"Walking into La Piscina feels more like stepping into a Mexican villa than a rooftop restaurant on the fifth floor of the Austin Proper Hotel—complete with floor-to-ceiling windows and lush desert plants in a bright, airy dining room. Inside, expect more of a Tex-Mex restaurant, with sizzling fajitas, ceviches, and lobster quesadillas. This Austin Proper Hotel restaurant has brunch fajitas, served with diners’ choice of steak, achiote chicken, pastor, or shrimp, along with scrambled eggs and papas con rajas. The breakfast migas are another highlight, with scrambled eggs, crispy tortilla chips, pepper jack cheese, and salsa verde. For something lighter, order the tuna crudo with Mandarin orange, which is finished with a vibrant hibiscus aguachile. La Piscina also offers several frozen margaritas, as well as the diner favorite Mimosarita, which combines tequila, bubbly, and orange juice.
