Excellent selection of cooked and ready to cook sausages at fair prices. We got the following variety of cooked sausages: Smoked Andouille- very salty, Texalina Smoked- excellent, Smoked Beer Bratwurst- excellent, Jackalope (Pork Antelope Rabbit Smoked)- excellent, Duck Pork Smoked- excellent, Beef Jalapeno- extremely salty and bitter(due to dehydrated jalapeno?), Wild Boar- excellent, Venison Pork- excellent. In general, the sausages are very lean and high quality. The guy behind the counter was very friendly and helpful. [I diced up the bitter salty Beef Jalapeno sausage in homemade marinara sauce and simmered it for a 15 minutes, then poured it over penne pasta. It was very good and no longer bitter or salty.] Stocking up on sausages at Hudson's is a must when in Austin!

I'm glad they started selling elsewhere so I can get my country friends some solid sausage when they come into town. You'd get a lot more local business if your counter lady went to work somewhere more fitting for that personality like a DMV or something lol.

After a 20 year gap my husband went deer hunting. I wasn't thrilled about having a freezer full of deer meat (I eat red meat less frequently), but wow! Hands down, Hudson Meat knows how to season! I have eaten the link sausage, pan sausage, and summer sausage and love it all. Thank you Hudson Meat!

Best meat processing in Texas probably the whole country. I've had almost everything on their menu and have never been ever been let down. Every cut is beyond delicious. I drop off a few deer each year. Packaging is supreme. And the most friendliest staff you could ever imagine.. they make you feel like family. Don't waste your time processing any game anywhere else. This year I dropped off two deer (about a month apart) and got a phone call this morning that one was ready and I really hated to ask if I could wait for the other deer to be processed and make one pick up and they kindly excepted my request. That's customer service! Cheers!

Stopped by to grab some venison early Friday morning, 11/10/23. Store was neat and there were alot of options in the cooler. But, from the moment I approached the counter, it was evident that the counter lady had no interest in providing a positive customer experience. There was no warm greeting or even a simple acknowledgment of my presence. It felt as if I was an inconvenience to them, interrupting their day. When I inquired about purchasing a smaller quantity of elk jerky, the service person seemed visibly annoyed. Instead of offering any assistance or suggesting alternatives. Their dismissive attitude and lack of willingness to accommodate a customer's preferences were extremely off-putting. Customer service is a fundamental aspect of any business, and it's disheartening to see such a blatant disregard for it at Hudson's. It's not unreasonable to expect basic courtesy and a willingness to meet customers' needs, even if their requests differ from the norm...which it wasn't. I left the store feeling frustrated and disappointed, not only because of the service I received. I had been looking forward to supporting a local meat processor, but this experience has left a sour taste in my mouth.

The barbecue at this place is fantastic. I just devoured a plate of ribs and brisket with potato salad and beans and it was great. The one thing I appreciate is that they don't just slather things in white sugar like other places do the sauce is Tangy but delicious the ribs are cooked to Perfection you could tell the brisket cooked for a very long time. They really care about the quality of their meats either cooked or uncooked and they have a great selection in the store as well. Five Stars, would highly recommend. I wish I could take a photo but I ate it so fast there's nothing left to film.

**** reply.... Get your youth dates straight first. Last day of youth was January 21st and we dropped it off on January 21st the same day it was harvested. The account is in my husbands name that's why you can't find me. Thank you for the offer to make it right but I'm going to pass. *** also it took over 7 weeks to get back. We've had a few deer processed there over the years and I can say this last one we dropped off in January for youth season was disgusting. The flavor was off, the jerky was gross, the backstrap tasted rank. I won't eat it or give to family and friends. Last time we bring our deer there.

My visit to Hudson Meat Market left me with mixed feelings. While the meat selection was good, the service fell short. We wanted to ask questions about the meats, but the checkout person seemed uninterested in discussing them. Considering the price and the origin of the meat, I expected a more engaging experience. Although the meat itself wasn't bad, for premium-priced, grass-fed meats, I'd opt for Whole Foods for a better overall experience.

used to be one of the best places to get a deer processed. Not anymore. price vs. what you get back are insane. I had some deer jerky made this year and it's the worst jerky I have ever had. zero flavor on the regular. To be fair I will say the hot was ok but definitely not hot. it at least had flavor. The jalapeño and cheese chop steak is still great but thats about it. I had a pig processed into sausage and its not good either. I used to love and recommend this place all the time but I can't recommend to anyone anymore (unless they only want chopped steak). There are better places for less price and ultimately a better product.

I had the unfortunate opportunity of stopping at Griffith's Taxidermy in Burnet, Tx and was sent off with a bad taste in my mouth, never again. I found Hudson's and they were happy to have my business and over the top easy to deal with. Great customer service, prices and helpful. Don't stop anywhere else! They even sent me home with a bone for my dog, that she has been caring around for 2 days. They have a life time customer and all it took was being polite, kind and respectful. Go figure.

You could not even remember what piece of meat we were discussing in the very same emails you replied to. I was not rude to anyone in your store in the least. I asked you if I could decline the sale and have my deposit refunded, which you did, but now you have a dog-ate-my-homework excuse replete with fabrications. You can buy a long established business but that does not mean that you will run it like the previous owner did. Obviously, I made the right choice in asking for the refund.

Dropped off a smallish hog for processing. The butcher who took it in said, "I hate wild hogs." Then, when he opened the cooler, he expressed surprise that the meat was clean and had been cared for properly. I requested that they leave the major bones in but they boned everything. Now I have 20 pounds of miscellaneous lumps of pork in my freezer. Probably not going back.

Marble Falls Location: We have brought in two hogs for processing so far. One was my father-in-law's and they did an awesome job, the sausage tasted great! The other was a hog my younger sister shot. We got a call from them saying there was an issue with the hog- I was bummed but curious since I didn't remember seeing anything really wrong when I skinned and quartered it. They explained how the backstraps were 1/4th the size they should have been and other large muscles had clearly atrophied- there were also some small odd growths in the body cavity. Two things here: 1. They could have easily just shrugged it off and processed it since we were getting mostly sausage but instead they called and explained everything. The guy on the phone said he had actually looked up what could have caused this. I was really impressed because it shows a level of professionalism that is hard to come by these days. 2. It also tells me that they are clearly knowledgeable about the anatomy and what they are doing because I missed it. Thinking back I remember there was a strange tumor like growth on it's underside but since it's a wild hog I didn't think to much about it and just kept cutting away. I didn't pay attention to the inside cavity once I pulled out the guts either. I look back at one of the photos I took and think dang, yea there is almost no shoulder muscle but again I wasn't putting any of this together at the time. Thankfully they did notice these things and let us know that something was wrong. It's too bad we won't have this hog but I cant wait to bring them the next one because I know it will be in good hands! Thank you guys so much!

I grew up in South Dakota eating a lot of venison as we were always deer hunting and had freezers full of meat. Now that I'm a fancy city boy in Texas I find it challenging to find venison in the form of jerky and meat sticks and steaks. This is a great place to pop in and load up once in a while!

Came in to check out the selection earlier today, had a great selection of meats not seasoned and unseasoned which all looked fantastic and very affordable! Picked up a 1lb pack of beef brisket burgers and 1lb of chorizo. Cooked the burger and it came out amazing! Nice flavor, good textured meat. They even had deer antlers for a great price for the dogs! Can't wait to try out the chorizo and other meats next time around.

I would usually give this place 4 or 5 stars. We've been taking our deer meat there the last few years and come out with quality meats. However, when I dropped my meat off there today, the guy unloading the ice chests was smoking. SMOKING! While working! And the one deboning meats was smoking, too! While working! Really?? What happened to breaks? I will strongly consider taking our deer elsewhere in the future. It just appeared trashy and disgusting.

I took 20 lbs. of venison to them to make gasrlic and jalapeno/cheddar sausage. They were friendly, efficient, and very helpful in helping me unload and select the sausage. My order was ready in a month, which in January, the end of deer season, is fast! Best venison sausage I've ever had. Great flavor, appearance, and professionally packaged. When I went inside to pay, the shop smelled fantastic! Large selection of meat, sausage, and various types of jerky. These guy's are great, and I can easily see why they enjoy their stellar reputation.

I just had a great experience at Hudson. The staff were very friendly and willing to help me with an issue that could have been ignored or brushed off. They did not dismiss my request and instead worked to resolve the issue at hand. I am thankful for their consideration and time spent to help me out. In addition, I learned that the new owner is someone I've had prior experience with by being a customer at his former food establishments. I trust my meat is in good hands.

Texas jerky review: good spice and texture from hudson's. Venison and Beef options. The jerky isn't cheap, but they have good deals on other sausages and meats. I also get my deer processed here. They will guarantee your meat back for the nice cuts/steaks, but the chili/hamburger can be anyone's meat - which is the only downside here. That being said, the chili processing fee is SUPER cheap and real good. Really cool that we have a meat shop in the middle of the city.

Hudsons venison sausage, brats, Italian sausage are all really good. Have used Hudsons for years and have always been pleased. That is until they gave us deer bones for our dogs. DO NOT give these bones to your dogs!! These bones splinter and shatter, which they did with my golden. $500 in vet bills later, and 8 days of cleaning up uncontrollable vomit & diarrhea, the shards of deer bones scraped and perforated my dogs small intestines, large intestines and colon causing a severe infection and awful case of colitis. Get Hudson's sausage, but tell them they can throw the deer bones in the trash!!!

There's the old saying that people love sausage but don't want to see it made. I'd double that by saying that I love venison but don't want to kill a deer. That is why I love that Hudson's has a retail section that sells venison jalapeno sausage. It's rather tasty and will surely impress your friends, foodie or otherwise. Love the pic and if you're squeamish, don't walk in the alley behind Hudson's during hunting season.

This is a little gem in our neighborhood. I buy specialty meats there often and although the selection is limited (not surprising considering its 2 coolers in a small room), what they do sell (boar and venison sausage, steaks, jerk, chorizo) is high quality and incredibly delicious. I'd be pretty upset if they ever disappeared.

This place has been around for decades and has been an Austin favorite for many of those years. The "new" owners are destroying the reputation of this business. I've had axis backstrap stolen from me twice since the "new" owners have taken over. The first time I assumed it was a random mistake, but when it happened again the very next time I went there, I knew this was no mistake. This was calculated theft. When I brought it up to management they couldn't have cared less about my complaints. They showed zero concern and told me I must not have dropped it off and it's not their problem. I will never use this business again.

This is just an update in regards to the horrible customer service. My review is just that, a review from a customer with a background in hunting and an education in agriculture. I would say I'm someone who knows a tad bit more about deer and meat processing than your average consumer. That being said, it's obvious that the owner is more interested in defending his 'business' than actually providing an excellent product and excellent customer service. Rather than addressing the issues we had, he chose to attempt to 'educate' me and ignore the statements I made regarding this joke of a company. In regards to the gamey flavor of the pre-packaged meat they are selling. Why on earth would you sell a product that is so gamey it is inedible? I know that some gaminess can be expected from WILD GAME, I'm not an idiot. However, I also KNOW for a fact that improperly handled meat WILL have a a gamier taste. If you take a deer into the processor immediately after shooting it, it will have a completely different flavor from a deer that has been placed in an ice chest for several days with the drain plug open to purge some of the blood from it. That's common knowledge and something that a processor should know. The processor we've been using for years knows this and the pre-packaged venison they sell has a flavor comparable to lean beef... It's a similar concept to aging beef - eating a steak right off of the cow will taste completely different than one that has aged for weeks........ If you don't give a price when the meat is dropped off, I'd love to know where the price I was given came from. Your so focused on 'explaining' your shady business practices that you completely overlooked the fact that I WAS GIVEN A PRICE AND TOLD IT WOULD BE LESS! Additionally, trying to write off my concerns by saying that my bill was cheaper than most just shows HOW LITTLE YOU ACTUALLY CARE FOR YOUR CUSTOMERS. I was told the deer would be a certain price OR LESS and that was not honored. Rather than addressing the fact that I WAS LIED TO, it apparently seemed appropriate and acceptable to say that I should be thankful for the price, regardless of being misled? I sincerely hope your customers realize they aren't getting a deal for $200. I can drop off my deer in San Antonio, get standard processing (which includes stew meat and steaks, unlike this place), add snack sticks, dried sausage, jerky and salami and still come out far less than $200. The excuses they use in an attempt to pacify their customers have done nothing but shed light on the fact that they only thing they really care about it the almighty dollar. We brought up our concerns TWICE with employees, both in person and over the phone and both times we were blown off. I brought my concerns to light, the problem was no one cared.... I'll save my money and the hassle and deal with another company next time. One that appreciates the business of their customers and understands the value of excellent customer service.

By far the best meat processing around. My son, Brooklyn, and I have been to many different places to process our meats. None have lived up to the standards of cleanliness, taste and flavor, or professionalism as this place. They have gotten 10 Years is it business and will continue to get it.

I love that you can pick up venison and boar meat here. Yes, it's farm raised, but it's lean and really good for you, not to mention oh so tasty. If you've never tried either, you owe it to yourself to stop by and pick some up.

Hudson Meats is a mixed bag for me. By far they have the best tasting processed venison. The deer sausage, and the buck sticks have the best seasoning mix I've ever had. My BIG issue with them is that if I drop of a deer to be processed I DO NOT GET MY DEER BACK. It all goes in the hopper and I get back equal poundage. I have no idea how other hunters have kept their deer prior to dropping it off. Plus I like the idea of taking the deer off of the land and consuming that deer. If this doesn't bother you then Hudson Meats is for you.

Oh, my yesterday 12/31/16 I went to the market up front and parked, purchased some jerky which the samples were great. Talked with the younger cashier that I have lived in this neighborhood 25 years and worked with the South Congress Coalition to make South Congress better in businesses, safety and thankfully it is! I went over to the market by Vespia to help my nephew's girlfriend load up around 4:30. I come back and after 40 minutes and my car is gone. I walked in asking about my car. They said "we towed it because you have to be a customer" I said I was and have been through the decades I was just helping my friend. RUDENESS beyond words I had tears and asked can you help me. "No remove yourself from the store" I did but I walked back because I wanted a refund of my purchase sadly no they would not do it and said get out of here! All now younger people~not a problem but my nephews girlfriend being 34 walked in to ask for my purchase refund saying "oh my they are not going to do anything and their rudeness I could not even ask for a refund" it even brought sadness to her. My nephew came to pick me up to the tow yard and it cost me 245.00 could have been 270 but promptly I got a ride. So very sad for this business to not be real! I gave the jerky to a homeless man on the way home.

I have to admit, I love venison. And I was excited when I found out that someone sold venison meat in Austin, so I went to Hudson's. I have to say, I was a little disappointed. Their selection was a little small, they were a little pricey (even for venison) and the meat wasn't really tasty. I mean, it wasn't bad but to be honest maybe my expectations were a little too high.
