The best smoked ham hocks I’ve ever used. The flavor and smokiness of these ham hocks took my signature 11 bean stew to the next level. Looking forward to revisiting and trying their other products.

Excellent experience! I bought flavorful, high-quality duck legs from them and really enjoyed looking at their other available products while I was in the shop. You can tell that they take a lot of pride in their work and offer excellent provisions. Looking forward to future visits and trying new things! So glad this isn't too far from me! :)

Incredible selection with extremely knowledge and friendly butchers. Anytime I’ve needed a niche item they’ve had it! All of their sandwiches are delicious and reasonably priced given the quality and that all the meats are made in house. Highly recommend checking them out!

I really love the sandwiches that H&C has on offer and have always found the staff to be very attentive. Their primary function is a butcher shop, so the meats are top quality and they use them in their very creative sandwich menu. I've ordered three of their sandwiches so far (the Classic, the Balboa and the BBQ beef), and they were all excellent. The Balboa (see picture) is basically a Cubano, but made with their own house-made ham and a remoulade, which makes it a bit creamier. If you like hot sandwiches like me, I also recommend the BBQ beef, which is a super flavorful smoked brisket on a brioche bun. I will def be back to try more of the menu.

This is my favorite Butcher shop. Not only is the product extremely fresh, but tastes incredible. Great variety of staples and more unique products as well as fresh produce.

Lovely little butcher shop. I can't speak on the meats because I only ordered sandwiches, but it's clear they take a lot of pride in their work, meats, and the selection of goods they offer in the store. Sandwiches start at 11am for those that are unfamiliar with this place. No substitutions are allowed, which I support because a good sandwich is a good sandwich.

Great sandwiches, excellent meat, lousy attitude. I have been here a bunch of times, but kinda have to steel myself for their way too often cold, almost hostile service. I will continue to go because of their great produce, but geeze guys, could you make it a little less unpleasant?

Kevin is the man! Just left H&C with a growler full of yummy beer, two sammies, and a quart of pork blood. Not only did Kevin take the time to give me a full tour of the shop product line and philosophy, but he was able to answer all my questions with amazing detail. I love that they are a snout to tail butcher because I'm all for using every part of the animal. I ordered pig tails and ears for pickup in a few days and the whole experience was A+ from start to end. The passion and dedication to the craft at H&C are so evident in the staff and the prices are commensurate with the quality. I can't wait to visit again.

Outright refused to make a sandwich on the menu because they had run out of that type of bread, even though they had other bread available. (They obnoxiously told me each sandwich is "designed for a particular flavor profile", like they're serving $350 omakase rather than a roast beef sandwich with arugula and horseradish mustard -- really groundbreaking flavor.) I was hoping I had found my neighborhood deli, but opportunity knocked and nobody was home. EDIT: As you can see from the restaurant's response below, these guys clearly think they're the executive chefs at Le Bernadin.

I started coming here to relive my family steak dinners from when I was a kid now that I live on my own. Is this place expensive? Yes, but it can definitely be worth it depending on what you get. For example, the first time I came in I was recommended to get a sirloin steak which was around $10 for around .5 pounds which I thought was not that bad and it was pretty good when I seared it on my cast iron. Next time, I asked for something a little fattier and was recommended the Bavette steak which was about $20 for about .75 pounds (I probably could've gone slightly smaller) but this was genuinely one of the best steaks I've ever had at home! It was so so good. The rotisserie chicken is also really good here ( especially the breast which is very moist). However, the rotisserie chicken is $30 compared to $10 at fairway which is a bit much for me to justify getting on a young person's budget. The only thing that I got and was disappointed with was the spicy Italian sausage. It just wasn't juicy or fatty enough in my opinion.

I don't buy meat anywhere else in the city. The staff is knowledgeable and kind. Most importantly, they're really into what they do which is reflected in the creative sausages and dried meats. Absolutely fantastic butcher shop. We plan our meals for the week around which cuts look the best. This is a butcher shop that also makes sandwiches. If you're there around early lunch time, I recommend grabbing one. They're really limited so be cool about it.

Every cut of meat is excellent and worth the money. There is a noticeable difference in taste texture and quality of the meat available here, most notably the chicken is the absolute best over the highest quality grocery store chicken. I insist that getting your meat here is worth the money. A++

Hudson and Charles are one of our favorite butcher shops that serve up banging sandwiches. Hands down the best sandwich was the "Combo" made with corned beef, pastrami, mustard, swiss cheese, and sauerkraut on Rye bread! The corned beef and pastrami provide a salty, savory, and slightly smoky taste while the mustard adds a tangy and slightly spicy kick that cuts through the richness of the meats. Even the Swiss cheese adds a nutty and slightly sweet flavor. Every bite had us count our blessings that we are able to eat this any time we want.

Excellent . The best curry chicken salad I have had . It goes fast ! I especially love their pork ribs and chicken breasts ( the chicken goes quick too ) The staff is fun and friendly . The music is a bonus:) It is a tad pricey so a treat for us when we indulge . Very good quality meat .

Just an amazing butcher shop! The steaks are phenomenal, and the people that work there are the nicest people and are super helpful. This is a gem in our neighborhood. The only place I get steaks!

I found out about this place recently and I'm so sad I didn't know about them sooner. I was in need of a giant pork shoulder for a bachelor party dinner with 8 men and I could not find a place that sold the right size. I then called up here (I've bought from them once before) and they were AMAZING PERFECT AND LOVELY! They said they could cut the meat pretty much however big/small & whichever way I needed. They got me my exact desired poundage. Pick up was exactly when I needed. Grabbed some thick cut bacon too which was to die for. Every person I spoke with was so friendly and accommodating and knowledgeable. The food was so delicious. I got Denver steak (per their recommendation) one other time and it was also so good. 5 stars!!!

I wish I could leave no stars today. I will never EVER shop at this store again. There was a line to enter, and given how cold it was outside, I thought it made sense to call inside to see if they had the item I wanted. Made sense to me as a senior. Whoever answered the phone hung up--without a word--on me when I said I was on line. Inside the store when checking out, I politely complained to the cashier about the rude phone call. The idiot responsible launched into a verbally abusive tirade. "We are working our asses off in here for people like you." I interrupted him: "Why couldn't you just say that?" As a loyal customer who shopped at this store at least once or twice a week since their opening, I did not deserve such treatment. The owner owes me an explanation and a personal apology. Was just about the most unprofessional customer service I have received in a local neighborhood store, whose business and survival during the pandemic I contributed to.

Amazing meat selections and delicious sandwiches! My favorite meat is the bone-in pork chop and the hotdogs but everything is fabulous (chicken, steak, etc). Top-notch quality and locally sourced! I think the weekly delivery is on Monday, but if there's a specific cut of meat you want, you can call and reserve it in advance. Our favorite sandwiches are the Combo (pastrami) and the Balboa (ham). Both are hot sandwiches and so, so delicious. FYI - They always have 5 sandwiches on the chalk board (all made fresh), so they don't always have both of these sandwiches available. They also have some good cheeses, potato buns, various meat stocks to cook with and pickles.

Great sandwiches! Worth noting that they're made to order but no substitutions. The meat is top notch, frankly all the ingredients are. They have a nice selection of provisions including condiments, pre-packaged homemade sauces, fresh produce and a curry chicken salad that I'll definitely be back for!

This is just a note to say: I'm sure everyone that follows me thinks I am vegan but I'm not. Also I made my Very First Steak today. Visited Hudson & Charles; it smelled amazing and I wanted to get everything on the counters and fridges (bone broth, ramen broth, bougie kimchi, local ice cream, all the things). I got steak (medallion, aptly). Everyone was so friendly, and it had that bustling Sunday local butcher feeling. I seared the steak. And it was delicious. Perfect. I'm not sure I can take credit. Maybe it's the quality, and it just more than meat expectations. A rare experience to have such a great butcher experience for my first time. High steaks, I say.

The bad reviews on here...give me a break! You can't blame them because you don't know how to cook a steak. Slide into my DMs if you need some tips. They have absolutely beautiful cuts of meat here and are priced appropriately considering the quality, and the fact that's it's a smaller local business. I've had some big fat steaks that I toasted to perfection. Delicious cow. I've also had some beautiful breasts of chicken and pork belly. I also want to commend this place for how they have been operating during the COVID-19 era. They strictly adhere to social distancing guidelines and even have special hours just for seniors. They really care about the neighborhood and we are blessed to have access to their bountiful meats. Also-they have this small batch kombucha in the fridge that is just divine.

My new favorite place. Came here to get sandwiches to take to the Park. PHENOMENAL. It was Rosh Hashanah, and they were crazy busy. When I got in they were almost sold out, I got the last sandwich! Pastrami, corned beef, sauerkraut and mustard on rye, griddled, delicious. The best sandwich I've had in a while. And they do growlers of craft beer. My new go to pre-park picnic spot. They have a customer for life. thank you!!

I was in the area in search of some quality deli meat to accompany the fresh baguette I had just purchased. I generally shy away from butcher shops because of the sickly smell and harsh sounds of blades slicing through bone, muscle tendons, and whatnot. This place had none of that. The staff were super friendly and happy to oblige to any of my sampling needs. Of their notable offerings other than meat: Middle Eastern and asian spices/sauces, rotisserie chicken, hard cider, beef fat/bone broth, and growlers. I went for the roast 'beast' (beef) $16.98/pound and landaff cheese $22.00/pound (as per the butcher's recommendation). Needless to say, I just devoured the best sandwich I have ever eaten. Great meat, reasonable prices, friendly staff. Will be back for sure.

I have been shopping here for about 6 months. I know everyone is entitled to an opinion - but I am truly stunned by the negative reviews! The overall quality of everything I've ever bought has been completely awesome... I am so impressed with the way each butcher handles the meats and also their depth of knowledge in the many cuts of meat they offer. I also think that anyone who comments that the staff are rude and the butchers are unsanitary in handling meats... IS JUST SIMPLY WRONG!!! I am a total germaphobe and have observed the butchers handling meat on a regular basis. Not only Are they very hygienically appropriate when handling meat/ making sandwiches, etc, they are also super skilled at what they do! They are expeditiously and efficiently cutting up whole animals right in front of you! They are super clean and the best butcher-multitaskers I've ever seen in a meat cutting situation! I truly mean it. Aside from being knowledgeable and very clean, the staff are super friendly. They cut your meat "exactly" how you want it and (if asked) will provide tips on how to prepare and cook it. To me, that's an added bonus that you usually wouldn't get at Fairway or Whole Foods meat counters. I recently bought some meat and had a small issue with the quantity/ cut I received. One of the staff members/butchers spoke with me over the phone. He was not only very professional and accommodating, but also quite warm and kind. It was around the holidays and he was clearly busy and working hard, but still took the time to help me resolve the issue and provided helpful tips on storing and cooking the meat in question! I was quite impressed with this excellent customer service. I have also witnessed the staff interacting with other patrons and I see the same professional, kind manner towards others as well!!! I am long winded, but I hope this helps you realize that negative reviews of this place are totally WHACKO... and that is my opinion based purely on my experience and observations of this butcher shop in action!! I obviously Highly recommend Hudson & Charles.

Never seen a butcher shop before with dry-aged ground beef for hamburger patties. Only $15/Lb for this. I come here especially for this as you can't find this anywhere else. I make burgers for days from it! All prices are reasonable for premium product. Any bad reviewers complaining about "rude staff" or the meats probably think canned vienna sausages are fancy.

Once again, the crew at Hudson and Charles does not disappoint. Let me start off by saying, this is the most covid conscious place I've shopped at In the last 8 months. Never have I seen the social distancing rules enforced so diligently and respectfully. It is unsettling watching other local stores just "forget" that we are still in a pandemic. It is clear that Hudson and Charles ranks their customer safety and satisfaction much higher than profiting off of us during this national crisis. Kara and Garth were so knowledgeable and once again instructed me on how to create a new, delicious meal for my family (my kids are getting tired of turkey leftovers). Thank you and please keep up the good work. The upper west side is lucky to have you! You are appreciated !

Meat here is 3x the price at your local grocery store but pretty good quality! Get the classic sandwich on a baguette if your teeth can handle it. Takes a minute to make the sandwich but it shows in the taste. I'd be a loyal regular if the meat was a little cheaper!

This is the kind of place I'd normally want to keep secret so it doesn't get mobbed and ruined by the masses, but I'm starting to worry about its business so here it goes- this place is a gem and one of the best new additions to the Upper West Side in years. It is so much more than a butcher: it's a deli, it sells growlers of beer, high quality dairy products, condiments, cheeses, fresh soup, and everything is fantastic. The meat is great, the beer is great, they make a roast beef sandwich called "The Classic" that is easily one of the best sandwiches I've ever had (roast beef, cheddar, horseradish with arugula on a baguette), it was so good. I'm still thinking about that sandwich. Anyways, give this place your business. It's outstanding. They are a small shop, so they can run out of certain things at times, like if you show up on a Friday night hoping they still have flank steak. So call ahead and they'll make sure to have it for you. Couldn't be happier they're in the neighborhood, they're such a wonderful addition.

I walked in to get two pieces of filet mignon for dinner. A man behind the counter suggested to try more flavorful, more fat content, meat. It was tied up to keep the shape as a log of wood and priced better. I like more fat content in a meat so I bought them for dinner tonight. I was afraid to overcook the meat but it was pretty easy and cooking friendly (ask for the staff what's the best way to cook your choice of meat. That's what I did and came out nicely). On the way out, I notice the fridge full of interesting stuff. I zoomed into one item first, ramen broth, what? I don't have to be a slave in the kitchen for hours anymore? I am definitely coming back to get it very soon. Beside the ramen broth, there were lamb, beef, chicken, or turkey broth as well. I will get the chicken broth when I get sick. Other items I wanted to try were meatloaf and lasagna. They are all Hudson & Charles brand, nice. I like this shop.

It was my first and last time at Hudson and Charles. As I was being served, one of the guy who works there, took some minced raw meat from of a bag he was weighting for someone, with his bear hands, no gloves! He put back the meat in 'the fridge'( with meat he would later serve to someone else), and right after, without washing his hands, went to the cashier to handle someone's money! Do they not know the basic sanitary rules regarding raw meat and bacteria?! It was really disgusting! Won't be back!

Same experience as Rob A. It's a shame as they have fantastic meat, but staff are simply so rude and lazy it's not worth going there, and I love on the same street. Owners, you have a great product but should fire these clowns!

The staff is extremely rude, I will not come again. Disappointed in service. I've been coming here as a customer since start of covid and today was my last visit . The staff could use a seminar in manners and service manners.

Still in the process of setup, the new West Side outpost of the boutique West Village boucherie holds great promise for a neighborhood devoid of same for a number of years.The legendary roast chickens are not yet available so I settled for some roast beef. Fresh meats seemed to be priced about the same as at April​ Bloomfield's shop down the road; Hudson and Charles is friendlier. The four star rating is just a placeholder, once the place hits its stride the larger space will allow it to overcome the space limitation of the downtown original and it will likely merit five stars. I can only speak to the very expensive chicken liver pate I bought here. It was dreadful. Thin and mooshy, almost the consistency of thick ketchup. Sometimes I have a craving for chicken liver, and I was sorely disappointed. I may try some of their meat at some point.

Amazing sandwich! Had the Balboa(?) with baked ham. Got the pork shoulder so I'll see how that goes cooking it.

I went in a couple weeks ago to get 3 steaks to serve for a dinner I planned to make for my wife and father-in-law. I got beautiful 3/4" cuts of Porterhouse. Grilled it on a gas grill, medium-rare. By all appearances, the steaks were grilled to perfection. And then we all sat down thinking we were going to have the most delicious steaks ever. Then we all realized we could barely cut through the meat with sharp steak knives. The meat was so tough and gristly ... not only could we barely cut it, we could barely chew it. We ended up feeding most of it to our dogs. Very disappointing to say the least. I'll stick with Fresh Direct's or Whole Foods' meats.

This is a terrible and dangerous place for the following reasons : 1. the people are awfully rude and have zero intention to accommodate the customers. there was a line outside in the rain and when i asked them from outside if i can give them my order they said no we have a line! and i was in line ! i had my dog with me and i couldn't enter the store. so I I asked them if i could give them my order from the door and give them my credit card to pay. the employee said : " i don't know how to swipe your credit card so I can't take your order". Passive aggressive rude behavior for no reason! especially these difficult days with the coronavirus crisis where we should be nice to each other . i asked the person in line behind me to hold my dog who was kind enough to do it and i entered the store.., 2. i am a doctor and the unsanitary conditions i saw in that store were unbelievable !!! all of them were handling meat, produce , bread , the cashier, plastic bags etc with their bare hands!!! and from one customer to the next, bare hands!!! and no masks !!!! These practices are unacceptable at any given time in any food handling store, but especially these times of the coronavirus crisis these practices are lethal and criminal!!!' they are putting the lives of hundreds of people at risk!!!! if one of the employees in that terrible store has the virus he is transmitting it to dozens of people every day!!!! I of course alerted the City but i am still appalled!! In my work I see people die from this disease almost every day, and seeing these employees in this store basically spreading the virus to the customers shocked me!!! In my opinion this place should be shut down on the spot!! God knows how many people have died of coronavirus because of their criminal negligence !!!!

Probably the freshest and delicious sandwiches I've ever had. I tried both the classic and 5-splice. Both were fantastic I will return again for their cut meats!

Same experience as Rob A and Michael F. There are plenty of great places to buy meat that treat customers with respect. Purchased some pork belly with some black spots, they told me that they don't take meat back but will refund or give me a new piece. Then the owner comes in and is extremely rude, even takes a dig at the way I prefer to cook pork belly (braised with the skin on, it's very common in my culture), then tells me that heat will remove the black spots and refuses to help me out. Turns out It doesn't. While I try to be respectful throughout, with the store being empty at the time, he berates me until I don't feel comfortable and leave. Avoid at all costs.

Awesome vibe and tasty sandwiches, beer and meats but fairly poor customer service. Been there twice in two weeks and walked away disappointed both times. First time took 30 minutes to get service (way too slow). Second time i encountered a bizarre policy around swapping out ingredients on sandwiches. Friendlier staff is a must here.

Great cuts, excellent sandwiches, knowledgeable staff, locally sourced. I recommend the meatball sandwich and anything with pork. Also, bring your growler they have beer on tap.

The website is a waste - the butcher shop is a gem. The shop carries a respectable variety of offal, thoughtfully UNsalted/unseasoned, gelatin rich broth in convenient frozen pints and an unforgettable if elusive mustard fig sausage. 'Nuf said. Well, maybe not enough - the customer service really deserves more than an honorable mention. Thoughtful, informative, utterly approachable - everything one could ask for in a local shop. Schatzie briefly occupied the space - "the difference is HUGE". Not a single creepy, lose my appetite, double entendre t-shirt in the place.

As I walk into this shop, the faint smell of blood transports me to a simpler time, where I am a hunter searching for my next meal on the open prairies. Will I find enough meat to keep me alive or will I become food, myself... Luckily, I don't have to worry about this as I am jolted back to reality as the helpful staff asks me what I would like... I get the meatball sandwich and head back to my cave... ahem... I mean apartment. My one complaint is that it seems more like it should be called Hudson and West 10th St given it's closer proximity to w 10th as to Charles... kind of seems like false advertising to me... But I guess the meat and food more than make up for the lack of truthfulness in their geographic location so I still gave the 5 stars.

Stopped in after a visit down to the new Whitney and a tasty stopover at the gansevoort market (both to be reviewed sep) after reading a number of positive comments. Summary: VERY good steak cooked up at home. Will definitely stop into this butcher shop again to not only sample other meats (they go grass fed and dry age on their own facility) but to also try sampling the broths and prepared foods. Saw a number of interesting and unique cuts and after consultation with the friendly staff, took home over a pound each of the Denver steak and the more traditional Strip. Wasn't familiar with the Denver but learned its from the chuck and also known as the underblade steak. Had some decent marbling, pricing was reasonable, but most importantly it got a strong endorsement and am happy to share that it was a tasty steak that I will be looking out for in the future. As a fyi, for my small dinner event, went pan seared with drizzle of olive oil, half tblsp of butter and a simple salt, pepper and garlic powder seasoning and served it rare.
