What Does Food Look Like when Sustainability is the Main Ingredient?
"For us, it means bringing food waste to a minimum. We actually have our own logo and we call it 'We Fight Food Waste,' says chef Jens Dolk of K-märkt Garnisonen in Stockholm, known for its sustainability efforts." - Marisel Salazar
What Does Food Look Like when Sustainability is the Main Ingredient?
"Known for its sustainability efforts, this restaurant minimizes waste under a “We Fight Food Waste” ethos by building each day’s cooking around what suppliers actually have available; there’s no fixed menu, and an “upside-down” buffet that starts with greens and reserves proteins for the end nudges guests toward more vegetables and less meat—an operational challenge that has paid off." - Marisel Salazar
Came here for a company event on Friday and got food poisoning from their shrimp with raw egg yolk and white "cocktail".

The lunch buffet is by far the best food in the area. It’s expensive for your everyday lunch, but definitely worth it.

Always great food. Organic, locally produced. If you think vegetables have to be boring, think again. Always have a meat, fish and vegetarian option. An added bonus is that they work with food products that might otherwise have been discarded. Great for the fight against food waste!
The only catch is that you pay by weight and it's hard not to take a little of everything. It can be on the expensive side.

I'm eating a plant based diet and this place always have six interesting dishes in the vegan or vegetarian area besides the main ones. I'm a sauce person and they have interesting new-to-me sauces too. Biggest problem is to load up so the plate isn't much above 100kr, since you pay per weight.

Very disappointed with the buffet and bordering on disgust as I had a skin and physical reaction to what I ate at your place today. The same dishes as on Wednesday 25 May were served today. A colleague of mine also has a very bad stomach ache. It's shameful and totally outrageous, even more so with the standing and prices that you display!
I will never eat there again.

This place produces high quality dishes from produce bought from other restaurants (produce that otherwise would have been thrown away). A pastry and a bakery is here as well. Really nice way to fight food waste. There are always vegetarian options and the menu varies depending on what produce they can buy. There is a buffet where you pay by weight.

Well-prepared pretty traditional Swedish lunch food. Pay by weight. Crowded, but the place is large and there are ususally seats.

Yelp
One of my favorite lunch spots in Stockholm! Food is always of high standard, and I love their philosophy of no food waste, and seasonal produce! Also wonderful to end a lunch with Daniel Roos pastries!

Yelp
Decent option for lunch. Good variety of vegetables and warm dishes. Pick your own portion and pay. Coffee/tea/bread included. Big dining places with lots of seats.
