"Sydney’s tonkotsu obsession started around the turn of the 21st century, when Ryosuke Horii began selling pork-rich ramen at Ryo’s Noodles in Crows Nest. Now, many variations are available city-wide, but Iiko Mazesoba is the only business dedicated to this soup-free style of ramen. Co-owner (and Sydney Ramen Festival co-founder) Michelle Widjaja studied noodle-crafting in Osaka, Japan, and she maximizes each mazesoba bowl with umami-heavy ingredients and condiments: The vegan flavor features soy mushrooms, roasted tomatoes, and house-made garlic oil, while the once-secret spicy chicken curry karaage is now a menu hit. There are extra bottles of chile oil and kombu vinegar to squiggle over the noodle strands as well. I have been here many times before, and it is high time that I drop a review for this place. It is my go-to for brothless ramen, and here are my highlights for this eatery: - It is located at an extremely convenient location. Very close to the Haymarket light rail stops and not a far walk from Central station. - Service is consistently top-notch. Very friendly staff who are attentive and patient. - My favourite go-to is the original mazesoba. Even though it is brothless, it is still packed with flavour. With it being delish, I wish there was a larger portion. - Love the small portion of free rice that soaks up the leftover sauce at the end when the noodles have been eaten. I personally like leaving too a bit of meat to complement the rice. - There is indoor and outdoor seating. It can get quite windy or cold with outdoor seating. During the colder months, they will have heaters outside and for anyone who is queuing. - They accept bookings in advance and walk-ins. - During the winter and truffle season, they serve beautiful mazesobas with truffles. I always look forward to them. All in all, it was a very solid 4 towards 5 for me. I am always happy to come back here for a good meal. Oh, and they have a promotion on their merchandise where if one dines here, the merch can be purchased with a 50% discount.

First time eating here and we will come back. I had the original which I thought was pretty good. We also had the karaage mazesoba which was ok but the original was better. The serving sizes were generous for the price

Ilko Mazasoba. Amazing. What can I say, probably my new favourite Japanese noodle restaurant. Dry ramen noodles. Tried the Unagi, the truffle duck, and XO Pork. All were spectacular. You won’t be disappointed. Service is a little hit miss but food is awesome.

Decided to go with a mate have a quick dinner before heading to the vivid show. Prior comming to the place heard a lot of good things from friends and work colleague for this soba place. However after having it my thought only one word can describe disappointed. Firstly we order one orginal and one classic pork so a one is DanDan. Let’s start with the positive side we’ll noddle is home made is quite firm and that’s about it. The main problem is the portion is very small for a 17 dollar bow. Mince pork no flavour at all. Basically think of firm ramen with very less soup. The chilli like and ginger they ask you to put on basically taste like grocery premade chilli oil. As for a foodie, I highly recommend they can be a bit more concise with the portion size and not charging additional 4 dollar for a very thin slice of pork. Not sure how this can be a 4.6 google rate resturant. But personally will never come again and will not recommend. If you are close by stop by a quick lunch is ok but traveling to the shop well a big no.

I nipped down for a quick lunch and had the absolute pleasure of being served by the excellent Jacob. He was amazing. He filled my water several times and spoke with a good understanding of the menu and its ingredients. What was just lovely food was made even more special by Jacob. Someone give this man a raise and a commendation. Ps - glad they had vegan options.

We ordered the spicy tuna and the truffle wagyu. Both were very good and would highly recommend getting these dishes. The spicy tuna was a cold dish whilst the truffle wagyu was a warmer one. The texture of the noodles is perfect! Would definitely come back. They were also very accomodating with a baby - I like that they have high chairs with a trays. Not many restaurants have that so that definitely made it easier.

I always love coming here! Discovered this place on a visit to Sydney several years ago and now I try to come back at least once every time I'm in Sydney. Still desperately hoping they open a branch in Melbourne one day. Food is amazing, staff are friendly and welcoming, atmosphere is great too. Have never disappointed in any of my visits and friends and family I've taken here also really love it.

This was our first time trying the soup less ramen and it was delicious. Indoor seating looked a little tight so our group of five sat outside. The staff turned on the propane heaters so that helped keep us warm during this fall weather. Instead of soup, our bowls were served with sauce placed at the bottom and then we mixed it with all the dry ingredients. I tried the spicy tuna version which was cold and unique for a ramen but somewhat like a poke bowl. It turned out to be quite good and not as much splatter from slurping noodles this way. The family also tried the unagi, duck and XO piggy (pork) and all liked their mazesobas. Service was very good with the staff regularly checking in on us. Will look for a similar style once back in the US.
