"Once a downtown walk-up window known for Vietnamese banh mi and pho, Ginger Deli stopped renewing its lease in late 2018 and sold food at University of Michigan hospitals and the Ann Arbor Farmers’ Market while owner Te Phan looked for a new downtown space; he found a spot in early 2020 but planned renovations were impossible because contractors and city planning/permit offices were shut down, so Ginger Deli pivoted to selling meal kits for delivery. Phan is uncertain the downtown location will be viable because the business aims for downtown lunch crowds and “students were 40 percent of our business, and they’re still away.”" - John Reyes
