How Arancini Are Made in Sicily | Eater

"At a small cafe led by chef Giuseppe Di Forti, the team rolls and deep-fries balls of gooey, cheesy parboiled rice to make arancine — which Di Forti calls “perhaps the queen of Sicilian street food.” While traditional arancine consist of just rice, cheese and tomato sauce, the kitchen serves inventive variations stuffed with meat, tomato, eggplant and other fillings; the chef aims to transform a static local tradition into an international product by adding these new flavors." - Avery Dalal

Ke Palle is the perfect place to dive into the world of arancine (the regional name for the fried rice balls). This spot is legendary in Palermo, not just for the sheer variety of flavors but also for the absolutely huge portions—you definitely get your money's worth! We made this our first arancina stop, and it was a delicious introduction. While my daughter enjoyed the traditional ragù flavor, my husband and I branched out: Pistachio: My choice, and it was indeed delicious! The creamy, rich pistachio filling blended perfectly with the crispy, fried rice exterior. Aubergine (Eggplant): A unique and surprising choice for my husband, offering a flavorful, savory, and distinctly Sicilian twist. It was definitely worth the indulgence; we all loved it! The arancina here is the true definition of filling, satisfying street food. They are perfectly fried, crispy on the outside, and packed with intensely flavorful fillings. If you are hungry, curious, and want to try both the classic and the creative versions of this Sicilian staple, Ke Palle is an absolute must-visit.

Touristy, but what do you expect? Haha. We recommend trying out one of the less traditional fillings as you can get amazing arancini in numerous places around without the line but if you do the line here make sure to try something new! (Also the line moves pretty fast so it’s not like that’s a problem.

Excellent and very tasty arancini with many options to choose from. They are best eaten straight away as they are warm. We took 3 different ones for 2 people and this was plenty and feeling well full after. A local sitting next to us told us that the size is smaller than most arancinis but the filling is always good. We went for the mushroom, eggplant with tomato sauce and the octopus ragu. All different tastes and all excellent. There are some tables and stools outside.

During my stay in Palermo, I returned to this place several times, both to dine in and to get takeaway. The arancini are simply delicious! It’s also a great spot for vegetarians and vegans, who will find tasty options here. When visiting KePalle, I highly recommend trying the Ragù di Verdure; absolutely perfect and full of flavor. I can’t wait to come back and try a few more varieties!

The place is not that big, but the atmosphere is quiet nice, we did not have to wait for our orders. I have dairy-allergy and I was happy that we could find this place with more tasty options. Vegan and vegetarian options are also available and prices are ok, because the portions are big.

A must-try Sicilian street food, this shop is undoubtedly the best place for arancini (fried rice balls). We ordered three flavors: curry chicken, fish, and mushroom, each with its own unique twist, and all featuring an incredibly crispy crust. The only regret was missing out on the octopus flavor. If I come to Sicily, I’ll definitely try it next time!

Incredible variety and top-notch quality of arancine! Ke Palle offers both the beloved classics and creative modern twists. We tried four flavours — con ragù, salmon, pistachio, and alla Norma. Each one had its charm, but alla Norma became my personal favourite thanks to its lightness and perfectly balanced taste. This spot is one of the most famous places for arancine in Palermo, known for reinventing this traditional Sicilian street food while staying true to its roots. Definitely worth a visit if you want to experience arancine at their finest!

We stopped here on a Saturday in early November. Service was quick. Order at the cashier and take it outside to eat. Pork rags. Mozzarella and pistachio. Delicious.
