Ann Arbor Restaurants Face Rising Food Costs and Labor Concerns During Reopening - Eater Detroit

"Supplier issues aren’t just limited to food and paper goods, but to services like contracting, which restaurants rely on to open in a timely fashion. Ginger Deli operated a downtown Ann Arbor walk-up window serving Vietnamese banh mi sandwiches and pho until building issues led to the restaurant not renewing its lease in late-2018. Since then, Ginger Deli had been selling food at the the University of Michigan hospitals and the Ann Arbor Farmer’s Market while owner Te Phan looked for a suitable space. He found a downtown spot at the beginning of 2020 and was planning on opening in mid-April when the outbreak began. 'Renovations were impossible since contractors couldn’t do any work because of the virus,' Phan says. 'City planning and permit offices were closed so, even if there were contractors available, we couldn’t get the necessary permits.' To make ends meet, Ginger Deli is now selling meal-kits for delivery." - John Reyes

Super disappointing experience here. The beef bahn mi had basically no beef on it (see photo), didn’t have some of the toppings listed on the menu, and was honestly just pretty gross. It also rang up as more expensive than the price on the menu, which I didn’t notice until after I left because there’s no way to see what you’re being charged for when you’re at the counter.

Everything on the menu has lovely balance of flavor and texture, crispy, soft, sweet, salty, umami, acid. My favorite is the pancetta bahn mi, second is the vermicelli bowl. Quick service and consistently delicious food every time. It’s your (almost) corner deli, a little rough on the interior but you know you’ll be back again and again.

I love everything about Ginger Deli. Great service (fast order completion, friendly and helpful staff) and ambience (hip, relaxing vibe—including a cello in the corner!), and most importantly, incredible food. I had the pancetta banhmi - this is one serious sandwich. Everything is made in-house, including the bread, which has a crisp, light crust and soft, inviting crumb—the perfect vehicle for fresh, flavorful ingredients, with the tender pancetta in the spotlight. It is a veritable symphony in your mouth. Follow it up with a fragrant, soul-nourishing bowl of beef pho—one of the best I’ve had. Tie it all together with a Vietnamese-style iced coffee. Don’t sleep on Ginger Deli!

ordered a vegetarian tofu banh mi to-go to eat on my trip out of town. just opened it up to find that it contains one tiny piece of tofu as well as a lot of some kind of sliced meat? unfortunately the sandwich is completely inedible, and i was too far away to go back. very disappointing. the space is cute and people working in the shop were very kind though!

Got the vegetarian banh mi. The bread is super fresh, nice crispy crunch on the outside and pillowy soft on the inside. There was a copious amount of fresh vegetables. I went home with a full belly. But the best thing about Ginger Deli is the warm and hard working staff. The setting is casual and relaxed. Definitely recommend.

They have a really cute little display of packaged food for sale. The space is cute too. Is the food “authentic”? No. But it was good enough to satisfy an urge for Viet food. Pho could have used a little more meat.

Not bad for a quick and inexpensive meal for lunch. I tried the beef pho. The broth and texture for the noodles were good. It needs a better protein/noodle ratio and a side of bean sprouts and Thai chili peppers. Right now the only vegetable in there is a sprinkle of cilantro. The AC should be turned on a bit more, considering people are ordering a hot soup in the middle of summer.

Absolutely delicious banh mi! I got the pancetta one, and the ingredients tasted so fresh and flavorful. Loved the bright pickled veg and cilantro with the fatty pancetta. And the bread! The bread is stand out, perfectly chewy with a nice exterior bite, and not heavy. Perfect vehicle for the sandwich. Environment is on the smaller end, cheerful, fairly utilitarian. Most conducive for quick, casual meals, solo or with friends. Food is served on simple trays, sriracha and hoisin on request, and there's a fridge with a selection of beverages (water, pop, sparkling water, some specialty Asian drinks).

I can only speak for their spring rolls because that's all I get here, nonetheless they are very tasty. It's nothing out of the ordinary if you know what they are. They do not have that many seats inside but that's expected for the fast casual food places in downtown Ann Arbor. When I'm in the area and have a taste for fresh spring rolls I usually come here. One day I'll come try the rest of their menu.

The only bánh mì I've found within walking distance of the UM campus. The sandwich was decent. Overpriced but that is to be expected for Ann Arbor. There could have been more meat and veggies but at least the beef was good quality.

Ordered Vietnamese coffee and beef pho. It's the worst pho I've ever had. Not even many beef in it, and there is almost no veggie in it, but it costs $14! One bowl definitely does far better. The coffee tastes like some sort of Chinese medication. Can't believe someone wrote in the review that it was the best pho in Ann Arbor! It's definitely the worst!

DO NOT GET THE PHO. Get the bahn mi. The Pho is so bad and over priced (no veg, 3 slices of meat for 14$). Super salty and only tastes like fish sauce and cilantro WTH. It says they don't use MSG but maybe they should. The bahnmi is fine . Summer rolls are super over priced too. The paper was stuck in pieces all over it. And the wrapper was hard. Other than the pho everything was just Fine. For the prices they could have really done better. Was really looking forward to here so super disappointed

Trying to find the best pho & banh mi in AA, and saw this place is ranked really high. Employees were really nice, and the seating area is cute but small. We got the pancetta banh mi. It was pretty good. Not a lot of daikon or pate, though. We also got the beef pho, and honestly it was the worst pho we've ever had. The broth tasted like they used too much aromatics or cheap spices, my boyfriend said it tasted very medicinal and left a bad aftertaste. There was also a layer of grease at the top. To make it worse, I found a bug in mine. We won't be back, which is a bummer because we'd really like to not have to drive so far east for some good Vietnamese food.

Ginger Deli is the first place I want to go when I have a lunch break on campus! I first tried Banh Mi a few years ago at another local establishment and fell in love with the sweet & savory flavors of the meat, crunchy pickled vegetables, spicy jalapeño, all nestled on good bread. Upon walking into Ginger Deli, I knew I was in the right place. It's bright, clean atmosphere is nice to pop into when you're walking down E. Liberty, and there's some tables inside and outside that you can find people enjoying their food at. The first time I went there, I saw a couple both holding long, baguettes wrapped in parchment paper... taking bites into a juicy banh mi. I walked right inside. The counter to order is straight back, with a menu on the wall and near the register. You can order a few different types of meat, but I always go with the beef! The sandwiches are plenty for one person, and sometimes if I'm feeling extra hungry I order the summer roll as well (pork, shrimp, vegetables, in a clear paper served cold with a sauce on side). Perfect when it's hot outside! Although Ginger Deli is still on the newer side, I think they can work on a few things to continue being awesome! It seems that help behind the counter is short. Sometimes it does take awhile to get your food, and I wonder how the team can work more cohesively back there. It's basically set up as as a few working counters, not a legitimate fixed kitchen. I think with time, Ginger Deli could outfit the space to better serve them & their customers. I also think having a self-serve water station would be nice! Lastly, the website is a little challenging to navigate given the online ordering is still not available. In order to see the menu, you have to click Order Online but it's not set-up.

Ginger deli is the best! I'm from NYC and I've been trying to find banh mis here that are as flavorful and awesome. Ginger banh mis accomplish that. I had no idea this place opened up again since it closed in 2016 (?) so I was excited to eat here again! I remember really liking the pho at Ginger Deli back then. Before, it used to be a food stand (minimal bar seating that was kinda outdoors) but I'm glad they have a whole interior now with lots of space and tables to sit in. My friend and I got the beef pho for $11 and the food came out within 5 minutes. Sadly, the portion size was really small for the price. I don't eat all that much, but even for me, this was too small. For the price, I expected more pho. Overall, it was still very tasty. The broth was flavored and seasoned well with a good amount beef flavor and definitely more on the savory side. Pho noodles were springy and soaked up the broth well. The meat they gave were brisket cut (I think) and was decent quality - sadly it was just 4-5 pieces per bowl. It was a good amount of broth though, so it was nice to sip it while talking to my friend after finishing all the solid content. I'd recommend this place for an expensive snack. My friend and I were still hungry after finishing our bowls of pho. You definitely won't be full from one bowl of pho here - probably need two or more bowls, tbh. I hear the banh mi here is quite delicious, so definitely something I'd have to try next time!

I haven't been here since they moved to their new space. They have a limited menu of banh mi, rolls, pho, and a vermicelli bowl. We had a chicken banh mi and a beef banh mi with the vegetarian rolls. Everything was prepared really quickly and had nice flavors, but the sandwiches didn't seem like usual banh mi to me.

I first discovered Ginger Deli through Tantre's Farm CSA! Ginger Deli has apparently been around A2 since 2014 in various fashions (including a U of M hospital location) & they've recently opened back up downtown! For the CSA, I had the lemongrass chicken banh mi. It's the best banh mi I've had on this side of the state. The bread was just SO good & legit. It tasted really fresh -- even though I had it a day after I picked up the CSA box. So, I decided to visit the new downtown store front for lunch. Ginger Deli's online ordering system is not up yet and I'd imagine it be much easier when it is. The hours are also pretty limited right now (lunch). I ordered 2 Banh mi and pho! I wanted the Vietnamese coffee but they don't have that yet unfortunately!

This place is pretty solid. I tried the pancetta banh mi. It's pretty similar to a bánh mì thịt nguội although pancetta is not traditionally used. The pickled veggies are a bit too sour for my liking and it can be overwhelming for some bites. I think they should add bơ in the banh mi. This is just a personal preference though, I like the creamy taste. I wish they would change their hours because closing at 4pm is too early !!

Driving through the area, I was craving pho, so we hit up Ginger Deli. Located in downtown Ann Arbor, there is plenty of cheap street and garage parking nearby. I wonder how long Ginger Deli has been at this location. My bf thought it was a pop-up. The interior looks very unfinished and a bit industrial. Strangely, the only menu posted at the counter was the banh mi menu. We had to ask to make sure they had the additional items we wanted. I ordered beef pho, and my bf ordered a veggie banh mi and summer rolls. Of course I had to take some bites of my bf's food. The veggies in the banh mi were crisp and had a nice tangy flavor. The sandwich just seemed a bit smaller than expected. The summer rolls were light, refreshing, with nice mint flavor. My beef pho was pretty good. The broth had good flavor, it just seemed light on pieces of meat. They also don't have bean sprouts, hoisin, sriracha, and jalapeños for the pho.

I was really craving some hot soup, and pho came to mind, but unfortunately there aren't too many spots around that serve quality authentic pho. Ginger deli is a tiny little spot that felt like a modern rebel's spin on traditional Vietnamese cuisine. The seating was minimal but I quite liked how quaint it all was. I also appreciated their exotic diversity of drinks they offered. I got beef pho (beef replaced with pancetta) and a summer roll. The food itself however sort of felt like an experienced violinist playing an extraordinary melody with a out of tune instrument. The elements were almost there but not quite. It's definitely isn't completely Vietnamese in flavor and essence but rather plays tribute to it. I do think that for the area it is situated, it would be a great beginner's pho, but for someone looking for the real deal (with beef tendon and all), it might not be what you are looking for. I do like how most things on the menu can be made very quickly grab and go, and would be perfect if you're a student here.

Clean and cute space, I can see it being a bit tight if there's more than a few groups dining in or when they get busy. Definitely a good lunch spot if you're downtown, and is one of the few places to get lunch under $10. Good flavors all around, and we will definitely be back to try more!

Place This place is a hidden gem. I didn't realize I kept walking by this place. I was with a friend exploring kerrytown and on google maps I saw ginger deli nearby. When you go inside it is such a clean unique spot that have little Knick knack decorations Service The service is amazing. Our server was super helpful and nice. We asked for shrimp chips and he went to back and got us fresh ones. Food/price They are known for their pho and ban mi so we had to try both. I got the trad pho and shared the veggie ban mi. It is we so good and authentic. The broth is so rich! Yum Audience A lot of friends and young people come here. The seatings are high tops and some outside. Not much wait Recommendation/tips I recommend this place for sure and plan to come back

Gone is the tiny pop-up store front! Here is a roomy 'brick & mortar' space with a more diversified Vietnamese menu (including bun and two types of rolls) and super friendly staff! They also sell hip Asian pantry items (chili crisp, spice mixes, etc.). Ginger Deli 2.0 seems to be going strong. Their banh mi (on fresh house made bread) is the best in A2. My current fave, the veggie, still rocks. If only I could pair it with a Vietnamese iced coffee...but I'm told that should happen closer to the summer.

Located downtown Ann Arbor, this deli is a gem. The owner and workers are so friendly and welcoming. The pho has no msg and is the soothing to any hungry belly. I am obsessed with the spring rolls and the sauce that comes with it. The banh mi was my favorite-filled with so much flavor. The crunch on the homemade bread is phenomenal.

Delicious Vietnamese dishes! The pancetta banh mi was my favorite, as it had a generous portion of tasty pork shoulder and a surprising spicy kick from the jalapenos. The beef pho was also good, with a flavorful broth and tender meat. However, I was a little surprised that the vermicelli bowl was already made and packaged in a to-go container even though we were dining in. It was still tasty even if the chicken was a little tough. Even though space is small with minimal decor, I liked how they still made room for a section of Asian snacks and pantry items.

Not my food but mine was delish! I had the veggie pho with chicken added but with veggie broth! Extra cilantro and extra limes. It was sooooo good! I also had a delish Thai iced tea that was so refreshing Bianca and Enrique need a raise because they hooked a first time customer up like royalty and I even met a new friend there too! So beautiful and worth every Penny trust me!

Maybe they are good, maybe they are not good. It says that they open at 11 AM. I called twice after 11 and no answer. I really like pho and Bahn mi sandwiches we don't have anything like that in Kalamazoo. I figured that while I was in the Detroit area, I would look something up and try it out, and this came up near the top of customer ratings, so I suppose it's good, if they're ever open.

The beef bahn mi is enough to have me return to Ginger Deli in the immediate future despite some other qualms! There was only one person making food during rush lunch hour (long wait) and they were getting the orders confused (kept asking people standing around what they were waiting on). This wasn't a quick grab and go, I probably waited about 20 minutes. That being said, the food is fantastic and worth the wait.

First time ever having a banh mi, and it did not disappoint. I ordered half beef and half pork pancetta banh mi. For a relatively inexpensive price, I got a big, filling, and yummy sandwich. The meat, sauce, and veggies blended into a delicious medley without one element overpowering another. Definitely would come back.

Had a taste of their beef pho and pork sandwich. Made to wait 15 to 20 minutes inside the shed with no heater. Not a good idea to dine in during the winter. Most preferred to do take-outs. There's about more or less 8 tables available, so also not good for groups to hang-out. Probably summer time you can come as a group when they open the outdoor tables and chairs. No restroom at the moment. The cashier was taking orders, at the same time doing the sandwiches. Friendly and helpful. Accepts cash and credit card payments. Prices is about the same as other pho restaurants or to-go. The soup is served in a nice bowl, with plastic spoon and chopstick. Liked the broth. But I just like it more with pepper which was not available at the time. There is only 1 sriracha plastic available at the common table for everybody to share in the common dining area. The pork sandwich was good. I wish there was more meat. Liked the taste of fresh cilantro and shredded carrots and sliced cucumber. I would love for mayonnaise or some dressing added to it so it doesn't taste dry. I wanted to but the Thai iced tea. But $3 ++ an order was too much for me. Opted for water instead. Lots of college students like to eat at this area and meet adventurous foodies. Most of them come back regularly. For me, maybe next summer when the weather is perfect to dine outside and have a sip of their good pho broth.

This place has the best banh mi in town! They recently opened their storefront on liberty and are slowly ramping up their menu. I am a huge fan of the chicken banh mi. The pickled veggies, chicken, and sauce are to die for - this is one of those sandwiches that I get cravings for and absolutely need to have. Not to mention the bread! Baked fresh every day and is the perfect crunchy exterior and soft interior that you dream of in a perfect banh mi! Highly recommend. Next on my list is to try their pho!

Small deli downtown with Vietnamese classics like Banh Mi and Pho! I've had the tofu banh mi here several times and I don't know if it's the best banh mi I've had in Ann Arbor, but I definitely say it's one of my favorites! This visit I tried their Pho for the first time. It's hard to find good vegetarian pho or ramen so knowing theirs is made with vegetable broth, packed with veggies (daikon and carrot), herbs and tofu, is great! Overall, I really liked it. The overall taste was pungent and strong in that ginger/lemongrass sense, the broth was hot, the way it was packed as a to-go order was very unique (order it and you'll see why I say that!)! I didn't end up eating the whole thing, but I liked their take on this dish!

This place only having four stars blows my mind. The dude bakes the bread for his banh mi fresh like every morning and the texture is the perfect combo of crispy on the inside and chewy on the inside. The banh mi tastes so fresh, you can literally taste the freshest ingredients in the sandwich. And I know that this will sound blasphemous but I'm not a big fan of pho. I think it's because of anise, just not fond of that flavor. But because I enjoy Ginger Deli so much I was like, I'm just going to give it a try. I did an I was not disappointed. They separate the broth from the noodles as you should for take out, so that the noodles don't get soggy and overcooked. You can see the yummy freshness from the veggies in there. The flavor was very complex and delicious. Thank you for existing. Seriously. Wow. Also love how they elevate the local businesses that they share space with. they have Harvest Kitchen granola in there. Peace.

[Ambience] Not much of an ambiance. It is a cute tiny hole in the wall. There is only outside seating offered and it seemed like a lot of people take food to-go because of that reason. [Food] Even with my loss of appetite during the challenge, I could not continue eating the ph after a few slurps. The soup was gone literally after the photo was taken(the noodle & the paper bowl absorbed it). The noodles were very uncooked, which made it hard to slurp. The meat was already cooked, which is not really what the authentic pho is supposed to be. The meat is supposed to be cooked along with the heat of the soup. The broth was not even hot and just tasted like lukewarm sweet water. Also, no one knows what the piece of stale baguette is for. For Spring rolls, I liked their spicy peanut sauce. It was thick and rich. The rolls were OK. as they put only 2 tiny shrimps, which I thought did not fit the $4.50 price tag. Usually you would get more shrimps so you can taste the same flavor with every bite. Also, the ingredients they put in was not traditional. Daikon and eggs in the spring rolls is unheard of as ingredients in spring rolls. Also, I think they need to invest in packaging. They definitely need a bigger plastic soup container and mini plastic box for the spring rolls. The broth was leaking everywhere and was absorbed by the paper bowl and noodles. The spring rolls was stuck on the paper tray and parts of paper ripped off with the rolls.  There was also no addition of beansprouts which is an integral ingredient in pho as it  provides a contrast to the soft noodles by adding a nice crunch. [Price& Service] For the portion size, the pho at Ginger Deli is over priced. Pho is supposed to be a big portioned fulfilling comfort food while being affordable. However, their pho was tiny. For the taste, the ph is over priced. I could tell how Ginger Deli was being stingy with their ingredients, which made me to feel like I am not getting my moneys worth. Their mini sized Mexican coke was also sold at a markup and cost as much as a larger sized one ($2). Not much to talk about service. One person takes the order and brings out the food to be picked up. 1/5 I tried taking some good photos but really, it was extremely disappointing. I gave one star because this is about the best pho you can get in the Ann Arbor. If you never have had pho in your life, you might think this tastes OKAY. If not, I would give zero stars. I will not return and I cannot believe this place has 4 stars on Yelp.

Great place for a quick bite! The banh mis are also perfect for on the go! I really enjoyed the chicken banh mi I had and am excited to try their pho and rolls. I also love that the bread is baked daily. The ingredients were all fresh and tasty! Though I do feel you get a lot more bread than fillings in your banh mi, or at least I did. Service was great and very fast!

tl;dr macaron ice cream sandwiches are disappointing - there's a reason people only post photos of them before biting in :( The vegetarian banh mi ($6) has a good balance of flavors, but there was too much bread compared to the filling, and the bread was pretty dry throughout (not just a super crispy crust, but just generally really dry). They sometimes run out of bread during the day and you have to wait for the next batch, which means that it's baked fresh every day! I've usually heard China Gate recommended over Ginger Deli for pho, but I haven't tried it here. The ice cream sandwiches are pretty disappointing. They come a variety of creative flavors - I got Michigan cherry. They're stored in a freezer outside, and a staff member will retrieve one for you and hand it to you in wax paper. I wasn't able to see inside the freezer since I was paying, but when the ice cream sandwich was taken out the surface was wet and shiny, and there was a blue mark on it (probably from coming into contact with the sweet corn blueberry one?) so they definitely aren't individually wrapped. They look really nice on the outside, but when I bit in both of the shells were completely hollow on top. This doesn't only detract from the experience visually, but it also makes the ice cream sandwich more difficult to eat, and pieces of the shells kept falling off. The macaron shells didn't seem to be cherry flavored (but this wasn't advertised either). The ice cream was also very stiff and hard, so the texture wasn't the best when combined with the hollow macarons that were much softer and shattered easily. The ice cream itself was not remarkable, but I liked the cherries mixed in. One nice thing is that the $5 price includes tax (the receipt read $4.72 pre-tax) but this isn't true for the banh mi which is slightly confusing.

I think I waited long enough to make my second visit to see how things have changed since my first visit... on the first visit, I recall waiting 40 minutes to get my food.. and I just hoped after that visit, they would have worked out all the little details, but it seems they still have lot of room for improvement. On my second visit, I went with pork banh-mi... I placed an order over the phone at 2pm on a Sunday.... told them I'd be there around 2:20... I didn't get there until 2:30pm and waited five minutes to talk to someone since they were busy... not a big issue... they were busy and helping other customers... When they asked me how they could help, I told them that I was here for a pick-up... they looked and turned back to me and said, "Oh, we will make you a new one since it's been a while"... they cashed me out and I was thankful that they were making me fresh one.... HOWEVER, it turned out that they never made my banh-mi that I ordered over the phone... they started making it five minutes after taking my order... so I had to wait another 10 minutes to get my banh-mi.... So, I placed an order 30 minutes in advance... waited 5 minutes to talk with someone and then waited another 10 minutes to get my order..... I just hope this is not a norm.... just hoping that this was one of those off days on a Sunday.... I'm just hoping.... As for the banh-mi... I think beef is a lot better then the pork... I'm not sure... but looks the the bread size has decreased since they first opened?? It just looks smaller... not sure.... they also changed the pho bowls... now they are using washable bowls.... not sure when my next visit will be, but for now, I'm reducing my rating down to 2 and lets see how things go on my third visit....

The new location has really set this business in a well deserved better light. The sandwiches are fabulous with the most deliciously fresh bread. Fantastic, unique establishment that doesn't empty your wallet.

Hands down the best Vietnamese food in the area! Beef broth was so aromatic and full of flavor. Pancetta banh mi was absolutely delicious. Owner was so kind & great! Can't wait to go back!

I feel like I should qualify this review by starting by saying with I'm Vietnamese American and am from California so I've had my share of great banh mi. This is just a review for the pancetta banh mi. By far the most authentic I've had in Ann Arbor (with the exception of Belly Deli which is now sadly closed). They actually use pate and the nice butter spread. Super tasty! Good bread - not a hard baguette like some other places. I will be back to give my verdict on the pho another time.

I visited their new location which was opened in the midst of the pandemic. I had both pancetta and beef banh mi; very tasty and lots of fresh ingredients. I was fortunately to try the rainbow rice (not on regular menu) with several veggies, pineapple and shredded coconuts; so YUMMY and also healthy! If you're a local, please support this business while so many restaurants did not survive; the owner Te Phan chose to embrace the challenge and so bravely opened it during the pandemic.
