Ibaya

"The gastronomic restaurant at the Sport Hotel Hermitage (which also boasts other dining options) is overseen by chef Francis Paniego, a leading reference in Spanish cooking whose brilliance is also on display at his El Portal de Echaurren restaurant in Ezcaray. The cuisine here is based around two creative tasting menus: Memory, combining contemporary recipes with his most successful dishes from different seasons; and A Walk through Andorra, showcasing Andorran cuisine and its flavours via ingredients such as horse meat, trout, typical local sausages such as “girella” and “donja”, and “trinxat”, a dish made with potatoes, cabbage and bacon. Don’t be surprised, however, to see a few nods to French and Portuguese cooking. The experience starts in the reception area with a few insights into the chef, continues with appetisers (both in the “Chester” sofa space, and the kitchen) and concludes in the dining room. Each plate is accompanied by a diptych explaining the provenance of ingredients and their preparation." - Michelin Inspector

Last year we visited Ibaya and the impression of the experience was just flawless, with that in mind we invited our friend to share the experience together this year and it was nothing but a disappointment. The menu got quite poor, less fish, less meat and some of the courses though were good enough to be a tad memorable, like caviar with Maresme Peas, but last year’s version was much more exquisite. The pigeon’s foot and rabbit’s ear killed the vibe and left an unpleasant feeling of disgust. All the desserts were the same as the last year’s versions-still extremely sugary and sweet leaving a strong desire to brush the teeth.

I'll keep it nice and short: it was perfection. 1. The food was inventive and exquisite. Some of the original ideas just felt brilliant (unlike some restaurants where originality feels convoluted, forced and awkward). Portions are perfectly sized. Desserts are inventive, beautiful and light. 2. The service is exactly how I like it. Professional, very attentive, elegant yet relaxed, full of humour and multilingual (which is important in our multilingual family). 3. The atmosphere is elegant and subtle. Perfection by my standards.

We had the 11 courses meal and only about 3 courses were good. Some dishes were simply inedible, the pigeon was salty to an unbearable amount, the chicken liver had a bad after taste and one of the desserts was also badly flavored. The cotton candy dessert was great and the wine was also great. The presentation was wonderful but the taste was sub-par.

I don’t understand some of the negative reviews. We thoroughly enjoyed the dinner and found the courses (about 20!) very creative, especially when taking into accout how remote Andorra is and how its geography and climate can really limit fresh food options for chefs. The choices for wine by the glass were also delicious. The service was impeccable from the servers and sommelier, from greeting until departure. The pace was perfect. I have probably eaten at 100 or so Michellin-star restaurants, and Ibaya definitely deserve its star (not that this alone makes Ibaya a great restaurant; it has earned my admiration well beyond this subjective rating). We will definitely be returning after a great experience at the restaurant.

You get a card with every plate explaining the story of the food! And at the end you get to keep the collection of your cards as a souvenir. This is a nice touch that definitely adds to the experience. However only 4 of the 11 course were exceptional… hence the 4*

My partner and I came here as Koy was fully booked and we are so happy it ended up this way! Everything about our experience was perfect, from the initial greeting to the presentation of the menu and the food itself. We opted for the long menu - a journey through Andorra, €170pp - and we loved the variety of the food served and the story that accompanied each dish. Even though it was described as a long menu we were surprised at how much food was presented; we definitely didn’t go home hungry. Some dishes were stronger than others as some other reviews mention, but I appreciated the thoughtfulness behind the menu and could understand why each dish was chosen. The presentation was novel, such as having appetisers and main courses in separate areas, placing the ingredients on the table in-between courses, as well as the “palette” of cards that described the story of the food. One memorable example would be the transformation of the candle on the table into butter for the “bread moment” segment, and that was only one of the many dishes. It’s definitely a must visit if you are in the area and is deserving of the Michelin star. I would like to commend all of the staff, from the gentleman they initially greeted us (whose name I did not catch), to the waiters and the cooks but especially our sommelier Raquel. Her delightful personality and friendly service really left us with a positive impression, which didn’t go unnoticed. The white wine pairing of “Imagine 2019” from Andorra was perfect for the meal, but there was an extensive wine menu. We will definitely come back if we come back Andorra - thanks again to all of the team for an unforgettable night 😊

We took the 11 course menu and it did not fulfill its expectations. Nothing special, some dishes were not even tasty. Service is great but food is lacking
