"I'm reporting that Jack’s BBQ, the Sodo restaurant renowned for its Central Texas-style barbecue, is opening in the Columbia Tower food court on Monday, December 17. The menu focuses on the same array of smoked meats—brisket, ribs, pulled pork, and sausage—that has made owner and pitmaster Jack Timmons’ restaurant a go-to for barbecue lovers in Seattle, and it's the first of two planned expansions (a South Lake Union location is scheduled for January). Breakfast tacos loaded with brisket, cheddar jalapeño sausage, or vegetables will be served from 7 to 9 a.m.; after that the offerings switch to plates and sandwiches featuring smoked meat and sides like potato salad and collard greens. Fans of Jack’s Safeco Field menu will also notice the formerly ballpark-exclusive Sausage Dog—made with brisket chili, cheese, and jalapeños—on the Columbia Tower menu. Timmons, a Texas native and former Microsoft employee, uses oak, mesquite, and hickory to smoke the restaurant’s variety of meats and says his mission is to make the best and tastiest BBQ money can buy in Seattle." - Megan Hill
