"Hokkaido is a ramen chain that started in Japan, and somehow made its way to Bellevue—with good reason. On a cold day (because of weather or air-conditioning) at work in your soul-crushing windowless office, a bowl of their miso ramen with perfectly tender pork and a side of pan fried gyoza is exactly what you need. Come for a solo meal or a round of chicken karaage in a booth with some friends." - Aimee Rizzo
"After opening several outlets in Japanese supermarkets in the United States and Canada, Santouka debuted its first free-standing American restaurant in Bellevue in 2014 and later expanded to University Village. This Japanese import serves up several varieties of high-quality tonkotsu ramen, including shoyu, miso, and spicy miso-flavored tonkotsu. But the simple shio (salt) ramen shows off the pork broth best. It’s also the only one that comes with a pickled red plum. The noodles aren’t the true straight type but rather slightly wavy to catch more of the broth with each slurp." - Jay Friedman
"Hokkaido is a ramen chain that started in Japan and somehow made its way to Bellevue—for good reason. And while the city has enough bowls of miso-based ramen to fill Elliott Bay, theirs is the silkiest and richest in town. If you're in Seattle proper, you can also head to the University Village location." - kayla sager riley, aimee rizzo
"This Japanese import in U Village is one of the finest dedicated ramen shops in the Seattle area, with another location in Bellevue to satisfy Eastsiders. Santouka serves only tonkotsu broth, full of creamy, porky flavor due to its extended cooking time. The shio ramen has just the right level of salt seasoning to let the pork flavor of the broth shine, and it’s the only ramen served with pickled plum. For those leery of soup during warm weather, try the tsukemen, which allows diners to dip the thick noodles in a slightly cooler soup on the side, or a delicious, broth-less mazeman." - Jay Friedman
"You need this ramen. Whether you’re hanging out in a booth by yourself or here on a low-key date, order the miso version and a plate of chicken karaage or pork gyoza, and thank yourself for the genius dinner idea. " - aimee rizzo, kayla sager riley, gabe guarente
