Where To Go In And Around Mérida, Mexico

"I start with a taste of the world’s largest tequila collection—3,700 bottles—before settling into an exquisite tasting menu (or ordering à la carte) that showcases Yucatán’s bounty: scallop tiradito with Yucatec citrus, smoked avocado, cabbage, and dehydrated chia, followed by a luscious chocolate cake with smoked buttermilk ice cream and Granny Smith purée; the kitchen leans hyperlocal, pulling herbs and vegetables from the hotel’s Ka’anche’s, dairy from a ranch near Tizimín, and honey from on-site and nearby apiaries." - Sophie Friedman

Chablé Yucatán Hotel Review | Hotels Above Par

"At Ixi’im I experienced dishes steeped in Mayan influences that lean heavily on fresh herbs, fruits, and vegetables grown in the resort’s garden; this is also where the resort displays the world’s largest collection of tequila—more than 3,700 bottles exhibited in crystal cabinets—adding a spectacular, rooted dimension to the meal." - Shivani Vora

Spectacular setting and service, but the Tasting Menu made me SEVERELY ILL. We ordered the Menú de Degustación (Tasting Menu) con maridaje at 4 pm and enjoyed the flavors at the time. Unfortunately, the aftermath was severe. We finished dinner at 8 pm. By 5 am (exactly 9 hours later), I woke up with severe cramps and heavy watery diarrhea. The timing and symptoms match foodborne illness perfectly. It is heartbreaking because the experience felt so high-end, but the illness that followed was severe and debilitating. For a fine dining price, food safety should be guaranteed! I hope the kitchen reviews their food safety protocols.

This was the launch of The Residences at Chable Costalegre - a private event, where Chef Luis Ronzon showcase cuisine inspired by the coast of Jalisco - the menu was exceptional (as all of the chef's work). I loved this dinner, not only because I work with the branded residence but because it was a perfect example of how rich and diverse Mexican cuisine is.

Although it's 45 minutes outside of Mérida it is definitely worth the drive. The restaurant is beautiful, set inside an impeccably manicured parcel of land. They grow their own herbs on site. The service is outstanding. If it's your first visit to lxi'im your waiter greets you at the parking lot and escorts you to the restaurant giving you a brief history of the property and the restaurant. From beginning to end the of your meal service is excellent but not intrusive. Food was unique, blending flavours that were new but based on traditional recipes. They also offered vegetarian options! Excellent wine list as well. Thank you, we will return 🤎

This restaurant was fantastic and so STUNNING. The dishes are so creative and delicious. Going to this restaurant was such a wonderful experience. The tiradito and sea bass were the favorites. We drove from Merida and night and it was easy enough to get there and park, just leave with time since it is far. we came for dinner but we need to come back during the day as the hacienda seems beautiful. We had a gluten intolerance and they were very accommodating.

Excellent! This one word is the best summary for this restaurant. This is a true dining experience. About 20 minutes outside of Mérida, you will find this magical restaurant, located on the grounds of the Chable resort. This is our second visit, almost a year apart, and the waiter remembered us! Whether on vacation or living in Merida-area, be sure to take a trip to Ixi’im.

Wow! This place is amazing! The food/service was 4 out of 5 but you can not beat the ambience (5 of 5 on food for the region but internationally 4 of 5). The grounds however are so tranquil! It totally transformed our trip. With or without kids this place is It! We can not wait to repeat- and we will for much longer (staying at the realest for sure!)

This was one of my best dining experiences. The food was over the top good with excellent service. The fish was so very fresh and perfectly prepared. We also enjoyed some amazing wines and Mezcal. In addition, the grounds for the resort are so beautiful. Don’t miss if you find yourself in Merida!

First of all it is not JUST about the food, which is world class, simply world class. It is about the experience of getting there, the arrival at the front gate, being greeted by courteous guards of Chablé hotel. Once passed the gate you drive slowly through the meandering road flanked by a perfectly manucured yes still very authentic landscape to the restaurant parking. There you are greeted by a lovely lady that walks you along the path to the actual restaurant. Along the way she educates you about the origins of the Hacienda and give you the back story of buildings. The restaurent itself is simply stunning and is just the perfect environmental partner to the cuisine. On that front, i will say this: it is an experience you must immerse yourself in and I would strooongly recommend that you let Jorge the sommelier guide you and maybe even choose, especially if you are a group of 3-4 ppl. You can share some plates, which i would recommend since you really need to try everything haha. And if you dare, as him to pair a Liqueur with your appetizers instead of wine, the Mezcal he paired with mine was just sublimeZ You will get to sample his recommendation before choosing. All the amuse bouche were perfect and on point. The meal itself was, and yes it’s gonna sound cliché, an experience for the soul as much as the taste buds. The flavors are just soooo familiar and foreign at the same time. Every bit is a discovery of a new world, and with the wine paired, this could be my last meal. Keep space for the deserts and a glass of veeeery old Sherry, it’s a must. Well, that me. dont ‘t think about it Just Do It!

Yelp
This place is stunning. Try to arrive before the sun sets, if coming for dinner, as you get to drive through the amazing hacienda grounds. There is also a brief walking tour and intro to the restaurant and hotel, although as a restaurant guest you are not allowed to wander around the grounds, for the privacy of the hotel guests (it does cost over $1500/nt!). The restaurant itself is also very stunning. If you're a tequila lover, you'll be in heaven, as they have thousands of bottles of tequila, over the decades. Not sure if all are tequila or some mezcal, but you get the picture. The dining ambiance is great. Sitting outside, you overlook the amazing hacienda gardens. Inside, there are floor to ceiling windows, and a very romantic mood in the evening. Service is excellent, can't fault it. Food is great. Menu is limited, but every dish is unique. I highly recommend ordering the lechon (suckling pig) - truly spectacular. In fact, its probably big enough to share between two, and just order separate appetisers. The venison risotto was recommended by the waiter (chef's signature?). While it was executed perfectly and delicious, it didn't have a huge "wow" factor. Still, if you like risottos, you'll have an amazing dish. For dessert, the chocolate tamale sounds interesting, but really it is just a spin on a chocolate brownie with ice cream. Delicious and well executed, but sounded more exotic than it actually was. The only blot was the pricing of water. Charging approximately 240 pesos for a half bottle of mineral water, is just price gouging in my opinion. The drive into the hacienda is also through some bumpy roads, and a very poor village. So if you come for dinner (from outside the hotel), be prepared for a somewhat scary drive/ride back. We dined at the well-celebrated Pujol in Mexico City; if given the choice, we'd rather come back to Ixi'im again instead.

Yelp
My wife drove us here after a charming day at the Cenote Hacienda Mucuycan. After driving up a tiny jungle road, we get to a gate of a compound and the security guard lets us in. All the while I am thinking where on Earth I am being taken. We park the car and are greeted by our hostess Carol who walks us to the restaurant and proceeds to show us the vast collection of tequilas on display, as if we were in a museum of the drink. We are then served by Josue who took us on an amazing journey through the flavors of the Yucatan. We ordered the lobster, shrimp, and venison risotto, as well as a chocolate tamal and melipona honey ice cream. Along the way, we were given some complimentary bites that were just as exquisite as the rest of the food, including a seafood broth, a black sapote sorbet, and a mango kombucha sorbet. Everything was just top notch and I will remember this meal for a long, long time.

Yelp
I travel to Merida Yucatan on my sister birthday. We were looking for a really nice restaurant so we can celebrate my sister's anniversary. We found Ixi'im inside of one of the most beautiful hotels in the world, Chablè. It is 40 minutes driving from Merida, you can ask your Hotel for transportation. It worths it... the place is a dream!!!! The food is amazing, is a little expensive, but believe me, every bite and drink you make, you will have a wonderful experience!!! We began with the Tequila of the house, the Restaurant has more than 3,000 tequilas, so we assumed that the House Tequila most be good, and it was!! The best tequila I ever drink in my life!!!!! Then, about the menu, you can ask for Menu Degustación that is like a little taste of everything of the menu in small portions or by the Menu... we have both, for the adults the Degustación, and for the children the Menu. The children's Menu is very small, but it seems that it is because the restaurant is more consider like a romantic destination, but the children had a delicious meal and have a wonderful time running around the amazing gardens.

Yelp
Definitely one of the best dinning experience in Mexico. The location is amazing the food is out of the world good. And it is not crowded at all, which makes it extra perfect.

Yelp
Absolutely worth a drive from anywhere in the Yucatan, this is a revelatory 2-3 michellin star experience (not that they will ever go way out there). Truly exceptional food, stunning design, great service, just do yourself a favor and go.
