Trompo-sliced al pastor tacos, smoky salsas, grilled onions, tortas, and mulitas
"In 2025 the viral late-night taco stand Tacos La Cuadra settled down in Kent and opened up a brick-and-mortar, giving daytime people the chance to try its al pastor. It’s done properly here, thinly sliced and flavorful enough that it doesn’t need salsa — though if you want salsa, try the dark red smoky one that’s made from chipotle, chile de arbol, and guajillo. If you’re in the North End and don’t want to drive all the way down, take heart: A second location should open in Ballard soon." - Mark DeJoy
"The viral, permit-challenged late-night al pastor stand that has been operating around North Seattle now has a permanent restaurant in Kent, at 24602 Military Road, according to the Seattle Met — or at adjoining address 24602 36th Avenue South, according to the Seattle Times, which reports that the owners still don’t have the proper permits." - Harry Cheadle
"Trompos spinning with chile-tinged al pastor have been popping up all over Seattle—and you have Tacos La Cuadra to thank for that. After building a following for their roving operation, they now have a sit-down restaurant in Kent with a bar, a television to watch soccer, and a handful of tables. But let’s be clear: the trompo-sliced pork is really the only thing you should be ordering. It’s simply the best al pastor in Seattle. Other menu choices fail to live up to that glorious standard, including underseasoned chicken and carne asada that's fine, but forgettable. This place is a good choice for one particular dish when you’re already in Kent. Otherwise, it's okay to run into them at a random lot elsewhere or find a wider variety of great tacos in Seattle. Food Rundown Al Pastor Tacos In case we didn't make it clear enough, get these. And dress that sweet and salty pork with lots of onions, cilantro, and very spicy rojo salsa. photo credit: Nate Watters Pollo Mulita While we’re big fans of the double-wide brown crispy cheese lace that pokes out of the edges of the corn tortilla, the chicken could use some of the same flavor treatment the precious al pastor gets. Carne Asada Burrito This is a solid burrito that will do the trick if you need it, but there are better versions out there." - Kayla Sager-Riley
