The 26 Best Restaurants in Panama City | Eater

"Intimo, led by chef Carlos “Chombolín” Alba, has been a driving force in contemporary Panamanian gastronomy for years, but the restaurant has been refreshed with new energy by chef Alfonso García. The menu highlights local ingredients and smoky flavors that tie everything together; for a perfect bite to share, try the clams with bits of plátano en tentación (caramelized plantains). Beverage expert Robert Martin curates the drinks, like a clever twist on a Negroni Sbagliato featuring vermouth infused with saril (hibiscus and ginger) and coconut fat-washed Campari. Choose a seat at the bar to catch all the action in the kitchen." - Jorge Chanis

This is most certainly a must visit restaurant if you enjoy great food in a relaxed atmosphere! You'll need to make reservations and I'd highly suggest you select the 'Chef's Choice' You won't be disappointed!!!

Went here for a date night and it ended up being my favorite meal I had in Panama! I am American and my Panamanian husband brought me here. We had the beef tartare, the clams, the pifia rice, and the buttered grouper. Literally everything was AMAZING and so flavorful. I will definitely be back next time I’m in Panama!

Awesome place for date night, had the chefs menu for $62 per person, plus wines and a hybiscus tea moscow mule. Fine dining with Panamenians influences in a very intimate place, absolutely loved the clams! The tartare was ok, a bit too plain. Service was very good too!

Phenomenal experience in this hidden gem with impeccable service and exquisite cuisine. The menu offers just enough options but each one feels tempting and worth trying. Good wine selection from both new and old worlds. Ask the well trained waiters for a recommendation and they won’t disappoint you. Definitely a must visit for those who appreciate an intimate setting with an exclusive touch. We’ll definitely be back.

Our first night in Panama was capped off by this unique property. The exclusive feel of it (low key signage, you'll think it's closed but you have to ring for the hostess to open the gate to check reservations) and the Intimate nature of the interior (max seating of around 20 persons) make a perfect special night out. The food was extraordinarily creative and the cocktails were some of the best we had in Panama. If I ever find myself back in Panama, this place is on my list of must returns.

It's the kind of place that feels and looks like you want it just down the block from home, so you could drop in any time. Service is delightful, the atmosphere is homey. And there's a great wine list to choose from, both by bottle and glass. But given how touted this place is for its food, I found it a let down. Two dishes of shellfish were overcooked and rubbery, and two of four large prawns hadn't had their "poop chutes" removed. Being an open kitchen, it's a bit disconcerting to watch as two of four cooks did all the work, while the two, apparently senior, folk, did nothing but stand in a corner joking around. I never once saw any of the four taste the food they were preparing - it all seemed to be by rote, with no real care paid.

Intimo was the best dining experience we had during our week in Panama. We were seated at the bar, which allowed us to watch the kitchen in action (the other side of the bar would've allowed diners to watch the bartenders make drinks). The inside looks to only seat ~20 and they have a garden area for seating as well. Daniella, the sous chef, took care of us so well. She was prepared beforehand from our notes that we were vegetarian, pointed out everything that was or could be made vegetarian, and was in general very lovely and friendly through the night. We got the rice dish (great textural dish), the cacio (love the ramen noodles and citrus), burrata (the macha was amazing), French toast dessert with amaretto ice cream and the deconstructed tart with coffee ice cream - both of which were spectacular. Strongly recommend anyone in town to make reservations at this place!

Small but Interesting selection of creations prepared with indigenous ingredients. Well worth it are the baby back ribs. The atmosphere is a little dark, lights specially over the table are advisable.
