"In 2025 the viral late-night taco stand Tacos La Cuadra settled down in Kent and opened up a brick-and-mortar, giving daytime people the chance to try its al pastor. It’s done properly here, thinly sliced and flavorful enough that it doesn’t need salsa — though if you want salsa, try the dark red smoky one that’s made from chipotle, chile de arbol, and guajillo. "Trompos spinning with chile-tinged al pastor have been popping up all over Seattle—and you have Tacos La Cuadra to thank for that. After building a following for their roving operation, they now have a sit-down restaurant in Kent with a bar, a television to watch soccer, and a handful of tables. But let’s be clear: the trompo-sliced pork is really the only thing you should be ordering. It’s simply the best al pastor in Seattle. Other menu choices fail to live up to that glorious standard, including underseasoned chicken and carne asada that's fine, but forgettable. This place is a good choice for one particular dish when you’re already in Kent. Otherwise, it's okay to run into them at a random lot elsewhere or find a wider variety of great tacos in Seattle.
