Where Chefs Go: Des Moines, Iowa

"On your way out, Nahabedian recommends visiting Herb and Kathy Eckhouse’s La Quercia, a 20-minute drive south of the city in Norwalk, for “the stunning array of prosciutto and local ham sausages and products being made,” and The Cheese Shop of Des Moines for a quick cheese board, melt or toast." - Marguerite Imbert

DO NOT BUY I wanted to try this place out before buying large quantities and it is not off to a good start… As y’all can see in the pics.. I ordered Guanciale but received Pancetta. The cooler was packaged poorly. Clearly everything was thrown into an oversized cooler and not wrapped to keep the meat pack safe from the dry ice. The dry ice was in direct contact with the pack of meat so it cracked the pack and out spilled all of its contents. I’ve reached out to see about a replacement but haven’t heard anything. We’ll see how they handle themselves because this is not on UPS. Hopefully I’ll get to make some authentic carbonara soon 🤞 Update: avoid this place at all cost!! I have reached out several times with images that I received the wrong product but CRICKETS! Whomever is running this place is trash and I am HOT I wasted money supporting this “business”. Buy from Olio and Olive.. much better experience. I wish I could give a 0 ZERO star rating… Update 2: I was able to get my money back after disputing the charge with my bank… I will not be supporting this business in the future.

I purchased an American Prosciutto. It came frozen which destroyed the texture and taste (I'm from Spain and my partner from Italy so we know a big deal about Ham). It's also extremely salty, to the point that it can't be eaten. I sent them an email and the only response I received from them was an automated reply saying they were going to contact me... that was one week ago. Will never buy again

Purchased $26 of Pancetta incl shipping. Box came completely destroyed by UPS. La Quercia refused to refund me money or even give store credit. How is anyone expected to consume food that was transported across states like this? Awful customer service. Was going to be a repeat customer but lost me. Buy from Di Brunos.

Great quality but poor packing . There is not enough paper between slices of prosciutto, so I can’t separate them . It is nice to have a thin slice of prosciutto but unfortunately I can’t and I end up having to grind it or chop and crisp it up . Please correct this !

Don't ever buy this ham! It is extremely salted and impossible to eat... I have traveled the world, I am a connoisseur in hams, Spanish, Italian... Unfortunately, this brand and these hams are not good quality.

Pro: The meat I purchased was definitely tasty. Con: One item I purchased was spoiled upon delivery. These things happen, but the way La Quercia handled this was unprofessional and uncompromising (offered a store credit, but would not ship out a replacement unless I paid for shipping). I won't be buying from them again...

Straight trash, do not buy any of these overpriced products. They have reduced the size of the wax liners and the thickness of the meat. The meats falls apart immediately as soon as you try to separate it. On top of this, the meat is slimy — not oily — and smelly. I think you’d be better off with anything, even Boar’s Head. I’m embarrassed to give this one star, because I don’t want anyone to think that La Quercia does even twenty percent of their job correctly. Unfortunately I cannot give this zero stars.

Recently purchased the Prosciutto Piccante. the red chili was there, but not the fennel. meat was sliced too thin and the paper dividers too small thus resulting in thin slices turning to mush. halfway through, paper dividers were missing altogether and therefore, no more individual slices -- amassed -- and worthless to wrap around fruit or vegetables as intended. Shrinkflation is not the solution. That may work with junk food, but not with this. If it is to be made and packed in America, then make it and pack it with pride and quality. Lead by example, otherwise, pack it up.

Yelp
As a person who's gone to a butcher for many many years now, I appreciate those who practice old school butchering and curing techniques. La Quercia is one of those vendors. their tasty pork products have surfaced in a decent handful of stores throughout CA now. Their prosciutto and coppa are very tasty but it's the guanciale that I covet. Anyone who loves cured meats should try cured pig jowl in an Amatriciana pasta. Pure goodness
