"Sydney’s interest in tonkotsu started around the turn of the 21st century, when Ryosuke Horii began selling pork-rich ramen at Ryo’s Noodles in Crows Nest. Now, many variations are available city-wide, but Iiko Mazesoba was Sydney’s first outlet dedicated to the soup-free mazesoba style. Co-owner (and Sydney Ramen Festival co-founder) Michelle Widjaja studied noodle-crafting in Osaka, Japan, and she maximizes each bowl with umami-heavy ingredients and condiments: The vegan flavor features soy mushrooms, roasted tomatoes, and house-made garlic oil, while the once-secret spicy chicken curry karaage is now a menu hit. There are extra bottles of chile oil and kombu vinegar to squiggle over the noodle strands as well. Know before you go: Widjaja continually tweaks the menu, adding tsukemen (chilled ramen) that evokes avocado toast, for instance, or prosperity mazesoba for Lunar New Year." - Lee Tran Lam

Absolutely loved the food here, the soba was so flavourful, my fiancé and I have walked past this over a year ago, but never went everytime we were in Sydney (too many food options). But an old video of Youtuber Mike Chen trying the food here, made us really want to go, and we're glad we did. We'll definitely be back sometime, and the staff are all very nice too. Highly recommend.

I absolutely love this place! I'm a huge fan of the thick noodles, that are extra chewy and flavoursome, along with the delicious toppings. My recommendation is the Zenbu Mazesoba with spicy pork, and definitely ask for rice at the end to mop up the remaining sauce.

A really good spot for Japanese comfort food. Solid dishes across the menu, with plenty of flavour and good value. Had the pork mince dish. Casual environment makes it an easy place to catch up with friends or for a quick, relaxed meal.

Only had the pleasure of eating here twice so far, but both times were great experiences. The food, service, location and atmosphere make the place what it is. Also got to see the noodles being made in house. Highly recommend. Great place.

Absolutely amazing. The mazesoba is packed with flavour and very bouncy. We had the spicy fresh tuna mazesoba, the duck truffle mazesoba and ebi croquettes. Portion of the dish is very generous with reasonable price. Will definitely come back for other dishes. Highly recommend!!!

I have been here many times before, and it is high time that I drop a review for this place. It is my go-to for brothless ramen, and here are my highlights for this eatery: - It is located at an extremely convenient location. Very close to the Haymarket light rail stops and not a far walk from Central station. - Service is consistently top-notch. Very friendly staff who are attentive and patient. - My favourite go-to is the original mazesoba. Even though it is brothless, it is still packed with flavour. With it being delish, I wish there was a larger portion. - Love the small portion of free rice that soaks up the leftover sauce at the end when the noodles have been eaten. I personally like leaving too a bit of meat to complement the rice. - There is indoor and outdoor seating. It can get quite windy or cold with outdoor seating. During the colder months, they will have heaters outside and for anyone who is queuing. - They accept bookings in advance and walk-ins. - During the winter and truffle season, they serve beautiful mazesobas with truffles. I always look forward to them. All in all, it was a very solid 4 towards 5 for me. I am always happy to come back here for a good meal. Oh, and they have a promotion on their merchandise where if one dines here, the merch can be purchased with a 50% discount.

First time eating here and we will come back. I had the original which I thought was pretty good. We also had the karaage mazesoba which was ok but the original was better. The serving sizes were generous for the price

Ilko Mazasoba. Amazing. What can I say, probably my new favourite Japanese noodle restaurant. Dry ramen noodles. Tried the Unagi, the truffle duck, and XO Pork. All were spectacular. You won’t be disappointed. Service is a little hit miss but food is awesome.

This was our first time trying the soup less ramen and it was delicious. Indoor seating looked a little tight so our group of five sat outside. The staff turned on the propane heaters so that helped keep us warm during this fall weather. Instead of soup, our bowls were served with sauce placed at the bottom and then we mixed it with all the dry ingredients. I tried the spicy tuna version which was cold and unique for a ramen but somewhat like a poke bowl. It turned out to be quite good and not as much splatter from slurping noodles this way. The family also tried the unagi, duck and XO piggy (pork) and all liked their mazesobas. Service was very good with the staff regularly checking in on us. Will look for a similar style once back in the US.
