Hungary's First 2 Michelin Star Restaurants

"Beneath the walls of a castle, nestled inside some historic cellars, is hidden a restaurant whose cooking has plenty of skill, refinement and creativity. Chef István Pesti’s cuisine has gone from strength to strength since he opened up here in 2021, and the Michelin Inspectors have certainly taken notice. To rate a restaurant with Two Stars, they look not just for great flavours, but a high level of precision and real depth – and throughout the lengthy tasting menu that István creates, these qualities are there in abundance. His dishes are based around delicious natural flavours, which come courtesy of some superb quality produce, but it’s the inventive and intelligent combinations that elevate things to such a high standard. The cooking is always well-balanced – cutting richness when needed – ensuring that all elements fit together perfectly. Whilst Hungarian flavours are evident throughout the menu, István tends not to stick too closely to traditional recipes. There is a creativity to his cooking, along with a high level of complexity and meticulous care that has to be applauded – and the resulting dishes were some of the most memorable that our inspectors experienced throughout the year. Attention to detail is key in cooking of this quality, and delicate precision is found from the start right through to the end of an evening at Platán Gourmet Restaurant. Setting the tone for one Michelin Inspector’s dinner was an amuse bouche of wonderfully constructed gazpacho granita – it was the perfect texture and distilled the essence of the gazpacho flavour brilliantly – leaving her in eager anticipation of what was to follow. The kitchen team’s excellent grasp of flavours was also evident in a dish of trout, cucumber and ponzu, where deliciously pure ingredients were enhanced by their well-considered combination and careful construction. The trout was lightly charred on the outer and paired with pearls of cucumber essence; it was the sweet and salty hit of the ponzu that really set the dish alight however, helped along by bergamot, a hint of mango and a finger lime for acidity. Several inspectors were further impressed by the reworking of the traditional Hungarian dish ‘Brassoi’. This version used pigeon as its base, with the breasts cooked sous vide to achieve a beautifully succulent, tender quality to the meat. Veal sweetbreads added further richness, which was then offset by a superb ratatouille. These well-balanced flavours are a perfect example of the sophisticated, considered cooking that has impressed the Michelin Inspectors so much. This plate was finished off with a nod to the most famous of all Hungarian dishes, through the use of a goulash sauce. The inspectors with a particularly sweet tooth found plenty to love in the desserts too. For one inspector, their top dish was a combination of peach, white chocolate and almond, which once again showcased the level of detail here. Different arrangements of peach – natural, purée, gel and sorbet – provided acidity and were a great contrast to the white chocolate and marzipan mousse that formed the base of the dish – while the biscuit ensured a great textural contrast. There are only eight tables at Platán Gourmet Restaurant, so each lucky diner is treated to a memorable and very personalised experience around the open kitchen. Whilst the dishes are a showcase of István Pesti’s originality as a chef, there is also an admirably confident restraint to his cooking. Smooth service, excellent wines and a unique, attractive location bring everything together to make a great all-round experience." - The MICHELIN Guide UK Editorial Team

Picture this! We made a reservation at one of Hungary's esteemed Michelin-star restaurants in late August. The kind of place where the flavors are supposed to dance in your mouth while you sip on something fancy and contemplate the meaning of life—or at least the meaning of the next course. After an hour of traveling and a weekend hotel booked just to enjoy our 8-course culinary adventure, we strolled up to the establishment, excitement in the air." But, lo and behold, the manager greeted us with a smile that slowly turned into a face full of shock when he announced — wait for it — that they had NO RECORD of our reservation. Yes, you heard right. Not even a whisper of our names on their fancy reservation system, even though we had a text to prove we had made one! Apparently, our hopes of refined dining had been whisked away like yesterday’s breadsticks. They explained that 8-course meals require meticulous preparation that starts in the morning, and unfortunately, they didn’t have the ingredients to whip up another meal—classic Michelin star drama, right? But don’t worry, they offered us a couple of free glasses of Hungarian sparkling wine to help drown our sorrows. And while we were sipping on the bubbly, something else was bubbling under the surface—literally! As we toasted to our dashed dining dreams, we noticed some uninvited guests. Yes, folks, rats were scurrying about like they were in some kind of underground rodent fashion show. And it was unmistakably rats and not muskrats that one can see around town. I mean, when you’re in a Michelin-star restaurant, the only thing that should be roaming the floor is your extravagant meal, not a rat parade! So, naturally curious, I approached the manager and asked if he was aware of this little furry situation. His response? 'No, we are not!' I sensed a bit of hesitation on his part, but gave him the benefit of a doubt, just to find out later that night that the restaurant had a rats exterminator right after our conversation. After weighing our options and deciding that dinner with rats might not be quite as gourmet as we’d hoped, we ventured to a nearby cafe owned by the same hotel. Spoiler alert: More rats! It was like a scene straight out of a cheesy ratatouille movie—only less entertaining and more... well, disheartening. After this unforgettable dining experience, the hotel manager, in a generous twist, offered us a 20% discount on our meal at the cafe. However, I didn't intend to take advantage of this offer, because I didn't want to be beholden. But here’s where it gets even crazier! When we get the bill, that supposed 20% discount? It had come straight from our anticipated tip! Instead of a discount, we had just been given a lesson on culinary subtraction! Our wonderful waiters who earned every cent of that tip ended up subsidizing our so-called discount. So, in conclusion—if you ever find yourself in Platan, remember this, before you dine at a Michelin-starred restaurant, perhaps check for rats instead of reservations! And maybe just enjoy your sparkling wine by a nearby fountain. It’s cheaper, and at least the only critters you'll see are the ducks and swans! A Lifetime Culinary Experience For our anniversary, I decided to surprise my wife with a truly exceptional dining experience. After some research, I settled on Platán Gourmet Restaurant renowned for its exquisite dishes and captivating atmosphere. From the moment we stepped into the restaurant, we could immediately feel that something special was in store for us. The ambiance, with its soft candlelight, fine wines, and music, created an intimate and welcoming environment. The staff was incredibly attentive and polite, which set the tone for an unforgettable evening. The meal itself was nothing short of a revelation. Attention to details in its highest level. All the dishes were so beautifully crafted that it almost felt too good to eat. The entire experience elevated the evening to a level of perfection that left us both speechless. When we got home, my wife couldn’t stop talking about it the next day. It wasn’t just the food, but the overall experience – the ambiance, the service, the flawless execution – that made it truly unforgettable. I can’t recommend this restaurant highly enough. It was so perfect that I now want to make it our go-to spot for every anniversary from here on out. Chef István Pesti and the entire team; thanks for the lifetime experience!

We recently spent the weekend in Tata and were privileged to enjoy the food at Platán. We were invited as guests and experienced a meal that was unique and first class. The best I have ever eaten. It is easy to see why this restaurant has 2 Michelin Stars ! The waiters and sommelier were outstanding with their service. Every course and detail had been thought out carefully. It was a night to remember. We also enjoyed a delightful meal the following evening under the beautiful sycamore tree. Again the food was delicious. The location, the food, the service - not only one of Hungary’s best restaurants but in my opinion one of Europe’s.

This was my second visit at Platan’s gourmet restaurant. The experience has been extraordinary and phenomenal both times. The food is outstanding as shown by the Michelin stars, but the service is also notable. I’ve never experienced such a good service in any other fine dining restaurant before. There was nothing I asked that stay unanswered, and there professionally laid back style makes the whole experience smooth rather than tense. If there is a way I highly recommend visiting this place. The best experience you can get!
