Boon Or Bane: Restaurant Reservation Deposits

"In a small fine-dining setting where preparation costs are high and nothing from yesterday is served, it requires a HKD500 deposit for dinner reservations and HKD200 for lunch—rather than full pre-payment—calling this a fair arrangement; even losing six guests has a huge impact, and the deposit policy has ensured steady business and eased pressure on the reception desk as guests increasingly recognize that no-shows are unfair." - Michelin Guide Digital-Hong Kong Macau

30 Best Restaurants in Hong Kong

"As one of the largest and busiest malls in Hong Kong, Harbour City seems an unlikely spot for one of Hong Kong’s best restaurants. But walk through HAKU’s curtain and you’re instantly transported to a calm, dimly-lit oasis. A contemporary izakaya (Japanese gastropub) concept from culinary star Hideaki Matsuo, who runs three-Michelin-starred Kashiwaya in Osaka, the Japanese space includes a handful of intimate tables and about 12 coveted seats at the chef’s table on the left. The best way to experience HAKU’s Japanese-inspired cuisine is with the chef’s eight-course tasting menu ($175 per person), which changes with the seasons." - Kate Springer

Presentation was good. Unfortunately we were not impressed by the food. The only dish I found good was the abalone rice. I hardly found strong Japanese influences in the fusion. If I closed my eyes I wouldn't have guessed it's Jap fusion. That being said the dishes are not awful, still tasty, just not memorable or outstanding. Service is not consistent, some staffs pay great attention to details while some don't seem to care.

Lunch set. The place is nice, polite/good service. The ingredients were of high quality, fresh, overall it was tasty but it wasn't wow. Presentation was great on some dishes and not really exciting on others. We've left with mixed feelings. I paid 1.6K for two people, was still hungry and wanted to get a burger the next door after that. The key question - would we come back? Probably not.

Very well executed Japanese food. The executive chef was not there when we visited during lunch but the sous chef did an excellent job managing the culinary team. Reserve a seat at the bar if you want to get a better view of the chefs working their magic. Will definitely try dinner the next time. Very good range of organic tea available. Corkage fee is $500/bottle but it can be waived if you buy a bottle from them.

It’s a cheerful dining experience watching the chefs preparing those detailed dishes. The only drawback was they sold out most of their sake in the wine list, which made me tried their sake paring. That I could try a variety of their wine selection. Staff is super nice and friendly. Food is beautiful and yummy.

Absolutely a joy to discover this place. The tasting menu is brilliant. The portions are small but very tasty and filling. Presentation is wonderful. The waiter and waitress will explain each course to you and what are the ingredients and sauces. A fantastic experience and great for special occasions. It is pricey bit worth it. Service is spot on.

I came here a few months ago, so I’m late in posting a review about this place. This is a popular Japanese creative cuisine located in TST’s Harbor City. It was known for the elaborate presentation of their dishes, although I’m not sure how it is now. The chef is from Argentina, but of Australian decent. He trained at the Michelin-rated Restaurant Kuroki in Japan, and opened this restaurant in Hong Kong. If you’re expecting the refined flavors of authentic Japanese cuisine, you may find yourself a bit disappointed. As you can see, the ingredients are superb and of top quality, but rather than bringing out the true flavors of these ingredients, the focus was more on the presentation, in my opinion. The presentation is definitely eye-catching. But to be honest, the food itself is not up to the same level. This is the sort of place that I’m sure many women will find appealing, so it would be a great date spot! The cost is about 25000HKD per person, just for reference.

Fine dining at Haku, a Japanese fusion restaurant. Very nice ambiance overlooking the harbour, and wonderful morsels that satisfies the palate. The desserts were very good. On the slightly expensive end, but overall worthwhile. Reservation is necessary.

Google
A really nice dining experience. Great ingredients combining with skilled prep resulted in a 2 hours food symphony. While the wine pairing is doing his best it’ll be great if he can spend a little bit more time to study what customers actually wanted - not saying he ain’t good at his job though, the choices presented were all good matches with dishes offered.
