How to Make Thai Curry Paste From Scratch at Home: Tips and Tools to Use | Eater
"Owned by Pim Techamuanvivit, this spot reflects the chef’s pragmatic approach to traditional technique: hand-pounding curry paste is considered a fun occasional ritual but impractical for frequent cooking, so she endorses using a blender or food processor to make home-friendly batches. The chef shares practical mortar-and-pestle technique—aiming on the side to create friction rather than brute force—and encourages home cooks to prioritize results and accessibility over strict adherence to labor-intensive methods." - Kat Thompson

"Techamuanvivit’s new offering, meanwhile, is called Kamin. It’s a casual spinoff of her Union Square restaurant Kin Khao, starring khao soi northern-style chicken curry, salads, noodle soups, and carry-out boxes of fried chicken and fried tofu." - Caleb Pershan
