To date, we have had three meals at Holman’s Table, and as dedicated food enthusiasts who dine for the sheer pleasure of exceptional food, we approach new restaurants with high expectations. I’ll admit, I had avoided this spot for years, purely because of its unusual location — nestled within St. Paul’s exclusive airfield, affectionately dubbed “Millionaire’s Field” by locals in the know. It’s the discreet landing spot of choice for celebrities and executives who prefer to bypass the crowds when visiting the Twin Cities.
What caught my eye was Holman’s consistently stellar ratings, which are among the highest in St. Paul. Curiosity finally won out, and my wife and I decided to see for ourselves — choosing brunch as our introduction. I assumed the hype was driven by its elite clientele. While that may be partly true, I’m happy to report that the food and service more than justify the reputation.
I started with the Caesar Salad paired with a glass of Vinum Cellars Spring Street Chardonnay. This was not your typical Caesar — it arrived as an entire organic Romaine heart, halved and perfectly dressed with a lightly creamy Caesar dressing, accompanied by two strips of visually striking pecan-smoked bacon and crowned with a sunny-side-up egg. The composition was both playful and sophisticated — and, more importantly, delicious.
My wife opted for the same Chardonnay alongside the Greek Salad — fitting, as she loves her greens. This rendition was bright and fresh, accented with dehydrated chickpeas that added an unexpected crunch. We are already planning our next visit. She will have it again.
For service, we were fortunate to be looked after by Page, who, despite being new, was attentive and eager to ensure we had everything we needed.
Holman’s Table is, quite literally, a hidden gem — only nine miles from our doorstep and mere minutes from downtown St. Paul. I did return to Holman’s in June 2025 and this time they blew my mind. I had the dry aged pork chop. I can still taste it. Arguably the best I’ve ever had. On our list is to return for Happy Hour, it only if that dry aged pork chop is available!
