As someone who has visited almost all NYC omakase restaurants with Michelin stars, I was really looking forward to trying Hakuba.
The beginning of the dinner felt incredibly rushed, I was literally putting pieces of apps in my mouth while looking at the drink menu to order my drink. Never in my life I have felt so rushed.
The apps were great, the sous chef did a great job delivering such great and intricate French-Japanese cultures into the dishes. The pastry chef was astounding, never have we had such incredible desserts, I believe these two portions of the meal is what made me have Hakuba 3 stars.
However, when the chef came and began to make his nigiri portion, the meal went downhill. The first piece was salty, so salty and citrusy. I thought it was just one piece like this, but then almost all of the nigiris were the same except a few brushed with soy sauce (those were wayyyy better). Also, the rice was coming out of the fish when picked up, first time ever to experience this as well…
The matcha cheesecake and the bag were cute tho!
