I’ve had many Michelin ramen and so far this one takes top 3 for sure. While a lot of the toppings require separate ordering, the fact that each piece is perfection makes it make sense. By far the most inspiring chashu and ramen egg I’ve encountered, and the grilled chicken piece leaves a heavy impression on my brain. The only critique I could make is that the broth is a bit too complex, if it were toned down slightly it would allow its contents to shine more. While I love ginger, when in combination with so much black pepper the spice is overwhelming the natural flavors. All ingredients incredibly fresh and service is fast. Book in advance

One of the most prestigious ramen shops in Tokyo; no walk-ins available and all reservations are done online (which is a good thing as it lessens the time waiting outside the shop) A poignant and delicate soup plus different types of chasiu that are well executed; definitely deserves the fame is currently enjoying

Tokujo Shio - Edit x taking down 1 star as I learned that they took out the egg, menma, coriander, 1 each nori and wonton and duck chashu vs. a year ago, all the while increasing the base price. Feeling some level of regret supporting this kind of practices. A very "Michelin" type of ramen, no weakness, unique yet paradoxically standard. At this price point (an insane 2,200+ booking fee!) and booking system, that's not a go-back type of experience and would almost call it a rip-off Details: - Broth ++ oily chicken and unique bitter taste from what seems to be sea bream, might be wrong - Noodle x "spaghetti" type, typical of this kind chicken ramen, not my personal preference - Pork chashu +++ could be some of the best I tried, it's the masterpiece imo - Pork belly ++ very good, top tier - Grilled chicken x good, no surprise here - Wonton + very nice firmness of texture, taste is good but not top tier - Topping + only green onion, but taste works very well. At this price point you'd expect at least an egg for the tokujo though - Space x lots of unused space, comfortable seating but gives an unnecessary luxury "you could fit double the people and sell for half the price" feel - Service + not especially nice, efficient fast serving

One of the best shoyu ramen experiences I've ever had! Be sure to reserve two weeks in advance when their table check becomes available. The shop is clean, and there’s plenty of space between each seat, making for a comfortable dining experience. I ordered the exquisite shoyu ramen for 2200 yen, along with a soft-boiled egg for an additional 200 yen. This ramen truly represents the pinnacle of shoyu, striking a perfect balance between clean and sophisticated flavors. The broth and the three types of chashu were outstanding! The noodles were medium-thin and straight, which I found enjoyable. However, I prefer a firmer texture and a bit more egg flavor in my noodles.

Broth together with a splash of chicken oil was so flavoursome. I enjoyed the variety of meat with some charred with a smokey taste to it. Wontons were not bad too.

Ramen is great, very pretty, fine, well structured. The queuing is painful, but worth the wait. Need Japanese writing for registration hence not a place for tourist.
