The gift of collagen because lawd knows all the wrinkles we've caused the moms out there.
While we celebrated on Friday, I thought I bring a collagen rich takeout meal the day of.
And, LetsSweet Kitchen nailed it.
Soft opening last week, LetsSweet Kitchen took over Beyond Cafe (same chef, new owners). For the OGs, they took over SO (San Tung's sister). LetsSweet Kitchen is a Cha Chaan Teng, an HK Style Cafe.
Currently open for takeout and indoor dining. Delivery to come.

Soft opening: Same menu as Beyond Cafe - Braised Apps, Cart Noodles (BYO noodle bowl), Dry Noodles, and Noodle Soups.
After the soft opening phase, they'll roll out new items like HK Baked Noodle and Rice Dishes, along with a line of desserts.

I'm happy to report that the food is the same!
I've only stuck with their Dry/Braised Noodle dishes at Beyond and their new reincarnation.
- Broth: Clear chicken and pork based broth with dried flounder for a seafoody umami.
- Thin Egg Noodles: Perfectly springy and al-dente that nicely soaks up the savory soy-based braising liquid.
- Braised Beef Brisket + Tendons: Meaty chunks of rough flank, slowly braised until deliciously tender with meltingly soft, collagen-rich tendons. So good.
- Braised Pork Trotter: Full of collagen, soft-chewy gelatinous goodness.
- HK Style Wontons: Unlike Canto style, HK Style wontons have a higher shrimp to pork ratio. A whole shrimp with a snappy texture with savory ground pork.
- Gai Lan: And for health, their Chinese broccoli has a nice crisp.

The new owner(s) are super kind. They offered hot tea or water while I waited for my takeout (10 minutes).
I saw they had Po Tat (Portuguese Egg Tarts) on Yelp but it wasn't available yesterday. As an apology, the manager (?) graciously provided a slice of tiramisu on the house.

Easy street parking for the city.
Overall, solid HK comfort food. LetsSweet Kitchen is off the beaten path with little foot traffic but for those who don't live near Chinatown, The Richmond, or The Sets, AND don't want to deal with the chaotic parking situation, LetsSweet Kitchen is a win.
Looking forward to returning for their HK Baked Pork Chop Rice!
