"“For the food that we eat day-to-day, Haat Bazaar is the best,” says Islam. “We have these dishes called bhortas, which are mashed vegetables, or sometimes dried shrimp or fish, with onions, cilantro, and mustard oil. Haat Bazaar’s eggplant bhorta and aloo, or potato, bhorta, are both really good, and you eat them with white rice.” Fish is another staple of Bengali cuisine, and ilish, or in English, hilsa, is almost like the national dish, says Islam. “Sometimes they’ll fry it or cook it with spices like coriander, cumin, and ginger.”" - Devorah Lev Tov 1
