7 Paris Restaurants Added to The MICHELIN Guide

"At Hakuba, Japanese chef Takuya Watanabe, formerly of MICHELIN-Starred Jin, collaborates with Three Star chef Arnaud Donckele of Plénitude (also in the Cheval Blanc and one of Paris’s most exclusive addresses), to create an extraordinary dining experience. Guests enjoy an intimate, moodily lit sushi bar where the chefs’ meticulous preparation, from slicing to plating, takes center stage." - The MICHELIN Guide UK Editorial Team

My partner and I had great time here. It met our expectations of high quality Japanese kaiseki cuisine. The whole team delivered top notch service. A big shout out to sommelier Matisse who created a wonderful pairing for the set. Great sake (even better than their already perfect wine pick). Also want to give a shoutout to Thomas who served our table very well! Btw we really love their desserts and also the gift of the matcha cake :)

We were impressed by a few dishes, such as the iwashi, otoro, and unagi. I thoroughly enjoyed watching the chef prepare the food right in front of us. The ‘Signature Temaki Caviar’ was just okay and not a must-try. However, service here needs improvement; they didn’t refill our tea unless we reminded them to. Overall it was a pleasant dining experience, we would consider revisiting.

A typical kaiseki restaurant with only counter seating. The ambiance is cozy and warm, and the atmosphere is very pleasant. The Yume menu is harmonious from start to finish, with excellent flavor, beautiful presentation, and the highest quality. The accompanying Byakuren option is excellent. Both the wine and sake selections are fantastic and perfectly round off the dining experience. The service is extremely polite, always attentive, and courteous, making you feel completely at ease. Highly recommended.

An absolutely incredible experience with the best Omakase I have had. Everything from the food to the service to the theatre was next level. Great work to team Hakuba!

You don't have to go all the way to Japan to enjoy incredible sushi—this place delivers it right here. It's not just a meal, it's a full-on entertainment experience.

Truly an all time food experience. Among the best kaiseki experiences, and the best meals of my life. The homard bleu may have been one of the single best bites of food I’ve had. Do not miss an opportunity to eat here!

Had a great time at the place, paid the bill in cash (737 euros) and left a 50 euro tip, and in the morning I found out that the restaurant had charged my card the same 737 euros with the wording "We are very sorry that you did not come". Honestly, now I think it would have been better not to come. Nonsense. Give me my money back.
