Houston Chef Ryan Hildebrand Opens New Restaurant in the Texas Hill Country - Eater Austin

"Hildee’s Dine-Inn, a new restaurant by Chef Ryan Hildebrand, will focus on Hill Country and Southern fare. The menu includes dishes such as chicken-fried venison, smoked salmon, confit tomato pie, and grilled halloumi. The restaurant offers dine-in and takeout services, with indoor and outdoor seating along the creek and lawn. It also features a full bar with a global wine list emphasizing Texas bottles. We went for brunch on a Sunday morning. We arrived when they opened. They take reservations even though it wasn’t very busy that morning. The decor is fresh and fun. The food was plated well and looked elevated. Their theme is “Pretty Dang Fancy” and I think that’s a good description. The service…was really slow. They said they had staff out that morning. I would definitely return at some point.

This was our first time visiting, and we came on the recommendation of my brother, who lives in Wimberley. The experience did not disappoint! The service was excellent, and the staff made us feel very welcome. The food was absolutely amazing. I had the redfish, and my wife ordered the Niman Ranch Bavette—both dishes that were flavorful and cooked to perfection. My mom had the scallops, which were beautifully seared and simply outstanding. 👌 The drinks 🍸 were great, too, rounding out a fantastic evening. We’ll definitely be coming back!

Hildee's on the Square is the best restaurant in Wimberley, without a doubt! The artistry of the food and drinks leaves all of your sense captivated! I was unfamiliar with the names of the dishes, but when they came out, the food was familiar, but done unlike anything I have ever experienced before. The staff is friendly and knowledgeable about what they are serving, and the service was top-notch. The atmosphere is comfortably high-end, with private booths, open tables, and an awesome outdoor covered patio. This was a very memorable experience and you can bet that my family will be back! Do yourself a favor and go visit Ryan and the fine folks at Hildee's.

Our waiter, Moses, was kind and very attentive :) •Broiled oysters have an amazing flavor and the herb crust was perfection. •Chive biscuits - I would die for them •Chicken fried Bison best thing on the dinner menu, but I didn’t try the pork chop so I’ll update my review if things change 😉 •Atmosphere was great •Ceviche was fresh and flavorful but I really wish they had house made tortilla chips to pair with it!! •House made crackers are yummy too!

SO good! We had a lovely server named Mystery. She did an excellent job! We shared pork chilaquilas and hot crab dip, and we almost licked the bowls clean, it was so good!

Hildee's Restaurant Review: An Exquisite Culinary Experience Hildee's recently provided me with an unforgettable dining experience, and I highly recommend it to fellow food enthusiasts. From the moment we stepped in, the ambiance was inviting, and the service was impeccable. Our culinary journey began with the red fish, which was cooked to perfection. It was light, flakey, and bursting with flavor. The accompanying sauce complemented the fish beautifully, enhancing its natural taste. Next, we savored their signature Tomato Pie, and it was truly a revelation. The crust was exquisitely crafted - golden, crispy, and flaky. The filling was a medley of fresh, vibrant flavors that danced on the palate. It was an innovative and delicious dish that left us wanting more. To accompany our meal, we indulged in a Hendricks Gin Martini, which was expertly shaken, not stirred. It was the perfect balance of dryness and botanicals, a classic cocktail executed flawlessly. No meal is complete without dessert, and Hildee's did not disappoint. Their dessert selection was a tempting array of sweet treats, each more enticing than the last. We opted for the dessert, and it was the perfect finale for our meal. Overall, Hildee's provided a memorable dining experience. The food was exquisite, the service was attentive, and the ambiance was charming. It's a must-visit for anyone seeking a culinary adventure.

Our first time here and we will be back to try more. Let's start with the things we loved: they offer a NA beer which is hard to find but so awesome for my sober husband, and I had one of the best margaritas ever. His burger was great, my Friday fried chicken was excellent, my biscuit was insanely tasty, and the Hildee bars were a fantastic dessert. The staff we interacted with were consistently kind and accommodating. Oh, and they were playing the football game, lol. Now some areas we didn't love as much, but won't keep us away: we made a reservation but when we arrived, the staff was confused because our reserved table was already taken. I don't point this out because it bothered us, I mention it because it showed they're simply still working out the kinks. We saw this reinforced a few times when a few dishes we tried to order were already sold out. Again, didn't ruin anything, just mentioning. The staff was running around constantly, so they're clearly busy and hard working, but you need to be patient. The only other oddity was that our table was never bussed during the meal, so we ended up shoving our used dishes and glasses to a growing pile on the side. As far as apps, skip the brisket rangoons and queso for some of the other tasty sounding options. My husband said his tots were a bit overdone and my mashed potatoes were a perfect texture and consistency, but extremely bland. That's also when I realized there's no salt or pepper on the table, so we learned we will need to ask for that next time. So all in all, a great meal, a great time, and we'll be back to support this newer restaurant as it grows and surely only gets better!

One of my favorite restaurants in the area. Sooo happy to have them back! Fantastic food…and I mean *fantastic*. Like, I have fantasies about Hildee’s. To-die-for brunch. Always so creative. Friendly staff and great vibes, check and check—especially their outdoor areas. Surrounded by gas lanterns, beautiful landscaping, and you’re right on the square. 11 out of 10. Was here last night and am here again for lunch today. Can’t stop won’t stop
