went with my friend Jesse and caught up with my homegirl Grace from law school—clearly, this place draws a smart and lively (and younger) crowd. 😉
Ghost Donkey is all about agave: tequila, mezcal, and sotol are the stars, and the cocktail menu is anything but standard. Expect bold, creative, boundary-pushing drinks served with flair and often a tiny burro. The happy hour deals are solid, especially on margaritas and à la carte tacos, plus snacks like chips, salsa, and quesadillas.
But don’t sleep on going off-menu. The Golden Donkey—crafted by our mixologist Mike—was the standout of the night: reposado tequila, coconut cream, agave, and charred pineapple juice in a velvety tropical blend that tasted like vacation in a glass.
