Dallas, Texas’s Best New Cocktail Bars | Eater Dallas

"Right next door to Palma in Deep Ellum, and from the same hospitality group, is a new mezcal and tequila bar. It offers curated flights and a long menu of mezcals and tequilas — and the words “Casa Migos” are nowhere to be found, so we don’t hate it. There are also creative cocktails, like the Pistelero (Espolòn blanco tequila, ancho reyes verde, roasted poblano, and pineapple sherbet) and the Highland Picnic (Koch elemental mezcal, terralta reposado tequila, yuzu, agave, and egg white). The menu rounds out with zero-proof options and frozen cocktails, along with a short list of bar bites that includes chips and salsa, tacos, and quesadillas. Happy hour looks extremely limited, and you won’t be able to try any of those cool-sounding cocktails during it, but it runs Monday to Sunday (check the website for more specific hours). Don’t do a double-take when you enter — yes, that is a life-sized stuffed donkey." - Courtney E. Smith

Ghost Donkey is an absolute gem of a speakeasy! The vibe is super cool with amazing music and a cozy, energetic ambience. Their cocktails are top-notch, especially anything with Mezcal, which they do incredibly well. The food pairs perfectly with the drinks and adds to the overall experience. The bartenders are not only skilled but also super friendly and fun to chat with. Can’t wait to come back with more friends, this place is a must visit! Do checkout the Happy Hour drinks and Menu!!

If you’re the kind of person who enjoys a little mystery with your mezcal, let me introduce you to "Ghost Donkey"—Deep Ellum’s hidden shrine to Mexican spirits and unreasonably good vibes. Tucked inside Palma (yes, inside—enter from Main Street and look for the unmarked door just to the right of the host stand, adorned with a painted donkey and glowing neon), this bar feels like a speakeasy dreamt up during a tequila-fueled fever dream. The vibe? Electric. Eclectic. Loud—in that “your night is about to get interesting” kind of way. Ghost Donkey opens at 4 PM, and if you want a seat or some quality time with the excellent bar staff, go early. By 5:30, it’s already buzzing. I went with my friend Jesse and caught up with my homegirl Grace from law school—clearly, this place draws a smart and lively (and younger) crowd. 😉 Ghost Donkey is all about agave: tequila, mezcal, and sotol are the stars, and the cocktail menu is anything but standard. Expect bold, creative, boundary-pushing drinks served with flair and often a tiny burro. The happy hour deals are solid, especially on margaritas and à la carte tacos, plus snacks like chips, salsa, and quesadillas. But don’t sleep on going off-menu. The Golden Donkey—crafted by our mixologist Mike—was the standout of the night: reposado tequila, coconut cream, agave, and charred pineapple juice in a velvety tropical blend that tasted like vacation in a glass. Whether you’re brushing up on your agave knowledge or just in search of a damn good cocktail in a damn cool setting, Ghost Donkey delivers. It doesn’t just pour drinks—it builds an experience. Pro tip: Find the donkey. Walk through the door. Stay awhile. Rating: 4 out of 5 spectral burros. 🐴✨

I was bar hopping, and to be honest, this was the best spot of the day! The staff was great, I got Wi-Fi right at the bar, and had an awesome time overall. The best surprise? Happy hour lasts all day on Sundays—I had no idea, and I loved it! Definitely coming back next time.

We came here for our anniversary date on a recommendation and it did not disappoint at all. We came during happy hour (4 to 8) and tried the tacos, appetizers and drinks. We ordered some of their specialty cocktails (the highland picnic was my fav, stealth marg also good). The vegetarian taco was one of the best I've ever tried, and the service from Torey was phenomenal. She took such good care of us and was super attentive to us the whole time we were there. We did make a reservation ahead of time but it was probably not necessary for how early we were there. We left and came back less than an hour later because we really liked the drinks. The only disappointment was when we returned, we got a different server than Torey and she was kind of meh, so so on the service. Not as vibrant or happy to be taking care of us. Other than that we had a great time. It is definitely on the pricier side which is why I recommend happy hour. But the specialty cocktails are justifiably worth the extra $. The entrance is to the right of entering Palma. Also be aware that parking is absolutely a nightmare (per Deep Ellum) and is expensive as hell. The lot next door has limited space and is $15 for two hours. If you can find street parking we recommend that because the time frame really made us feel rushed and pressed to leave.

Ghost Donkey, opened in Deep Ellum in Q2 2025, has quickly established itself with its high-energy atmosphere and an exceptionally curated agave program. While their current selection is thoughtfully curated; trust that there are some bangers, the addition of Dulce Vida Organic Tequila would round out their back bar nicely.

Ghost Donkey is a hidden gem in Dallas. The drinks were fire, and Mike the bartender absolutely crushed it — super friendly and knows his craft. Great vibes, great service. I’ll be back for sure.

Had a great time here before a concert at the bomb factory. Drinks were very good, atmosphere was perfect. Drinks are a little pricey, and service was at times slow.

Yelp
Tried to get into Palma but it was at capacity so came into here and caught happy hour: $8 drinks & $2 tacos ..Get the stealth marg and thank me later! The frozen marg is so refreshing and tasty tried both the carne asada and chicken tinga, the carne with the verde was my fav but the chicken tinga was super juicy It's kind of small in here but in a good way, feels very homey almost. The bartenders were super nice too!

Wonderful and lovely hidden bar! Great service and fantastic drinks! Will be back. My margarita was just amazing and one of the best I have ever had!

Yelp
We don't go to Deep Ellum often, but stumbled upon Ghost Donkey on Yelp while we were nearby. We went around 5pm on a Saturday and sat at the bar. Drinks were quick and tasty, snacks were good and the service was GREAT. Mike the bartender took care of us but the rest of the staff was also excellent. Would recommend!

Yelp
Y'all, when I say don't be the one hearing about it be the one talking about it. I've been to the one in phoenix but this one is much better! Came in here after leaving the connecting resteraunt of Palma. This is the perfect place to get ya drink on especially on a budget if you time it right! 4-8 on Saturday is their happy hour so after you eat, you can head over and get these cucumber drinks they have. I'm not a cucumber mixed with liquor fan but this was bomb! They had a nice sitting area in the back too where you can vibe and chill. It's a small place sure to get packed quick. The bartenders were so dope and knowledgeable. Drinks were strong af, after 2 of those cucumber drinks I was feeling it allll the way. Can't wait to go back

Yelp
Originally I was going to rate them as 5 stars, but here's what happened. When you order you give them a credit card to open the tab, we ordered 3 drinks and upon closing our tab they couldn't find our credit card on file so they asked us to swipe it again, which of course we did. We confirmed that we will be charged once. Fast forward to this morning when I open my credit card app and of course there are double charges that appeared on the originally swiped card after closing! I absolutely HATE having to deal with charges after the night out! Just keep this in mind in case that happens to you as well! I will attach pictures of pending charges, also not sure why charges are for different amount but I assume that tip was added after closing. We had a good time but it ruins the vibe if I have to dispute charges the morning after

Yelp
It's so hard to find a spot with good drinks and good music in Dallas but this spot is it!!! Not only was the music amazing (reggaeton bangers), but the server and staff were AMAZING. Abel, in particular! He was so accommodating and went out of his way to make sure our experience was great. We had a large party and I was worried there wouldn't be enough space for us but he helped us find a spot and really looked out for us. 10/10 recommend! Ask for Abel :)

Yelp
One of Deep Ellum's best spots! Great drinks, great ambiance. Hidden speakeasy located beside La Palma. Make sure to ask for Abel if you want some fire drinks. I personally enjoyed their mezcal based drink La Chispa the most, but they have many options.

Yelp
The music is awesome and it's a fun bar. Their drinks were really good too. Definitely will be back again
