The Best New Bars in Seattle | Eater Seattle

"Kate Opatz is no small figure in the Seattle bar scene (Montana Badlands and its sister bars, Montana and La Dive are just a few under her name). But whereas her usual ventures are dark, edgy dens, Laurel is a colorful, airy cocktail bar and coffee joint perched on a sunny corner with big windows. Curated by Niko Ciel (formerly of La Dive), the beverage selection here is refreshing, herbaceous, and largely citrus-based. There’s a nice lineup of espresso martinis too (try the one with hazelnut), along with small bites." - Brianna Gunter

Laurel - Review - Capitol Hill - Seattle - The Infatuation

"The same folks behind popular drinking dens like La Dive and Montana, have opened this tiny all-day cocktail bar on Capitol Hill. Besides the booze at night, there are coffee drinks and pastries made by The French Guys during earlier service. We haven’t been here yet, but want you to know this spot exists." - Kayla Sager-Riley

Google
They make an amazing espresso martini with fresh espresso. The price point is modest but the quality is exceptional. There’s a lot of bars that do a mediocre espresso martini—not this bar. Jacob was a great bartender and every cocktail was phenomenal. I highly recommend Laurel!

This place exceeded my expectations! Very friendly service and they have a huge menu with different types of options and specialty drinks. They stop selling their special drinks after 2 PM. I got the Matcha iced latte with orange syrup, which was very good, subtle compliments in each other well. I don’t think I know another spot that has that. I really enjoyed our 12 ounce cup with their straw. Highly recommend and would come back.

Went into this charming spot for happy hour. Their tiny tini and caviar presentation was so cute. Loved the spicy pickle tini and their espresso martini. I will be going back to try more.

Google
Cozy vibes and a bar staff who can freestyle with ease. I had a delightful N/A custom cocktail while my friends enjoyed espresso martinis w/ hazelnut and orange. Delicious ✨

Google
The atmosphere. The vibe. This would be the perfect place to bring your sapphic dates to. All of the staff I have met are absolutely lovely and overall this is an amazing place to vibe. Overall the atmosphere is very relaxing. Maybe a little bit upbeat but not loud like a lot of shops. I've had some drinks in the evening here too and they have been fabulous as well.

Google
Such a fun and needed spot in the neighborhood! Light, bright, and a refreshing change from Seattle’s darker bars. Creative, well-balanced cocktails in a welcoming space—perfect for a date or small group. I’ve been four times now and it’s consistently great! Also love their speciality coffees, their beet latte is delicious.

I loved visiting Laurel! This probably isn’t going to help the rep of this place, but I went with my girlfriend to celebrate our recent birthdays turning 21, and wanted to check out a chic and bright cocktail bar. This did the trick for sure, loved the vibes here, had a great spot looking out down olive way and had some well made and tasty drinks from a very nice bartender, who even hooked us up with birthday shots. The place also serves coffee and other drinks, so we will definitely be back to discover more of what Laurel had to offer!

Google
stopped in here with my boyfriend and a few friends for pre-dinner cocktails on sunday. we each had an espresso martini and they were the BEST espresso martinis any of us had ever had. the staff is so nice and knowledgeable. the drinks take a few minutes because they are literally pulling fresh espresso shots to order and shaking those drinks like their lives depended on it. the result is a strong, frothy, deliciously amazing martini. please do yourself a favor and go here!

Yelp
Laurel is truly an all-day hidden gem in Seattle in the Capitol Hill neighborhood. Need a coffee to start your day? Laurel makes amazing coffee and syrups ships in house. Don't like coffee? They have matcha too, with creative offerings like a strawberry cloud, also made in house. If you need some breakfast too, they also serve the French guy's pastries, which are freshly delivered every morning. Okay, we've made it past the morning. Happy hour? They have cocktails. And beer. And wine. And non alcoholic beverages too, of course! With a happy hour menu that has martinis for just $8, how can you say that isn't the best deal of the century? If you need snacks, they also serve tinned fish and more. Can't come early? No worries. Laurel is open until 2 AM. Everyday. And opens at 8 AM! With free wifi. Tell me those aren't the best hours that gives you ample opportunity to have drinks at any point in the day. Bottom line, you can have a coffee chat here, a coworking session, happy hour, or a date. It's the perfect place for literally everything I can think of. I can't wait to go back and try the rest of the menu items.

Yelp
Laurel opened yesterday on 1/31/25. I decided to checkout this new indie spot before the forecasted lowland snow (2/1/25). I love the transformation from the two former iterations of Crumble & Flake. Currently, Laurel is offering coffee service and featuring fresh pastries from The French Guys. Cocktail service will be forthcoming. Love the interior and color palette which is enhanced by the abundant natural light. There are two rows of elevated bar counter seating and a corner banquette by the entrance. I lucked out with nearby two hour street parking, so I'm enjoying the overhead music and overall pleasant vibe onsite. Well crafted 16oz mocha and tasty pain au chocolat. Another welcomed addition to Seattle's vibrant Capitol Hill neighborhood!

Yelp
I love the location of this little corner cafe/cocktail bar. The decor is cute and light which is enjoyable to be in. I only tried their coffee and it wasn't my favorite. I ordered a cortado and my friend ordered a vanilla latte. The cortado was better with their espresso which both of us enjoyed. The vanilla latte was a little sour due to that same espresso.

Yelp
Stunning space with friendly staff and delicious coffee. My dog approves of the 5 star review! Located in the heart of capitol hill on Olive, surrounded by bars and shops steps away, this is a prime location for coffee or drinks. I cannot wait to come back for drinks and enjoy bar hopping around the area (hula hula tiki karaoke bar is literally across the street! And many more spots for drinks, food and dance). I got a 12oz iced latte togo and it came in a cute branded cup, and of course i couldnt skip on pastries from the french guys seattle. Absolutely delicious.

Yelp
Really cute new coffee shop in Cap Hill! Super cute interior, and the workers were really nice. I also really enjoyed my nutty cold brew :) would definitely return to try the pastries!

Yelp
New spot that opens early for coffee and late for cocktails. Got a chance to try the Nisu latte and was very impressed. Limited seating so for coffee too go is the best option. But will be back to try the cocktails.

Yelp
Friendly efficient customer service. They use Broadcast Coffee for coffee and serve The French Guys pastries. The coffee and pastries are very tasty! The space is really small however it's still cute. I'll definitely be here again and I recommend it if you're on Capitol Hill.

Yelp
Not open until 2am on a Monday. They need to change their hours. I need to apparently write 85 characters.... I will change this review when the hours are updated and when I can actually come through.
