Nice Makes the Best Panisse, the French Riviera’s Chickpea Fries | Eater

"A local cooking school whose founder frequently uses traditional panisse as a substitute for french fries—serving it with mussels or a rich daube—and prefers simple additions such as herbs or olives while observing that chefs are increasingly experimenting with the snack; the owner is also writing a cookbook on Niçoise cuisine." - Chrissie McClatchie

I cannot recommend highly enough how fabulous a course with Les Petits Farcis is! If you’re in Nice, or need an excuse to go to Nice, here’s your reason. I went to Fish Camp to learn everything fish (and did, Annie is fabulous too) and got the bonus of Rosa’s talent with vegetables. Loved every minute of it!

Rosa’s cooking class was one of my favorite days in Nice. We started at the market buying fresh fish and produce before proceeding to the old town to her beautiful kitchen studio. Every aspect of Rosa’s studio is so uniquely curated and lovely. We made recipes I certainly wouldn’t think of trying or perhaps even eating if dining out, such as fish stew. It was so fun to learn different techniques, kitchen tricks and overall ease that Rosa had when cooking. After leaving (with a cookbook of hers in hand) I’m feeling inspired to bring some Nicoise cooking to my Canadian kitchen. Thank you so much for a lovely class!

This course was recommended to us through a friend. We booked online and well in advance. Rosa was an excellent communicator and we knew in advance that we would be meeting at the market. We enjoyed a fabulous class with Rosa and met 4 delightful and equally enthusiastic class participants. (I understand that this particular class is for a max of 8.). Rosa guided us through Le Cours Saleya where we sampled some of the offerings and she recommended things for us to try, stopping by and chatting with vendors, as well as picking up the produce we needed to make our lunch. Back at Rosa’s kitchen we helped to prepare Nicoise dishes and learned tips on preparation. After which, we sat down for a fabulous lunch. We were able to follow up on her recommendations for trying things at the market, which came in handy for our self-catering holiday. She shared the recipes with us later. This was a great highlight for us being able to immerse ourselves in the fabulous food culture, if only for a few hours. I shall return to take another course on future visits. A highly recommended experience if you enjoy cooking! A big thank-you to Rosa and her team :)

We had an incredible day with Ludo and his French cooking class in Nice. Ludo was not only warm and welcoming but also incredibly knowledgeable about cooking; especially French cuisine. He began by guiding us through the bustling local market, pointing out his favorite producers and vendors, which was so helpful in navigating the crowd and understanding the local ingredients. The class itself took place in a small but beautifully designed studio that felt both cozy and stylish. It was so charming that passersby would stop to peek through the windows to see what was going on inside. The cooking portion of the day was perfectly paced. Each dish we made was authentically Niçoise and something we could realistically recreate at home. Ludo explained techniques clearly, and the atmosphere stayed relaxed and fun throughout. One of the highlights was sharing the meal we prepared together, seated around a table with a group of passionate fellow travelers, enjoying good conversation and wine. There was also an amazing assistant who quietly made cleanup seamless, which made the whole experience even more enjoyable. If you love food, French culture, and hands-on experiences, I highly recommend this class with Ludo. A truly memorable and delicious day in Nice!

We had such a lovely experience with Rosa, she is so gifted and passionate! The market was unbelievable, the fresh produce was bountiful, bright and so beautiful. The class size of 6 was just perfect! Our menu was authentic, replicable and truly scrumptious! I am so excited to make these recipes when we arrive back home. I will also be purchasing her cookbook , Nicoise and gifting it to my girls. Thank you Rosa for one of our most favorite experiences in France- Bon Appetit

Rosa has it nailed, from market tour to well organized cooking class in her purpose built teaching kitchen. It all came together in a sit down meal where she joined us to continuing answering our questions and giving us tips on serving and presentation. A very enjoyable experience for our group of 5 from La Table des Amis de Provence as well a very lovely couple from California. Not to be missed if you are in Nice on a Saturday.

Amazing class with Viktorija, that makes you feel like you are enjoying Nice as true resident. Cooking in a group was a fun and collaborative experience. It's a great way to learn more about the city and local cuisine Nice has to offer.

I had a wonderful time learning from and cooking with Viktorija during the Cours Saleya market tour and cooking class! We walked the beautiful market and chose ingredients for our lunch. Then, at the lovely cooking studio, we learned how to make authentic Niçois recipes. Vikortija’s instructions made the cooking easy and fun. I also learned so much from her about Nice in general! The food we made was delicious. I highly recommend this experience!

Yelp
I loved this cooking class. Rosa is super knowledgeable and she strikes the perfect balance between teaching real cultural knowledge and cooking skills, but keeping things relaxed for a holiday.

Yelp
A day with Rosa Jackson is a day well spent for food fans visiting Nice. You meet her in the market in the morning and learn about the history and culture of Nice. Rosa then takes you through the market pointing out the local specialties as well as identifying some of the better vendors and products.... Where do you get the best socca and when does the guy that makes the fig nougat show up??? A visit to the wine store, then the cheese store then you are off to Rosa's apartment where Rosa shows you how to prepare the days purchases in the Nicoise manner. So what do you with what you cook? You eat it, of course. We prepared and had a great four course meal. For starts, a salad with braised artichokes, followed by a lotte bourride with boiled potatoes and aioli. Four local cheeses make up the cheese course and desert consisted of a strawberry and raspberry gratin. All of this was accompanied by delightful local wines. Groups have a maximum of six. We were a group of four friends and that worked out well. It is an all day commitment and a lot of fun. Don't miss the opportunity.

Yelp
I had the most amazing time with Rosa on her market tour and cooking class! It is a "must do" in my opinion. I gained so much knowledge and had a wonderful time cooking and meeting with fellow explorers of Nice. I will never forget this experience and plan on doing it again. The pictures I posted don't do the food justice. I walked away so satisfied and full! Thank you Rosa!

Yelp
After spending several days in Nice, this was by far our favorite activity! We are still talking about Rosa's class two weeks later! This isn't your typical cooking class. Rosa is warm, easy to talk to and treats you like a friend. Her class is engaging, fun and informative all at the same time. You'll start the day with a tour of the local market, where Rosa will show you all of the best ingredients, farm stands and produce. She offers tips and tricks for what to buy and what to look for. We then walked a short distance to her studio kitchen which is inviting and beautifully decorated. She walked us through the prep and cooking of each dish, and we took turns assisting with chopping, mixing, stirring, and of course - tasting! The food was delicious and the company was even better. You'll walk away with more knowledge and skills, but the memories are even better! Thank you for a great day, Rosa!
