Visited Indeblue over the summer with a friend for dinner, and we had a nice time! Indeblue is not too far from the city (~25 min drive), and despite being some construction around the strip mall where the restaurant was, it was easy to get to with plentiful parking. We opted to sit outside, so I can't speak to the interior of the restaurant, but I was pleased with the amount of outdoor seating they offered (and was pleased with the built in fans, too). I didn't realize it was BYOB, so unfortunately, we were sub-optimally prepared, but no big deal! Our server was attentive enough without being over bearing, and they provided insight when we posed questions about menu options. They were also incredibly attentive to the water situation, which was much appreciated given the heat!
For food, my friend and I wound up splitting a few different menu items. We share the spinach chaat, roasted beet salad, kaju paneer matar, and the kashmiri. I appreciated the vast menu, and the separation of the vegetarian and non-veg entrees and other dishes made for easy navigation. The standouts were the chaat (nicely crispy with fresh tomatoes, making a unique bite) and the kashmiri (unexpected sweet and savory tastes, but I loved the inclusion of the pistachio). I typically love a beet salad, but the flavors fell flat on this one - I think I was expecting an Indian twist, but that was lacking. The paneer was good too, but I found the proportion of sauce to paneer to be a bit overwhelming. The accompanying rice was OK, but a little dry in my opinion. My meal was solid, but I wish all the dishes I got hit the same way rather than the somewhat discrepant vibes I got.
I will say that the portions were quite generous (I took home a lot of leftovers), and the prices were reasonable. There are a ton of options for all taste preferences, so this is a good spot for a group. With as large as a menu as Indeblue offers, I'm sure it's hard to hit the mark on every dish, so I would certainly love to revisit and try other menu items (and bring a bottle of wine). Looking forward to a return visit!
