Jack’s BBQ Brings Its Texas-Style Smoked Meat to the Columbia Tower | Eater Seattle

"I'm reporting that Jack’s BBQ, the Sodo restaurant renowned for its Central Texas-style barbecue, is opening in the Columbia Tower food court on Monday, December 17. The menu focuses on the same array of smoked meats—brisket, ribs, pulled pork, and sausage—that has made owner and pitmaster Jack Timmons’ restaurant a go-to for barbecue lovers in Seattle, and it's the first of two planned expansions (a South Lake Union location is scheduled for January). Breakfast tacos loaded with brisket, cheddar jalapeño sausage, or vegetables will be served from 7 to 9 a.m.; after that the offerings switch to plates and sandwiches featuring smoked meat and sides like potato salad and collard greens. Fans of Jack’s Safeco Field menu will also notice the formerly ballpark-exclusive Sausage Dog—made with brisket chili, cheese, and jalapeños—on the Columbia Tower menu. Breakfast tacos here are amazing. Potato, egg and cheese plus your meat choice, jalapeno sausage or brisket. I love the sausage. It is amazing. They are $3.50 each. 1 is enough for some, I usually get 2. I get just sausage, egg and cheese in a bowl to lessen the number of carbs. And they are always happy to do it. They have red or green salsa to go along with it. Delicious!

Horrible food and menu. Just visited this place for the first time to tatse their Brisket sandwitch and I wish I never did. The meat was lukewarm, not cooked enough, had no taste, and the price was TOO HIGH for such a poor meal and service. The menu was wonky and not done professionaly. The staff did not help either with my complaint that the meat wasn't cooked enough. A hole-in-the wall on 3rd and Jackson for a Brisket sandwitch outperform this high end place BY FAR, no more Jack's BBQ.

Meatiest ribs I’ve probably ever had from a bbq stand. I was completely shocked how meaty they were. I’m used to a slab of rin bones with a little meat between that you have to fight for. It’s not the best bbq stand I’ve been to. For that you have to go to Polson Montana. But man the crunchy bits on the brisket and ribs and the seasoning and stuff makes this worth four stars for sure.

I’m from the Eastside a regular but yesterday I got an order that I picked up from the Bellevue location (pickup only) and I was VERY disappointed on the way the brisket was sliced!!!!!!!!!! It was very thick cut and this is not how it should be... please fixe this or let the crew know that this is not a steak, it’s a slice of brisket. I really hope that this was just a one occurrence even thought I had the same experience in the SODO location. Thank you

Before arriving in Seattle we did a little restaurant research and knew Jack's BBQ was close to our hotel and on our short list for lunch when we arrived. It was a little hard to find, it's in an office building on the bottom floor, probably better to enter from 4th street. I had a rib plate with collard greens, Hubbs had hot links with chili and we shared some Mac & cheese. Everything was so good! There was so much food we couldn't finish it. The ribs were smoky and tender, the greens were very good. If you've read my reviews for a while you know I judge places on their collard greens- these were very good! I would definitely eat here again! As a matter of face I might eat here on Monday before we head to the airport.

Went with the "picnic" platter for 4 people since it was our first time here. Honestly everything was really good. The main star of the show was the 3 sauces on the table. Make sure to try all the sauces or you're missing out. Ordering was easy since we just ordered through a QR code. Fun fact: The route to the bathroom was quite interesting and probably one of the farthest bathrooms I ever had to walk to

Only OK at best. Dry and unremarkable for a barbecue with premium pricing. I was looking forward to trying this place out since barbecue is one of my favorites. No cornbread? It's easier to have that on the menu than the array of sides available at the Columbia Tower location that I visited. I shouldn't have to ask for moist cuts - your options should already be that! Both my meats were dry and chewy. I'm ok with paying good money for food. I felt like I wasted mine today here :( Will continue to hunt for better options.

Convenient location in side the Columbia Tower food court. I was so happy to see a BBQ restaurant here. I ordered the two meat combo plate, which comes with a side. This time I got the brisket and sausage, with a side of mac and cheese. The brisket was very tasty with a delicious peppery bark. I appreciate not getting an overly fatty piece. The sausage was perfect with just enough flavor from the spices to not overwhelm my taste bugs. The mac and cheese was a decent quality. There is a self serve pepper, pickle, and onion station. You can also self serve slices of white bread. I thought I was going to have some leftovers for dinner, but I couldn't help myself and finished the whole thing off. Be prepared for an unproductive afternoon if you have this heavy lunch. It was delicious, but made me real sleepy :-)

My experience at Jack's BBQ was via a catered event at the columbia tower, and I am sad to report that it was very disappointing. They served the driest ribs in history. It was basically bone-in jerky and I had to use a lot of strength to cut through the meat (biting it off the bone was no better). I also tried their mac & cheese, brisket, sage chicken sausage, jalapeño cheddar sausage, pickles and beans. The beans, jalapeño sausage and brisket saved the day. If I were to eat there again, I would just get these 3 items (maybe the pickles too) and forego everything else. They also offered 2 types of sauces - spicy and mild, and they were pretty tasty. I ended up slathering the ribs in the sauce which helped a bit.

My favorite BBQ joint just opened a location right down the street from my office, so, WINNING! So glad Jack's BBQ has a spot in the Columbia Tower, making it super convenient for those in downtown Seattle to visit. I read all the news/excitement about Jack's BBQ opening a location in the Columbia Tower last year and made sure to remember the date of when it was to open. And the time came, my friends. I visited, I ate, I smiled. It was a BBQ lunch worth splurging on, at least, once every month. (I'll work on it.) Just like the other food spots in the Columbia Tower, this location of Jack's primarily serves as a place for pick-up/to-go since the Tower has seating/lounging in the center of all the eateries. However, there are some chairs inside by where the condiments are. I advise to get here early though if you're looking to dine-in because when I visited during prime lunch hour, Jack's had the longest line. It went by fast though. OH! And Jack was there, greeting all the customers and making sure all was well! I ordered the Brisket Plate with Mac & Cheese and spicy BBQ sauce. It didn't take long to get. After I picked up my order I went to get utensils and napkins, and saw there were complimentary white bread slices, jalapenos, pickles, and onions to top off your BBQ! Love it! When I finally sat to chow down I was pleased with the packaging of the BBQ. My brisket was wrapped in foil, helping the heat stay in and mac and cheese was in a small container, as was the sauce. Nothing gets messy 'til you make it messy! Although the brisket wasn't as good as getting it when you dine-in at the main Jack's location, it was still solid. It wasn't as tender as I remembered it being, but it was still darn good. Plus, it was half a pound, which is more than enough. The Mac & Cheese was good and had some bread crumbs, for some crunch factor. I did like the spicy BBQ sauce that I got mine with, as it added some zesty flavor to the brisket. It was a $15 plate, so is spendy for lunch, but I do enjoy Jack's BBQ! I already can't wait to visit again and try more of the menu items. I love that they have combination plates, sandwiches and a solid list of sides of your choosing with any combo. They also serve breakfast, which one of these days I'm gonna try 'cause they have tacos! More to report in the near future...

this is not Texas (meaning we're in WA state), but this is pretty good for Seattle bbq that is Texas-style! the meat for my ribs and inside my brisket sandwich had some smokiness.. juiciness.. and tenderness.. that's pretty good plus, the ribs were pretty meaty; long bones filled with meat! their bbq sauce was good as well! also, since you're in the Columbia Center which I haven't been to for a while!.. until today; they upgraded their seats and tables for folks to dine and eat in the lower three floors and that in my opinion, is a pleasant experience for the diner and to have decent bbq, that is an added bonus

This place is AMAZING! The best BBQ I've had in Washington. My husband's family is from Texas and I've had brisket there many times. This is one of the best I've ever had! The ribs are amazing too! The pecan pie? My mother in law? I brought her a piece and she nearly died. Brisket is my favorite food, and I DREAM of Jack's. I also dream of the day I can try their BEEF RIBS!

As my friend would always say. It's a sin i don't eat pork and beef. I get to eat chicken at least :) and their 1/2 chicken platter is soooo good. Im just glad they have that to offer. I normally don't like chicken at bbq joint as they tend to be very bland and dry. Not this one. My friend works in DT so i have another reason to go.

Just okay BBQ for downtown Seattle. There aren't many BBQ places in downtown Seattle and Jack's is now the closest to where I work, but that doesn't mean it's great. I got the pulled pork and if I had a craving I would go back, but the meat was kinda dry and the presentation was just meh. The staff were also very curt which I can take, but the presentation was sloppy and there was juices or something splattered all over the box and foil. For a $15 lunch in downtown I feel like I can better food with better service.

'Twas the week before Christmas and all through the Tower Anticipating employees were waiting for their lunch hour. The hands finally struck 12 and folks leave their work behind Taking a break from the daily grind. Riding down the escalators or going down some stairs Or walking towards Seattle's tallest building with colleagues in pairs. The line for BBQ was long, no big deal It's worth the wait for a delicious meal. Jack was making sure everything was okay Food came out quickly not much of delay. It's probably practice from working the large volumes of Mariners fans And maybe this expansion project is all part of a well-developed plan. Brisket, Mac & Cheese, Potato Salad, oh so many choices You'll hear customers order with their excited cheery voices. Congrats to Jack, this endeavor is looking pretty bright And to all my wonderful Seattleites: Happy Holidays and have a good night!

So happy to see this place reopen in the Columbia Tower. Best barbecue in Seattle. Texas style and perfectly executed. I usually order the combo plate-brisket and sausage. Both meats are outstanding. Maybe the only bbq restaurants in Seattle that actually knows what smoked sausage is! The sides are delicious too. I've had the potato salad and the mac & cheese. I've been to the SODO location and they have Shiner Bock on tap. The best. If you are looking for good barbecue, go here or any of their locations. I highly recommend!

The food here is lovely. My favorites are the jalapeno cheddar sausage sandwiches and the ribs. Michael at the front counter was very friendly and provided wonderful service. He was extremely knowledgeable about the menu, and recommended me items that would become my favorites. The nook that the restaurant sits in is a very warm and welcoming environment and is kept clean. I look forward to coming back again and trying more of the menu. Who would've thought you could have great Texas BBQ in Seattle? We have been to Jack's quite a few times and usually get the platter for 4 to split between 4-6 of us. It comes with chicken, pulled pork, ribs, brisket, sausage and 4 sides. My favorite is probably the sausage, but my boyfriend is a big fan of the brisket, but the brisket can be a little inconsistent. A couple of the times it was a little dry for my taste, but they do provide you with some BBQ sauce to top it with.

I was excited to visit the new Jack's BBQ at Columbia Center with a friend today. The line was long but moved pretty quickly and we had our food in about 10 minutes. Jack was even there handing out yummy samples of brisket as we waited in line to order and I have to say his brisket is neatly as good as mine. Jack thanked me for the compliment when I told him just that. And when we did get our sandwiches, we were both Inpressed. It's certainly a lot easier to go to Jack's for great brisket instead of cooking my own for six hours too. I also liked how they had containers of regular and spicey sauce next to the napkins and utensils so you can just grab what you want or try both, which I did. The brisket was tender and moist just like it should be with a little crispness on the crust. I'm going to have a hard time staying away from this place since it's so close to work. I've been to his place on Airport Way but this is much closer so I'll be visiting again soon.

I have neglected to post my review for Jack's. and I didn't take photos of my meal. Shame on me! This is one of my favorite Seattle restaurants with super delicious authentic Texas Barbeque. Nothing is bad! I have had the brisket, pork ribs, rib tips and Flintstone beef ribs (the rib tips are a great deal-lots of meat, very reasonable price). They serve their meats with two sauces- sweet and spicy and both are homemade and excellent plus bread, onions and homemade cucumber pickles that taste like bread and butter pickles but are crisper and fresher. There are not a huge selection of sides but they are delicious. Especially good is the Texas Caviar which is made with white beans, corn and red pepper and has a relish flavor. Excellent all the way around!

Wasted $20 on this? Dry chicken and a piece of fat they call brisket. Potato salad was even worse. Came here when they first opened and wasn't impressed, decided to give it another chance and they've gradually gotten worse, got to find people who can actually BBQ

I had the brisket with a side of slaw and wish I could say I liked it (because who doesn't love good BBQ?), but it was the worst BBQ I've ever had. I've never thrown an entire meal away - until today. The "meat" was more fat than anything, and the slaw wasn't at all fresh. It was wilted and limp. I spit my first bite of brisket into my napkin because the excessive amount of gelatinous fat made me gag. For $20+ with the tip, I expect better.

I am a big Jack's BBQ fan, having first attended his Seattle Brisket Experience pop-up events and since then I've dined at the Airport way location many times. I am excited to have Jack's join the Columbia Tower food options. I had the spicy caesar and really enjoyed it. It has a good amount of romaine, very tasty dressing on the side with hot sauce also on the side so you get to control the spice level. There was a nice portion of sliced brisket on top (but you can get it with whatever meat they have available). There were two drawbacks: 1. The price is high for a food court lunch. I get it - you're paying for quality, but it's still going to be a once in a while place for me due tot he price point. 2. No free water. I looked around for the cooler, but there wasn't one and when I asked, the person at the counter said "we don't do that." I hope they re-think this and start serving water so I can eat my lunch at the food court. That day I ended up taking my food back to the office where we have free water.

Fantastic! I now work across from the Columbia Tower and discovered Jack's. I've had it three times for lunch and each time it was CRAZY GOOD. The burnt pieces of brisket are to die for, as is the Texas Caviar. The sauces are tasty and just the right amount of heat. It is a bit pricey for a typical office lunch but you get a TON of food and the quality is top notch. We've done the "Picnic for 4-6" as a group and it really should be called "Picnic for 8-10". Oh, and the pickles are KILLER. There are only a few places in the Columbia Tower food court that I think are at this level of flavor and quality. I am for sure a fan.

Stopped into Jack's as I was burning some time in the area. Big place! Very "down home" atmosphere. I sat at the bar. Bartender was very busy but was very nice and conversational. Had a couple beers and some beef tips. Tips were okay however I know their brisket is MUCH better. I'd recommend this place and will be back!

Beautifully slow smoked BBQ. Every time I am working in the area, my folks ask if we can swing past Jack's for lunch. I go out of my way to make time for it. I have not found anything on the menu that I don't at least like...but the brisket and beef ribs are wonderful. No equal in Seattle

Great South Texas BBQ for being in Seattle; however several things which brought the rating down a bit. Had the one meat plate (kinda pricey compared to BBQ we're used to being from San Antonio/Houston TX ourselves...), but heres our take on the pulled pork today. Nice flavor (smoked with the right woods, either Hickory , a bit short on the salt...nice smoke ring, very moist/juicy/Mesquite, very tender and had a nice meat to fat ratio for added flavor (was not to fatty). Good char but overall a pretty good pulled pork. They got it right with portion size but the sliced white bread with white onions, pickles, and jalapeños! Very Texas! Where the beans? Now the down side, only one side comes with the plate, selected the potato salad and a total bust. Large chunks of potatoes, under cooked, still had that raw vegetable texture/chew, too much mustard. We prefer that creamy rich texture with the zing of pickles and mustard not just mustard which was not good at all today. Wish they offered a pork/beef sausage in addition to the jalapeño sausage too. Overall pretty decent BBQ, a little more salt or seasoning would have been nice on the pork! Will go back to try the other meats but so far they are representing Texas BBQ, not quite that BBQ 'shack' flare in terms of setup you can find in Texas, but we most certainly recommend getting you 'Q' on here.

The food is pretty good. We have 75 employees and we wanted to get a lunch catered. I went to the restaurant on Airport road and they had me contact their catering service. I tried to see what options they had for catering and the only response I received was "we need 48 hr notice" and I was trying to plan something a 10 days in advance. After trying to contact them for several days I finally gave up.

The price is insane for the amount of food you get. Seriously, it's almost cheaper to eat at Metropolitan Grill for lunch (which is a full service restaurant and not a fast food place). Otherwise the food tastes good, but I wouldn't eat there often because of the price.

I was excited to see BBQ come to the Columbia Center and I heard good things about Jack's. After trying their brisket, it was very average for the HIGH price they charged. Their BBQ sauces are sub par tasting as well. You can get a good lunch at the Atrium food court for about $8. You can barely get Jack's a la carte items for that price. The presentation of the food is terrible as well, wrapping up my one piece of brisket in tin foil. Why not cut that piece up to make it look better and throw in a piece of corn bread?? I would go to Hole in the Wall BBQ down the road and get better BBQ and more of it for the same or cheaper price!! Too bad, the expectation was far greater than reality!!
