"Run by celebrity chef Marc Veyrat in Manigod in the French Alps, the restaurant was demoted from three to two Michelin stars in January and has been the focus of a public and legal battle ever since. Veyrat insists the demotion was partly based on a false claim that an inspector detected English cheddar in a saffron-tinted soufflé, while he maintains the dish contained only three French cheeses—reblochon, beaufort and tomme—and that the saffron’s yellow hue caused the misidentification. He has accused inspectors of "profound incompetence," demanded removal from the guide, and is suing Michelin (and its tyre-company parent), asking the court to force Michelin to prove an inspector dined there and to hand over documents explaining its judgment; a hearing is set for 27 November in Nanterre.
