"Owners Eva and Nicolai Tram turned a derelict 1870s sawmill in Rydöbruk, in the Halland backwoods, into a Michelin-starred restaurant. They made it their home too, living upstairs with their two sons. At Knystaforsen, opened in November 2020, the kitchen team cooks all the food on the open fire outside the restaurant. Most ingredients are local, including fish from nearby lake Bolmen and game like pheasant, duck, and fallow deer. All the beverage pairings on the multicourse menu (which can stretch past 15 dishes) are Swedish, including wine, mead, cider, and innovative nonalcoholic alternatives made in-house from local herbs, fruits, berries, and weeds. Rydöbruk is a brukssamhälle, or company town, a small community where everything is owned and operated by a single business, including sister pizzeria Knystaria and a manor where guests can stay the night." - Per Styregård

Fine dining in the woods and from the woods - and lakes. Kitchen concept is a la new nordic with an element of bonfire and smokey flavors. Kitchen is very inventive in their rediscovery of of the nordic materials and explorations into combinations and presentation. Concept is a bite sized walk through the region that, at times, feels a little meandering. Total seating time in our case was +5hrs. The kitchen certainly proved smoke and inventions can bring about very interesting and hugely enjoyable flavors but we were left wondering if they can also put together a meal

I did a last minute reservation, going to the restaurant with my wife, in august 2025. Reservations were simple. Information was plentiful and easy to understand. Food and drinks (wine and different fruit concoctions) were excellent. Locally sourced produce combined in inventive, surprising and tasteful combinations. Even though there were a lot of bite-sized servings - at least 20 - something new happened all the time, keeping both us and our tastebuds alert. There are some surprises during the evening. Service was attentive, knowledgeable and friendly in a good way. All in all, the dinner as a whole was a truly fantastic experience.

Excellent fine dining experience in “the middle of nowhere”, but so easy to drive to and they offer accommodations! An absolute must if you are a Foodie. And mission critical if you have not been able to secure a Noma reservation 😇

Thank you for a fantastic dinner experience and memorable evening. From the starting snacks all the way to the closing coffee, every dish was very nice, thoughtful, and with a special twist to it. The staff was friendly, very knowledgeable, and transported their dedication to Knystaforsen in a professional way. We chose from the beverage pairings, which we do recommend. Each pairing was a good fit and made sense to us. However, for some of the Nordic wines the pairing name "Adventurous" was program. The wine list reads well, and anyone not so fond of pairings, like myself, will find something nice. The warm welcome from Nicolai and outdoor open fire kitchen tour were further highlights. The bites of the optional cheese course could be more generous. We definitely will visit again on the next opportunity.

Michelin star dining in an old sawmill. Their "thing" is cooking on fire. It sounds like a gimmick but it isn't. They have really thought this part through and make it an integral part of the meal. 20 or so servings, including an optional (but you really should have it) cheese serving. Excellent cooking from start to finish. Lovely service as well, with excellent timing. A tip from me: Try one of their combined pairings instead of the traditional wine pairing. It was excellent. Also: Try to book an overnight stay and have their cozy breakfast in the morning as well. It is worth it.

Typically for a restaurant you’d say some nice things about the food the staff etc. But how do you summarise an epic 5 hour experience + breakfast?! We celebrated our company birthday here and had an amazing time. They did everything right From the beautiful fall scenery to the fiery smoke and lovely interior. It really felt like stepping into a unique cabin in the woods. The menu was excellent - keeping you on your toes and not giving the little piece of paper until after fishing the course. Perfect! The staff was wonderful, especially our sommelier and the head chef! All courses were delicious and plated beautifully. We even started doing research on the ceramics during the course of the dinner Drinks: there’s an adventurous option. How can you not pick that? Rooms: the place does not have a lot of rooms so they partner with families in the area I guess. Worked out very well with a house in the middle of nowhere. This is a positive! The even drove us to and from the restaurant. Breakfast: the journey keeps going! Morning after there’s a great breakfast with a nice view of the surrounding area during day time. This review purposely doesn’t go into too much detail about the actual dishes to not spoil anything. Just go here! You’ll love it!

Beautiful food prepared over open wood flame, 18 courses made with amazing techniques. The drink pairing was perfect for these delicate dishes. Nicolai and his staff provided excellent service and company. The restaurant and the garden is just lovely and the bnb we stayed at on the property was very comfortable. We will definitely go back !
