HUDSON & CHARLES Local Sustainable Grass Fed Meats

The concept is good but they keep selling older pieces of meat that look like they have oxidized and have been sitting in the fridge for too many days. On two separate occasions, I bought beef which I thought looked good but turned out to be foul. Once it was a sirloin that was redish on top but when I opened the package at home the entire bottom was brown. Now, this kind of meat which has ‘turned’ is not bad, it just isn’t freshly cut. It has a smell to it. It means the piece has been sitting out. Another time I saw roast beef on the counter and ordered some, it was bright red and looked delicious. Come to find out they didn’t cut me THAT piece which was ‘newer’ and red, they cut from an older piece that had already turned brown. The older piece was sitting in back of the shelf. I didn’t look at the slicing machine before I paid so I didn’t notice it until I got home. Within 48 hours in my fridge, that roast beef smelled DISGUSTING. We bought enough for a whole week, but after 2 days it went in the garbage. That’s what bothers me about this place, they are conserving the ‘old’ bits and selling them for full value. They sell the old before they sell the new, but all at full price. At a farmers market, a product that is an older and has started to age/turn gets sold at discount. But at this butcher they try to pass it off for full price. If you look at the freezer, they do the same thing with some of the frozen pieces. When you look closely you realize it’s just product they couldn’t sell fresh in time, so they just threw it in the freezer before it went totally bad and slapped a full price sticker on it. Totally unfair. Honestly I really want to support grass fed butchers in this city and I like that Hudson and Charles is working with some ethical farms, but the way they are breaking down the meat and selling it is just not for me. I have not been back and I am now spending my money at Union Square.

Nice neighborhood butcher and sandwich shop. They butcher their own meats and can prep certain dishes for pre-ordering, such as turkeys etc. It also sells vegetables and fruits in season. Overall, a nice place to shop for the folks in the neighborhood

Beautiful, local, bone-out Lamb roast. Used these two seasonings I bought at the shop with an additional but of kosher salt. Into the 275F oven until 125. Yum! Thank you H&C for the expertly boneless and tied roast!

the next time you have a bout of the "meat sweats"--ask yourself: were the animals humanely and locally-raised? and grass-fed and/or pasture-raised? the answer is always "yes and yes" at Hudson & Charles bc they are not just selling things as an intermediary...BUT they are actively involved in knowing what they are selling as well as the sourcing of what they selling...and that makes all the difference which you can taste in the high quality cuts of beef. the small butcher shop sits on Hudson Street. the interior is neatly packed with various items from the meats in the main counter to various produce, dairy, and bottled items. the focus is clearly on meats and meaty items. stopped in here placed a order for fresh cow liver, the order was neatly packaged for pickup when i specified, and the service was friendly. the folks here know meats and it shows. the quality of the liver was AWESOME--cleaned and cut & NOT FROZEN, but fresh. the difference in taste and flavor when i made a pate with it was way above anything i could buy in a normie supermarket. obviously, a much higher quality of meat comes at a higher price and to me...it's worth it especially if you are cooking things like offals. imo, we have become way too disconnected from how basic things we eat come to be and end up on our plates...bc we have become way too over-reliant on factory-farming, gigantic food conglomerates, the mindset of convenience at any cost, the trappings of current modern day life etc. and while the aforementioned gets the "job" done but at what cost to ourselves and everyone else? while butchery is a skilled trade that has existed for the past 1700+ years…it seems to be fading away, but it's reassuring that Hudson & Charles is still fighting the good fight in NYC so some of us can enjoy a better class of protein.

We buy our chicken here every week - love this place and the quality is always excellent!!

This place is so good it's a reason to move to the neighborhood on its own. Not only is meat quality off the charts (especially beef cuts), but prices top out at $45lb for the most pricey cuts - very reasonable for what is above-steakhouse quality in my view. The owners are also super ethical people from their produce sourcing to hiring practices. That deserves recognition on its own.

Favorite butchers in the city with a nicely curated selection of locally made goods as well. Go-to for steaks, marrow bones, bone broth and handmade to-order cuban sandwiches. Everything in the shop is top notch quality.

Visit during the week afternoon time. friendly, but busy workers. This is my favorite meats store in NYC. I highly recommend. They sell rum :) I've attached photos I hope it will help.

I love these guys! They only sell the highest quality products. Most importantly, they are whole animal butchers, from farm-raised animals, where nothing goes to waste. They care about the quality of life of the animals and the livelihood of farmers. The specialty items in the store are also super cool (and delicious), ranging from chocolates to beer and even matzo ball soup.

Unbelievable--I just spent 90 seconds with the rude PIC (person in charge) at Hudson and Charles arguing about whether .62 lbs. equals three-quarters of a pound. Eventually he grudgingly agreed, but after some huffing and puffing two other filets were provided that still did not equal three-quarters of a pound--reason being something about the angle of the meat muscle. This place flat-out sucks. They're comically snotty, as if deigning to sell you their meat. Plenty of great steaks on the Upper West Side. Hudson & Charles is pompous, overpriced, and overrated, and definitely not worth the time and money. I forgot to add--I placed the order for the two filets on Tuesday, for a Friday pick-up. I asked for noon; they said 3 pm. When I showed up after 3 pm the order was still not ready. An excuse was offered but I forgot what it was.

WORST CUSTOMER SERVICE IVE EXPERIENCED IN YEARS. ZERO stars if allowed. I ordered yesterday. The person i spoke with was lovely... I called ahead today at 4:15 to pick up my order after the 2pm time it was ready. I told the nice customer serviced oriented staff person i had my dog with me. I asked if i could pay in advance and have my order handed to me so that my walking her wouldn't be an issue. Mind you- it's an AWFUL winter mix storm today and I wanted to minimize my time outside- so i wanted to walk her while i ran this errand. The staff person said they dont accept CC info on the phone. I said no problem.. I ASKED- could I hand my card to someone while I wait outside with my dog for my order and receipt. This very nice staff person said "sure. No problem. Call when you're outside." Fast forward 15 minutes.. I call. The person that answered the phone was NOT the same friendly person I spoke with before. I gave my name said I was picking up my order. He proceeded to tell me to tie up my French bulldog to step inside their TINY store front to hand them my card to pay for my order. A) French bulldogs get stolen. I'd never "tie her up" and turn my back on her on a NYC street. Or really anywhere for that matter. B) I JUST spoke to someone that said this was fine. C) this store front where he was standing was less than 3 feet from where i was calling on the other side of the glass door. He was looking directly at me while he was telling me this. He could have gotten my card in less time than he took to admonish me for picking up my $160!!!! Order with my dog standing respectfully outside in an ice/wind/snowstorm. Since he would not come to the door to take my CC, I very quickly opened the door while still being able to be outside of this shop and lean in and put my card on the counter. That's how small the place is. Oh! And guess what- he's one of the OWNERS. When he brought my order out- he REITERATED in a somewhat snotty tone- "next time tie up you dog because we are short staffed and this takes up a lot of time from other work." There were 4 ppl in that store- ALL of them behind the counter working there. I've been coming here probably for 7-8 years. It the MOST people I've ever seen working there at one time. AND! There was not a SINGLE CUSTOMER. No one. Completely empty. the customer area is so small if 2-3 ppl are in there it's packed. He went on to state spending the 45 seconds it would take to come get my credit card for my $160!!!! order was too much for his staff because he's understaffed due to the pandemic and they have to get ready to close- which was also 2 hours from when I arrived. I understand it is probably very complicated and time consuming work to clean and break down a butcher shop. HOWEVER- turning off a customer that has been loyally supporting your business THROUGH the pandemic over such a minute small act of customer service, seems very short-sighted. Apparently they are doing SOOO well that they can afford to be rude and inconsiderate to their customers. Not to mention, I called ahead to make sure it was OK. No need to scold your customer TWICE that's paying you once you know that fact. This is a large expense that I allow because I want to consume a quality protein source for health reasons. I do not take it lightly to spend that amount of money on a few items. They are VERY expensive. To behave so poorly to a client that has supported your business through very difficult times on my own end, does not say a lot about this owner's empathic abilities. There are other butchers in the area that are just as expensive and high quality as this one, but with a lot less 'tude. DO NOT SUPPORT THEM. They don't appreciate it.

The meat is good (I'll start with the positives). ... Though I watched the the owner of the restaurant repeatedly touch, cut, and deal with raw meat immediately before touching the cash register, kitchen tools, and my own sandwich bag. After I told the owner that my wife (who was with me at the time) is pregnant and we are more cautious about these safety protocols, the owner continued to act the same way as he was 'behind on the eight ball'. I'm not sure what being behind has to do with safety protocols. That was a horrible excuse. He continued to ask if I wanted a new bag for my sandwhich. I said yes. He did not get me a new bag and I had to ask another staff. I'm not happy with the service here, in relation to health safety protocols.

Absolutely amazing spot with the best quality meat available. Disregard the erroneous reviews - this is one of, if not the, best butchers in NYC.

I don't know who the manager thinks he is but he's downright mean. He routinely mocks, yells at, and belittles the other workers. His voice is so loud it's impossible to ignore.

I recently had my first visit to Hudson & Charles and was beyond disappointed. The staff seemed distracted and uninterested in helping me. I can look past that but what I can't look past is unsanitary business practices. I'm not positive the butcher carving my meat was wearing gloves. When he went to package my meat I could see him picking something off the meat. When I got home there was a long black human hair attached to the meat. When I called the shop to give them a heads up they could not have been more dismissive and truly didn't care. I won't be returning.

$63 for a 5.3lb pork butt...That is an absolutely absurd and flagrant markup. $11.99 per pound for a cut of meat that is typically $3/lb AT MOST. I was absolutely horrified when I was told the price per pound but, like a total clown, paid it anyway. Went to Brooklyn Fare (an overpriced local grocery store) right after and saw the exact cut of meat for $1.79. And then when we got home and opened it, there were TONS of thick pig hairs covering the skin. I know they burn off in the oven but still - all around just so so so unsettling. I guess you have to be a socialite or celebrity to get your meat from the butcher of Barrons and Lords. I'm giving this two stars cause at least the guy who was robbing me was nice.

Best meat I've ever had hands down. Their bacon is to die for ask for it a little thick (believe its butcher cut). I dream about their steaks, chopped meat and bacon! Omg! Any bad reviews here are insane -- sorry. I'm as picky as they get with organic good grass fed meat. Also it's fed grass from start to finish not like some other bogus meats- where 3/4 of the cow's life is grass-fed and then last 1/4 is corn-fed- (this fattens up cow for cash and caramelizes the meat). Thank you for providing quality!

The cuts of pasture raised pasture finished meats are exceptionally the best, I highly recommended trying their meats. I've been subscribing and purchasing pasture raised and pasture finished meats for over 4 years they have the best. But, one or two of the service people are a bit snooty and act like they are doing one a favor by serving one. Apart from the service people the meats are stupendous.

Holy cow - the made-to-order sandwiches at Hudson and Charles are off the charts delicious! Ate the best rueben in my life and shared a classic/combo with the most flavorful roast beef. Seriously good eats here. Now I'd like to address pricing I'm a Pennsylvania farmer who raises pastured poultry recognized for our sustainability efforts (for the record, we only sell in Chester County, PA). The prices here at Hudson and Charles for cuts of pork, beef, and poultry are exceptionally reasonable - there's no NYC markup one usually sees across the board. You're paying for quality and the health of the animal which in turn becomes your own. If you want to eat well and do yourself and the planet good, eat at Hudson and Charles.

It's a meat shop that also makes sandwiches to order! I've been craving a good roast beef, which was served on ciabatta with arugula and horseradish... it also comes with Swiss cheese but I ordered without it (no other cheeses available). Super nice guy making my sandwich! Please go support this local gem, I will definitely be back.

I have been here a few times and am always impressed. They saved my ass last year for thanksgiving when I needed a fresh, not frozen turkey breast the day before Thanksgiving. That is an impossible task but I was able to reserve one by phone for pickup that night. They're meat selection is pretty large with cuts of beef, lamb, pork, chicken, and sausages. They also have a nice selection of accompaniments like fresh horse radish, uncultured butter, sauces and broth.

Sandwiches are incredible - 5 Spice was delicious, on the smaller side but expected for $8. The combo was incredible, buttery rye bread with fresh pastrami and corn beef - off the charts and reasonably priced ($14) for high quality meats. Strong performance all around - I'll be back

WHY DOES THIS RESTAURANT HAVE TO CHARGE 5 DOLLARS FOR A GLASS OF TEA, AND CHARGE ANOTHER 5 DOLLARS FOR THE 2ND GLASS OF TEA FOR TOTAL OF 10 DOLLARS! AND THIS TEA WAS CLOUDY AND BITTER!! My Scotch Egg was ok, my wife's Smash burger was good. HOWEVER, when the check arrived and seeing they charged me 5$ for a single glass of cloudy, bitter, regrettable ice tea is a silly way to profit. Wow 5$ for 4 oz. of mishandled tea poured over ice! To add insult to injury I ordered two glasses of this tea, after walking 12 kilometers for a grand total of 10$. There are way too many places in New York that understand the drink is just as important as the food.

My barbecued beef sandwich cost $15. Divested of its voluminous wrappings, it turned out to be one of the smallest sandwiches I've ever seen, a small-sized half-a-sandwich. Tasted good, though not spectacular. Also, the store is very small, and neither of the servers was wearing a mask. Had I queried this, they would have said, "Masks are no longer required," but in a small indoor venue, with people coming and going, I think mask-wearing would be a good idea.

This place has the best meat. You can really taste that it's very well raised. I love the pork the most, the fat on the pork is very sweet tasting. I also love the beef broth, it's made with grass fed bones and is boiled for three days! It's packed with lots of collagen, I like to add carrots to it to give the broth some sweetness.

I have bought meat at Hudson and Charles many times. Today I went in , a woman was behind the counter. She continued her social conversation before I asked her for help. With attitude and a bunch of eye rolls she then decided to help me . I have always been treated super nice when I go in. Whoever the management is should educate this girl on customer service . Waiting to spend money so u can make your dinner plans is just not okay. Being treated with attitude is also not okay.

holy shit just fried up chicken breasts and thighs on my pan added lots of salt . beautiful pieces of meat boneless with delicious skin on . like a high end michelin star restaurant but cooked by me

Staff members aren't personable , they're kind of rude really moving on a glacier pace. The quality of the food is really good, and the prices are really high as well. It's a hit or miss depending who's at the counter. Good luck.

Amazing food but way over priced across the board. The steak frites is incredibly tasty but $36 is about $10 overpriced for both the meal size and atmosphere. It's nice and well appointed for what it is but you're paying for the cache of organic blah blah blah butcher. I'd never tell someone not to go but for the price it's not worth it for someone looking for value.

Great place to buy Grassfed, free range meat. Knowledgeable staff. They have a big variety of products like bone broth, baguettes etc.

Do not be turned away by the price, or leave a nasty review if you're upset you paid more than a local grocery store. As Hudson & Charles correctly stated below, you are what you eat. I limit my meat and dairy consumption and I am glad I can depend on Hudson & Charles for fair, sustainable, and honest production. That is absolutely not something you can say about grocery srores. Furthermore, the taste is absolutely phenomenal and you can make a 5 star restaurant meal with basic, fresh ingredients and a small amount of their meat. Highly recommend, and this is coming from someone who does not have money to blow freely and was also baffled by the cost initially. The cost associated is what we would pay everywhere if we chose quality over quantity. Writing this as I am open to walk in and buy bacon to cook brunch at home as opposed to $50 brunch in west village or antibiotic full mass produced bacon elsewhere, BTW.

I love Hudson and Charles! We got our turkey for Thanksgiving last year and I'm really happy that we did. It was a big turkey roughly 20lbs but it was well worth it considering they are AWA and I'd rather support these shops than large supermarkets where the animals aren't taken care of with the same care as the farmers that are associated with Hudson and Charles. It's my hope that Hudson and Charles remains in the neighborhood for as long as possible. I will be visiting today for some pork chops to make for dinner, and I'm looking forward to it!

They have good quality meet and other products however it's a real crap shoot what they'll have when you go there. I know I've gotten there mid afternoon and everything I've wanted is sold out (bone broth, chicken breasts, etc) so I called this morning to ask if they had boneless chicken thighs and was put on hold for 6 min . I gave up and walked down thinking of course a high class butcher will have chicken thighs at 11AM. I got there at 11:30, they had basically no chicken except whole ones and wings and legs. I asked if they have thigh. "No" Just "no" I asked will you be getting them in later? "We're waiting for our chicken delivery". I asked "when might that be, " between 1 and 5". All from a sullen employee who clearly found my even asking annoying. Okay I turned to the freezer to pick up some chicken broth. The freezer was empty. This is at 11:30 am of a holiday weekend. They had a ton of clearly phone orders tacked to a wall so they were busy. But being rude or unhelpful to a returning walk-in customer doesn't make me want to come back. Third time in a row they didn't have what I went in for. I'll be taking my business to Schatzies.

Great poultry and beef from transitional ( organic biodynamic) and certified organic farms. The quality is superb. The taste is unequalled. The less expensive cuts are better that the most expensive supermarket cuts. It's important to support these local farmers and the butchers who purchase from them.

So far everything I've tried from this butcher is 5 star. The ground beef, the sausage, the lamb all exceeded my expectations. The staff was professional knowledgeable, and friendly. I found the prices to be consistent with Whole Foods or Fresh Direct *sale prices* yet better quality and service. Highly recommend to anyone.

I went in there with my daughter and ordered a couple of NY strips. The service was not good and the cut of the steak were two different thicknesses. I felt like I was inconveniencing them by being there and did not feel welcome. Also slow service, I know it takes time to cut the steaks and that's not the point. It was the snail pace afterward when he wrapped it up and rang me up. I won't come back, I'll go to Schatzies next time for great service and better meats.

Place is top notch food is amazing! If you don't like the fact they charge 5$ for tea then go outside and drink from the sewer! I rather pay top price for amazing quality meats then pay cheap prices for crap! Keep up the great work best place to go in NYC hands down

Love this place! Best quality ground beef I've found in the city. Better than Whole Foods. Very clean taste to it (absolutely no smell, no weird taste, etc). I pretty much exclusively buy my meat here. I love how knowledgeable they are about their products. They are able to recommend cuts of meat based on the specific criteria that you are looking for as well as ways to cook it. Plus the store is fun because they always have unique/high quality condiments, sauces, yogurts, veggies, health products, etc that seems to constantly change. The store is expensive ($8.00 for lb of ground beef, $40 for 2lbs of flanken short ribs), but I've decided the quality is worth it!

recently I learned something that broke my heart. You can not under any circumstances whatsoever(!) mix and match ingredients on sandwiches. Doesn't matter who was working, doesn't matter if the shops busy or not. This comes from the top down. No substitutions, no exceptions. Even if it's the bread. In fact, you can't even hold the mustard. The man that told me this was serious. And very seriously not at all fucking around when he said it's absolutely impossible. I even offered to pay extra. I even went as far as to be déclassé and offer, in advance a tip. No dice. No subs. If he has to do it for one he'd have to do it for all, and I guess thats just not ever gonna happen here. End of story. Major bummer. Anyway, totally buy your meat here. All jokes aside, great people and they know there shit. Just don't, you know, ask for different bread on a quiet rainy day. P.s. to the dude that was working, Thank you for helping me that day and sorry if you ever have to read this. this isn't personal and I'm sure you're a cool guy. Nothing against you, I know you were just doing your job. But yea, great people, great meat, cool products. will definitely be back.

Great selection of meats - definitely get the ribeye steak and the bolognese sauce

Bravo H&C, keep up the good work.

I just realized that I had not reviewed our fabulous local butcher. Grass fed and finished meats, Farm fresh eggs, butter, cheeses, etc., etc. Great sandwiches. Lucky to have them nearby as we have gone in at least 2ce a week since they opened a few years ago. Friendly, accommodating, knowledgeable service.

Where's the beef?? At Hudson & Charles , great flavor , great friendly staff ,,the boys opened a small little dinette next store !! Can't wait to try it!! Best in town !!

You pay for quality and their meat is cut professionally in front of you. The flavor is amazing for grass-fed meat which can be chewy from other places. I always order from here when I want to impress my friends!!

The quality of the meats here is excellent. The service however leaves a bit to be desired. When you walk into a store where 3 employees are working and there is just one other customer you really don't expect to be ignored (not even greeted) for 5 minutes. I just walked over to Florence Meat market and bought there instead.

Would give a higher score if slightly more accommodating. Quality of products is top notch. My issue is getting ground meat. Growing up in city my parents would go to local butcher and get fresh ground meat to make a tartar or burger. Here when trying to get a leaner but ground they said they don't do custom. Pino and Ottomanelli do it without question. They could learn something from butchers who have been in existence way before I was a kid. Slightly better customer service would move them up. Just because you have a beard and knife doesn't make you a local butcher.
